VANILLA PANNA COTTA WITH CARAMELISED ORANGE

Take the stress out of entertaining with this sophisticated, make-ahead dessert

6 gelatine leaves
125ml milk
zest 2 oranges
2 vanilla pods , split
140g golden caster sugar
1.2l double cream
250g caster sugar
5 tbsp Grand Marnier
5 oranges , zested and segmented, any juice retained

Steps:

  • Place the gelatine and milk in a pan, then leave it to one side to soak. Meanwhile, place the orange zest, vanilla pods and sugar in a pan. Add 800ml of the cream, then bring to the boil. Simmer until the mixture is reduced by one-third. While the cream is reducing, remove the gelatine from the milk, set aside, then warm the milk. When it is warm, add the soaked gelatine and stir until completely dissolved. Add to the warm cream, pass through a sieve, then leave to cool.
  • Lightly whip the remaining cream, then fold into the setting mixture. Pour the mixture into a 1-litre pudding bowl, then place in the fridge to set for at least 5 hrs.
  • While the panna cotta is setting, make the sauce for the orange salad. Tip the sugar into a non-stick pan, then place on the heat to cook down to a caramel. Pour in the Grand Marnier and orange juice - this will make the caramel harden, so just simmer on a low heat, stirring, until it's dissolved to a syrupy consistency. Remove from the heat.
  • Take the panna cotta out of the fridge, slide a knife around the edge of the bowl and dip very briefly in hot water to loosen. Tip the panna cotta into the middle of a plate, then arrange the orange segments around it. Spoon the orangey sauce over the panna cotta and oranges, then scatter over the zest.

Super easy, elegant dessert. Do this at least a few hours ahead of time so that the panna cotta has time to set and to take away last-minute stress. Only thing that has to be done near the time of serving is the caramel sauce because you want the contrast of the warm sauce against the cold panna cotta.

1 cup confectioners' sugar
3 cups half-and-half
1 cup heavy cream
1 1/2 teaspoons vanilla extract
1/3 cup hot water
2 (1/4-ounce) packets unflavored powdered gelatin
Orange Caramel Sauce, recipe follows
4 tablespoons unsalted butter
1/3 cup light brown sugar
1 small navel orange zested and juiced
1 whole star anise

Steps:

  • Combine sugar and 1 cup of half-and-half in a medium saucepan over medium-low heat, whisking until combined. Add remaining half-and-half, heavy cream, and vanilla and cook for 3 minutes.
  • Meanwhile, in a small bowl, whisk together hot water and gelatin, whisking until gelatin dissolves. Whisk gelatin mixture into half-and-half mixture until thoroughly combined.
  • Remove from the heat and pour into ramekins or cupcake tins and chill for at least 2 hours or overnight until set.
  • Remove panna cotta from refrigerator. Dip the bottoms of the ramekins or cupcake tin into a warm water bath for about 15 seconds. Turn out the panna cotta forms onto serving plates. Top with Orange Caramel Sauce and let run down sides. Serve while sauce is still warm.
  • Melt the butter and brown sugar together in a small saucepan over medium heat. Add the orange juice and star anise and simmer until smooth and thick, about 5 minutes. Stir in the orange zest and remove from heat.

2 teaspoons (1 packet) unflavored gelatin
3 cups heavy cream, divided
2 cups plain whole-milk yogurt
2 teaspoons pure vanilla extract
Seeds scraped from 1 vanilla bean
3/4 cup sugar
Dark rum, such as Mount Gay
1/2 cup good caramel sauce, such as Fran's
Fleur de sel

Steps:

  • In a small bowl, sprinkle the gelatin on 3 tablespoons of cold water. Stir and set aside for 10 minutes to allow the gelatin to dissolve.
  • Meanwhile, in a large bowl, whisk together 1 1/2 cups of the cream, the yogurt, vanilla extract, and vanilla seeds. Heat the remaining 1 1/2 cups of cream and the sugar in a small saucepan and bring to a simmer over medium heat. Off the heat, stir the softened gelatin into the hot cream until dissolved. Pour the hot cream-gelatin mixture into the cream-yogurt mixture and stir in 3 tablespoons of rum. Pour into 8 serving glasses and refrigerate uncovered until cold. When the panna cottas are thoroughly chilled, cover with plastic wrap and allow to chill overnight.
  • Before serving, heat the caramel sauce with 2 teaspoons of rum in a small bowl in the microwave or a small saucepan set over low heat, just until warm. Spoon a thin layer of warm caramel on each cold panna cotta, sprinkle with fleur de sel, and serve.

Steps:

  • Sprinkle gelatin over the water. The gelatin will absorb the water and dissolve, in a process called "blooming."
  • In a small saucepan, combine heavy cream with sugar and cook over medium until it's at the scalding point, or just under a boil.
  • Once the cream has almost reached the boiling point, remove from heat and add vanilla extract and bloomed gelatin. Stir until fully dissolved.
  • Strain panna cotta mixture into desired serving tempered glasses.
  • Allow cream to come to room temperature before chilling in the fridge for 2-4 hours, or until the cream is firm in texture.
  • Top with berries and honey.
  • Enjoy!

