A pineapple coconut sugar mixture bakes on the bottom, then gets flipped over to be on the top of this Coconut Pineapple Upside Down Cake. Top with a homemade whipped cream and sprinkle with coconut. A light, fresh cake!

1/2 cup butter
1/2 cup packed brown sugar
1 cup shredded coconut
8 1/2 ounces crushed pineapple ((drain, but reserve juice))
1/2 cup shortening
1/2 cup milk
1/2 cup pineapple juice
2 large eggs
1/2 cup granulated sugar (110 grams)
1 teaspoon vanilla extract
1 package instant pineapple cream pudding ((vanilla pudding: 3.4 ounces))
1 1/2 cups all-purpose flour (195 grams)
3 teaspoons aluminum free baking powder
1/2 teaspoon salt
2 cups heavy whipping cream
6 tablespoons powdered sugar
1 teaspoon vanilla extract

Steps:

  • Spray two 8" round cake pans with cooking spray.
  • Melt the butter and divide it between the two pans.
  • In a small bowl, mix together the brown sugar, coconut and drained pineapple. Mix well, then divide between the two pans, spreading the mix to cover the bottom.
  • Set the pans aside.
  • Preheat the oven to 350 degrees Fahrenheit.
  • In the bowl of a stand mixer, mix the shortening, milk, pineapple juice, eggs, sugar and vanilla extract. Mix well.
  • Add in the pudding mix, flour, baking powder and salt. Beat for 3 minutes at medium speed, scraping the bowl as needed.
  • Divide the batter between the two pans, pouring the batter over the pineapple coconut mixture. Spread the batter carefully to cover the topping.
  • Bake at 350 degrees for 35-40 minutes or until the top springs back when you touch it lightly.
  • Cool the cakes for 5 minutes, then invert onto a cooling rack to cool completely.
  • In a stand mixer using the whisk attachment, beat together the whipping cream, powdered sugar and vanilla until stiff peaks form.
  • Place a cake layer on a cake plate.
  • Smooth the whipped cream over the first layer.
  • Place the second cake on top.
  • Smooth the whipped cream frosting over the top and sides of the cake.
  • Garnish with shredded coconut and drained crushed pineapple if desired.
  • Store in the refrigerator.

I came up with this after mistakenly buying cream of coconut, thinking it was coconut cream. Cream of coconut is usually used for making pina coladas (e.g. Coco Goya® Cream of Coconut) and is not the same thing as coconut cream. It turned out so great I had to go back and buy another can!

¼ cup brown sugar
¼ cup butter
7 tablespoons unsweetened coconut flakes
2 cups all-purpose flour
¾ teaspoon baking powder
¼ teaspoon salt
2 egg whites
1 cup white sugar, divided
7 ⅓ tablespoons butter
1 (15 ounce) can cream of coconut
1 (8 ounce) can pineapple chunks, juice reserved, divided
2 egg yolks
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 baking pans.
  • Place brown sugar, 1/4 cup butter, and coconut flakes in a microwave-safe container and heat until warm, about 2 minutes. Mix into a paste.
  • Combine flour, baking powder, and salt in a separate bowl. Whip egg whites in a metal bowl with a clean electric mixer until stiff peaks are formed.
  • Beat 1/2 cup white sugar and 7 1/3 tablespoons butter in a bowl with an electric mixer until creamy. Add remaining 1/2 cup white sugar, cream of coconut, reserved pineapple juice, egg yolks, and vanilla extract; mix thoroughly. Add the flour mixture; stir batter slowly until fully combined. Fold in the whipped egg whites using a spatula.
  • Spread the brown sugar paste over the bottoms of the prepared pans. Arrange pineapple chunks on top. Pour in the batter.
  • Bake in the preheated oven until tops are brown and crisp and a toothpick inserted into the centers comes out clean, about 1 hour. Let cool, about 25 minutes. Flip cakes over onto a serving plate and out of the baking pans.

Arrange pineapple in a single layer in a well seasoned 12-in. cast-iron or other ovenproof skillet., In a large bowl, cream butter, coconut oil and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. Beat in coconut extract. In another bowl, whisk flour, baking powder and salt; add to creamed mixture alternately with coconut milk, beating well after each addition., With clean beaters, beat egg whites and cream of tartar on high speed just until stiff but not dry. Fold a fourth of the egg whites into batter, then fold in remaining egg whites. Spread over pineapple. Bake until a toothpick inserted in center comes out clean, 55-60 minutes. Steps:

  • Set oven to 350 degrees.

  • Add in half and half and vanilla; beat for about 5 minutes on high speed.
  • Spread the cake batter over the coconut mixture in the pan.
  • Bake for 30-40 minutes, or until cake is golden brown, and a toothpick in the middle comes out clean when inserted in center of the cake.
  • IMMEDIATELY invert pan on a serving dish/plate.
  • Serve with a topping/dollop of whipped cream.

