THE ULTIMATE BANANA SPLIT
Steps:
- Preheat your oil in a heavy-based pot for deep-frying to 365 degrees F.
- In a large mixing bowl combine flour, cornstarch, baking powder, sugar, salt, and cinnamon. Make a well in the center and add the yolks and club soda. Using a whisk, stir from the inside working your way out, slowly incorporating the dry ingredients without forming any lumps. Peel the bananas and dip in the batter to coat well. Fry in hot oil for 4 to 5 minutes until batter is puffy and golden brown. Drain on paper towels.
- While bananas are cooking, prepare caramel sauce. Combine the sugar and water in a large heavy saucepan over medium heat. Cook, swirling the pot around, until the mixture is a deep caramel color and looks like syrup, about 8 minutes. Add the butter then carefully pour in the cream (it will bubble up) and continue to cook for another minute. Add a pinch of salt and cool before serving.
- To serve the banana split, cut the bananas lengthwise and top with a large scoop of vanilla bean ice cream. Pour warm caramel sauce over the top and finish with a sprinkle of banana chips and toasted pecans.

- Combine MELTED butter and Graham Crackers.
- Pat in bottom of 13 x 9 x 2 pan.
- Beat eggs on high speed 4 minutes (critical of time).
- Add powdered sugar, softened butter and vanilla and beat 5 minutes more on high.
- Spread over crumbs evenly.
- Chill for 30 minutes in refrigerator.
- Spread pineapples over cream mixture.
- Arrange bananas over the pineapples.
- Cover with Cool Whip.
- Sprinkle with nuts and then place a few cherries.

UNCLE DOBO'S SPECIAL BANANA BLUEBERRY BREAD
We had a bunch of bananas that needed making into bread, and we based our recipe on the easy one here at Zaar by Charishma Ramchandani (recipe#9353). Easy and delicious, it makes a nice, light banana bread which is not overly sweet. Thanks for the inspiration, Charishma! You can either mix the batter by hand or with an electric mixer; either will work fine and you only need one large bowl.

Steps:
- Preheat oven to 350 degrees F. Lightly butter a large loaf pan.
- Peel bananas and mash in a large bowl.
- Add the eggs and stir until well mixed, then stir in sugar.
- Gradually stir in the Bisquick, then add remaining ingredients (batter will be a little lumpy).
- Pour batter into the buttered loaf pan. Bake in preheated 350 degrees F oven for 60 minutes or until golden and knife or toothpick inserted in middle of loaf comes out clean. The loaf should be nicely risen and split down the middle on top.
- Take from oven, remove from loaf pan, and let cool for 5-10 minutes sitting on wire rack, then serve warm. Is especially yummy with butter! Also good with softened cream cheese or even a little vanilla ice cream.