PANNA COTTA WITH BALSAMIC REDUCTION AND ORANGES

My favorite way to serve this is to let the panna cotta cool in one large container, then spoon into a martini or wine glass with layers of orange segmants and drizzles of the balsamic reduction. You can also use strawberries instead of oranges, but I really like the juice of the citrus as is seeps into the panna cotta. I did not include chill time, or reduction time as these will vary.

1 (1/4 ounce) envelope unflavored gelatin (about 1 tablespoon)
2 tablespoons cold water
2 cups heavy cream
1 cup half-and-half
1/3 cup sugar
1 1/2 teaspoons vanilla extract
3/4 cup balsamic vinegar
2 tablespoons sugar
2 oranges

Steps:

  • FOR REDUCTION:.
  • Simmer the vinegar and the 2T sugar until reduced by half, chill until ready to use.
  • FOR PANNA COTTA:.
  • In a very small saucepan sprinkle gelatin over water and let stand about 1 minute to soften. Heat gelatin mixture over low heat until gelatin is dissolved and remove pan from heat.
  • In a large saucepan bring cream, half and half, and sugar just to a boil over moderately high heat, stirring. Remove pan from heat and stir in gelatin mixture and vanilla.
  • Pour mixture into an airtight container or a glass bowl, cover and chill for at least 4 hours. Overnight is better.
  • FOR ORANGES:.
  • Right before you're ready to serve supreme both oranges.
  • Remove about 1/2 inch from the top and bottom of your oranges. You want to reveal the fruit beneath the peel and you don't want to cut away too much of the fruit.
  • Working carefully with a sharp knife, cut away all of the peel and pith from the sides of the fruit.
  • Note the thin, white membranes that divide up the orange. They should be easy to see once the peel has been completely removed from the fruit. Insert your knife as close to that membrane as possible and make a slice parallel to it, right to the center of the orange, do the same thing to the membrane on the other side of that section. Continue to so the at every membrane around the whole orange.

1 tablespoon powdered unflavored gelatin
4 cups heavy cream
1/2 vanilla bean (split lengthwise)
1/2 cup sugar
1 cup mixed berry
chocolate syrup (for topping)

Steps:

  • In a small bowl, combine water, and gelatin and let sit for 10 minutes. DO NOT STIR.
  • In a medium saucepan, heat cream, vanilla beanm and sugar to a simmer over medium heat, stirring occasionally to disolve the sugar.
  • As soon as it simmers, turn off heat and add gelatin.
  • If gelatin does not dissolve in 3 minutes, return to heat and warm gently until dissolved.
  • Pour mixture into 6-8 dessert cups.
  • Chill, uncovered for at least 2 hours.
  • TO SERVE:.
  • Dip cups in hot water for 10 seconds and then turn out onto dessert plates.
  • Surround each panna cotta with berries and drizzle chocolate syrup over the top.

1 1/2 teaspoons unflavored gelatin
2 tablespoons whole milk
1/4 cup confectioners sugar
1/8 teaspoon salt
1 1/2 cups heavy cream
1/4 cup granulated sugar
2 1/2 teaspoons finely grated fresh orange zest
1/4 cup fresh orange juice
3/4 cup sour cream
2 navel oranges
Special equipment: 6 (1/2-cup) metal molds

Steps:

  • Sprinkle gelatin over milk in a small bowl and let stand 1 minute to soften.
  • Whisk together confectioners sugar, salt, and 1 cup heavy cream.
  • Cook granulated sugar in a dry small heavy saucepan over moderate heat, undisturbed, until it begins to melt. Continue to cook, stirring occasionally with a fork, until sugar is melted into a golden caramel. Stir in 1 1/2 teaspoons zest and cook, stirring, until zest is toasted and fragrant, 30 seconds to 1 minute. Stir cream mixture and carefully add to caramel (it will bubble and harden). Cook over moderately low heat, stirring, until caramel is dissolved.
  • Stir in gelatin mixture and remaining teaspoon zest until gelatin is dissolved. Stir in orange juice, then let stand just until cooled to room temperature. Pour through a fine sieve into a medium bowl.
  • Beat remaining 1/2 cup heavy cream with an electric mixer until it just holds soft peaks. Whisk sour cream in another bowl until smooth. Fold whipped cream into sour cream, then fold into caramel mixture until combined well.
  • Spoon into molds and chill until firm, at least 8 hours.
  • Dip molds in hot water 2 or 3 seconds and run a thin knife around edge of molds to help release panna cotta. Invert onto dessert plates and let stand at room temperature 20 minutes.
  • While panna cotta is standing, remove peel and white pith from oranges with a sharp knife. Holding oranges over a bowl to catch juices, cut sections free from membranes. Squeeze juice from membranes into bowl and coarsely chop orange sections.
  • Just before serving, spoon orange pieces and juice over desserts.