1 1/2 sticks (12 tablespoons) unsalted butter, plus more for buttering the pan
1/2 cup packed brown sugar
2 large mangoes, sliced into 1/2-inch slices (approximately 2 cups)
1/2 cup sweetened shredded coconut
2 1/4 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon salt
1 1/2 cups granulated sugar
3 large eggs
1 teaspoon vanilla
1 1/4 cups whole milk

Steps:

  • Position a rack in the middle of the oven and preheat the oven to 350 degrees F. Butter a 9-inch springform pan and set aside.
  • Combine the brown sugar and 4 tablespoons of the butter in a small saucepan over medium heat and cook, stirring constantly, until the sugar dissolves and the syrup is bubbling. Bring the mixture to a boil and cook until it turns light amber, about 10 minutes. Carefully pour the butter mixture into the prepared pan and arrange the mango on top, overlapping the slices. Sprinkle the shredded coconut on top and set aside.
  • Whisk together the flour, baking powder and salt in a medium bowl and reserve. Beat together the granulated sugar and remaining 8 tablespoons butter in a large bowl with an electric mixer at high speed until light and fluffy, about 6 minutes. Add the eggs 1 at a time, beating well after each addition. Beat in the vanilla. Add half of the flour mixture and mix at low speed until just combined. Mix in the milk, then add the remaining flour and mix until just combined.
  • Gently spoon the batter into the pan over the coconut and mango and spread evenly. Bake on the middle rack until golden brown and a tester comes out clean, about 1 hour. Let the cake cool in the pan on a rack for 10 minutes.
  • Run a thin knife around the inside edge of the pan, then invert a plate over the pan and invert the cake onto the plate. Let the cake cool completely on the plate, at least 20 minutes, then serve at room temperature.

1 box Betty Crocker™ Super Moist™ vanilla cake mix
1 cup reduced-fat (lite) coconut milk (not cream of coconut)
1/2 cup olive oil
3 eggs

Steps:

  • Heat oven to 350°F. Place butter in 13x9-inch (3-quart) glass baking dish; place in oven until butter is melted.
  • Remove baking dish from oven. Sprinkle brown sugar evenly over melted butter. Sprinkle coconut over brown sugar. Arrange pineapple slices over coconut, pressing lightly to set each one in place.
  • In large bowl, place cake mix, reserved 2 tablespoons pineapple juice, the coconut milk, oil and eggs. Stir vigorously about 2 minutes or until well combined and batter is smooth. Let stand 2 minutes; stir again. Pour batter into pan, spreading evenly.
  • Bake 40 to 45 minutes or until toothpick inserted in center of cake comes out clean. Immediately run knife around sides of baking dish to loosen cake. Place cookie sheet upside down over baking dish. Turn cookie sheet and baking dish over; leave baking dish over cake 5 minutes to let brown sugar mixture drizzle down onto cake. Remove baking dish; cool 30 minutes before serving. Store in refrigerator.

6 bananas sliced into 1/4 inch slices
1 1/2 cups shredded coconut
1 cup packed brown sugar
1/2 cup butter

  • Preheat oven to 350 degrees and spray 2 (8 inch) round cake pans with cooking spray. With an electric mixer, beat cake mix, eggs, oil, water, and sour cream on low until combined. Beat on high for an additional 2 minutes. Cover bottom of both cake pans with banana slices. In a small saucepan melt butter. Add brown sugar and lemon juice and heat until dissolved. Pour half of the brown sugar mixture into each of the 2 round cake pans over the bananas. Sprinkle coconut over the brown sugar mixture and bananas. Split cake batter, and distribute over the coconut into both pans. Bake 35-40 minutes or until toothpick in the center comes out clean. Remove from oven and let sit for 5 minutes. While it's still pretty warm, flip cake pans onto serving dishes. The cake should slide right out!

Sweeten it. Add a drained 20oz can of crushed pineapple to the topping. Omit the lemon juice and arrange the bananas on top of the pineapple. Be fruitful. Be sure the bananas are ripe yet firm. If they're green, they'll be tasteless. If they're too ripe, they'll turn to mush. I have not tried this recipe. I'm posting this for safe keeping. I found this recipe in All You magazine.   • Make cake: Mix flour, baking powder and salt. With an electric mixer, beat butter on high speed until creamy, 3 minutes. Add sugar; beat until light and fluffy, 5 minutes. Reduce speed and add eggs, one at a time, beating well after each. Beat in vanilla. Alternate adding flour, mixture and milk, starting and ending with flour.
  • Pour batter over bananas; spread evenly. Be careful not to mix bananas and coconut into batter.
  • Bake until cake springs back slightly when touched in center, 30-40 minutes. Let cake sit in skillet for 5 minutes to allow juices to blend into cake. Run a knife around outside of cake to loosen, then carefully invert onto a wire rack to cool. Serve warm or at room temperature, with ice cream or whipped cream, if desired.

This is so good and so easy. I use either white or yellow cake mix depending upon which I have on hand. Both are good. Sometimes I have trouble finding the Ancel Coconut at the local grocery store, but when I do, I buy several cans. Since first posting this recipe I have found that Ancel is the brand name of a coconut in heavy syrup that is frequently used in Cuban or Hispanic desserts. In that case I assume it may be easier to find it at a World Market or specialty store. If you live in South Louisiana it can usually be found next to the other coconut at Wal Mart, Winn Dixie, or Rouses supermarkets.

Steps:

  • In a 350 degree oven, melt the butter in a 9x13 pan or glass dish.
  • When butter is melted. Stir in the coconut and spread evenly over the bottom of the pan. Mix the cake mix according to package directions and pour evenly over the coconut/butter mixture.
  • Bake according to package directions or until cake is done. Let the cake cool about 10 minutes and then invert onto an oblong cake plate. (I use my Tupperware oblong cake carrier bottom.)
  • Some of the coconut/butter mixture may stick to the cake pan. Scoop this out and spread it onto the top of the cake where it is missing.
