Two Cheese Scones With a Touch of Cayenne image

Plain cheese scones that are jazzed up a tad by the addition of some cayenne pepper. Great for a hearty brunch or served along side some soup. My sis and me just threw this together for breakkie some morning, so feel free to use other cheeses or spices according to what you have on hand.

Number Of Ingredients 8

1 1/2 cups whole wheat flour (I use whole spelt flour)
1/2 tablespoon baking powder
1/8 teaspoon baking soda
1/2 teaspoon cayenne pepper (may use more if you like some heat)
40 g garlic infused butter
3 tablespoons asiago cheese, grated
3 tablespoons gouda cheese, grated
150 g yogurt (low-fat is fine)

Steps:

  • In a big bowl combine flour, soda, baking powder and cayenne pepper.
  • Rub in the butter using your finger tips.
  • Stir in the two cheeses.
  • Add the yogurt and knead briefly until a soft (but not sticky) dough has formed. You might need a little more yogurt (or water) to reach the right consistency.
  • Flatten dough and cut out scones of desired size. I use a 3 inch glass for cutting out the scones.
  • Place on a paper-lined baking sheet and brush tops with some yogurt (if desired).
  • Bake in the preheated oven at 200°C/400°F for 15-20 minutes or until a toothpick inserted in the centre comes out clean.

Found this recipe on the internet. It's a nice twist on the traditional English scone (see recipe #133633).

2 cups sifted all-purpose flour (256gm)
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt (3ml)
1/4 cup margarine or 1/4 cup butter
1 cup milk
2/3 cup grated cheddar cheese
1/4-1/2 teaspoon dried oregano

Steps:

  • Sift the flour, sugar, baking powder, baking soda and salt together. Add grated cheese and dried oregano and mix.
  • Cut in the margarine or butter till mixture resembles fine breadcrumbs.
  • Add the milk and mix to make a smooth dough. (add more milk if necessary to ensure mix is not too dry) Knead very lightly for ten seconds on a lightly floured surface.
  • Roll or pat to about 3/4" thick (2 cm) and cut into individual scones.
  • Top each scone with a little additional cheese and bake for approximately 12 minutes. Brush the tops with melted butter after removing from the oven.

A quick, easy and delicious recipe for cheese scones with a subtle hint of spice from cayenne pepper. A very yummy snack that everyone will love! The batch can easily be doubled to makes 12 scones.

225g self raising flour
Pinch salt
Pinch cayenne pepper
1 tsp baking powder
55g butter
100g cheddar cheese
80-90 ml milk, plus extra for glazing
Extra cheese for topping the scones

Steps:

  • Preheat oven with the baking tray inside to 200.C (slightly less for fan ovens). In a medium-large bowl sift together the flour, salt, cayenne pepper and baking powder. Sift again to make sure the ingredients are thoroughly combined.
  • Cut the butter into cubes, place in the bowl and then mix with your fingertips to make breadcrumbs. Sprinkle the grated cheese into the breadcrumb mixture and rub in until the cheese is evenly distributed. Try not to mix too much as the heat from your hands may start to melt the cheese.
  • Make a well in the centre of the mixture and pour in enough milk to give a fairly soft but firm dough. Do not pour in all the milk at once as you may not need it all to get the right consistency.
  • Lightly flour a surface and roll out the dough to approximately 2cm thick. Cut out the scones with a medium cutter and then place on the hot oven tray. Glaze the tops with the extra milk and sprinkle a little cheese on the top of each scone before putting in the oven.
  • Bake in the oven for 10-15 minutes or until golden brown and cooked through.

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Whisk flour, sugar, baking powder, salt, and baking soda together in a bowl. Fold in Cheddar cheese.
  • Whisk sour cream, oil, milk, and eggs together in a small bowl. Add wet ingredients to the dry ingredients; stir just until moistened.
  • Knead dough on a lightly floured surface 10 to 12 times. Pat out to a thickness of 3/4 inch. Cut into 3-inch squares or cut circles with a 3-inch cutter. Transfer to the prepared baking sheet.
  • Bake in the preheated oven until light golden brown, about 15 minutes.

225g self-raising flour, plus extra for dusting
pinch of salt
pinch of cayenne pepper
1 tsp baking powder
55g chilled butter, cut into cubes
120g mature cheddar, grated
90-100ml milk, plus 1 tbsp for glazing

Steps:

  • Heat the oven to 200C/180C fan/gas 6 with a large baking tray inside. Sift the flour, salt, cayenne pepper and baking powder into a bowl, then sift again to make sure the ingredients are thoroughly combined.
  • Add the butter to the bowl and combine with your fingertips to make breadcrumbs. Sprinkle 100g of the cheese into the breadcrumb mixture and rub together until evenly distributed. Try not to mix too much as the heat from your hands may start to melt the butter.
  • Make a well in the centre of the mixture and pour in enough milk to give a fairly soft but firm dough. Do not pour in all the milk at once as you may not need it all to get the right consistency.
  • Lightly flour a surface and roll out the dough to approximately 2cm thick. Cut out the scones with a medium (about 8cm) cutter, then put on a sheet of baking parchment, glaze with a little milk and sprinkle with the remaining cheese. Slide onto the hot oven tray.
  • Bake in the oven for 15-20 mins or until golden brown and cooked through.

1 tsp. cream of tartar
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. ground red pepper (cayenne)
1/4 cup cold butter, cut up
1 cup KRAFT Shredded Four Cheese
1/2 cup sour cream
1/3 cup milk
1 egg, beaten
3 Tbsp. KRAFT Grated Parmesan Cheese
1 Tbsp. minced fresh chives

Steps:

  • Heat oven to 450ºF.
  • Mix first 5 ingredients in large bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Stir in shredded cheese.
  • Make well in center of flour mixture. Mix sour cream and milk. Add to flour mixture; stir with fork just until moistened.
  • Spoon onto parchment-covered baking sheet; pat to 10-inch circle. Cut into 10 wedges. Gently separate wedges; brush with egg. Sprinkle with combined Parmesan and chives.
  • Bake 10 to 12 min. or until golden brown. Serve warm.

1 ¼ cups shredded aged Cheddar cheese, divided
½ cup whole milk
¼ cup sour cream
2 tablespoons whole milk

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a baking sheet.
  • Sift flour, baking powder, chives, salt, and cayenne pepper together in a large bowl. Cut in butter using a pastry blender or rubbing between your fingers until flour mixture resembles pea-sized lumps. Stir in 1 cup cheese. Whisk 1/2 cup milk and sour cream together in a measuring cup. Pour all at once into flour mixture, and stir gently until well blended. Avoid overworking the dough.
  • Pat dough into 2- to 3-inch balls, depending on what size you want, using floured hands. Place on the prepared baking sheet and flatten slightly, letting scones barely touch each other. Brush tops with remaining milk. Sprinkle with remaining cheese. Let dough rest for about 10 minutes.
