TACO SALAD WITH BAKED SHELLS
Instead of using deep-fried salad shells, this recipe calls for baking flour tortillas in the microwave. Doing so keeps all the flavor and reduces the fat.-Taste of Home Test Kitchen

- In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning, water and cumin. Bring to a boil. Reduce heat; simmer, uncovered, for 5-7 minutes or until thickened. , Meanwhile, place each tortilla in a microwave-safe 7-in.-diameter shallow bowl, forming a shell. Spritz with butter spray. Microwave two at a time on high for 2 to 2-1/2 minutes or until crisp and lightly browned. Carefully remove from bowls to serving plates., In a microwave-safe bowl, combine refried beans and salsa. Cover and microwave on high for 1-1/2 to 2 minutes or until heated through. Spoon into tortilla shells. Top with the beef mixture and cheese. Serve with lettuce, olives, onions and sour cream.

HARD TACO SHELLS
Home made crunchy taco shells are excellent! Use home made tortillas, or corn tortillas from the store.

- Heat about 1 inch of oil in a heavy skillet over medium to medium-high heat to 365 degrees F (180 degrees C).
- Use tongs to place one tortilla at a time into the oil. It should start to sizzle right away. Cook for about 15 seconds, then flip over and fold the shell in half, holding in place with the tongs until crispy, about 15 seconds. You may need a little practice at first. Drain on paper towels, and sprinkle with salt while still hot. Use for tacos right away, or they may become chewy. Leftovers may be heated in the oven for crisping.

TACO STUFFED SHELLS
Not your regular Italian stuffed shells! Easily doubled for a pot luck dinner...it's a great crowd pleaser!

- Bring a large pot of water to a boil over high heat. Stir in the shell pasta, and return to a boil. Cook the pasta uncovered, until just slightly firm to the bite, about 13 minutes. Drain well.
- Brown the ground beef in a large skillet; drain fat. Stir in the taco seasoning and water; cook over low heat until thickened, about 5 minutes. Stir the refried beans and 3/4 cup Cheddar cheese into the taco meat. Spoon meat mixture into prepared pasta shells.
- Spoon 1/4 cup salsa over the bottom of a 9x13 inch baking dish. Arrange filled shells over salsa. Spoon remaining salsa over shells.
- Bake in preheated oven for 40 minutes. Remove from oven; sprinkle with sliced green onion and 1/4 cup shredded Cheddar cheese. Serve with sour cream.

UNCLE BILL'S TACO SHELL DELIGHT
My DW decided that she would like to have something different for dinner, so we worked on something that can be hand held to be eaten. We purchased some Old El Paso Taco Shells, White Corn - 12 to a box. Not difficult to make and they taste so good.

Steps:
- Place taco shells in a toaster oven at 375 F and heat for about 5 minutes or until shells are lightly browned and crisp.
- In a large bowl, mix together, shredded lettuce, chopped avocado, shredded carrot, chopped green onions, sliced black olives, red kidney beans, sweet red pepper, chopped black forest ham, chopped cooked chicken breast, mayonnaise, salt and pepper; mix well to blend and coat.
- Adjust seasonings to taste.
- When taco shells are lightly browned, remove from toaster oven and let cool for 1 minute.
- Spread 2 tablespoons of mayonnaise inside each taco shell, careful not to break the shells.
- Spoon filling mixture carefully ino each shell without beaking the shell.
- Wrap each taco delight in a napkin and serve.
- You may also use cooked pork loin cutlets, chopped small, instead of chicken breasts.
- This filling is nice and mushy and if you prefer a drier filling, reduce the mayonnaise to suit your taste.
- You can also brown and crisp the taco shells in the oven at 375 F for 5 minutes.
