VANILLA SNAP BISCUITS: A DELICIOUS LITTLE COOKIE
These vanilla biscuits are snappy, buttery and delicious.

Steps:
- Preheat the oven to 180 c / 350 f
- In a food processor mix the butter, sugar and vanilla until smooth
- Add the flour, egg and egg yolk and process until the mixture forms a soft dough
- Take the dough out the processor and knead slightly bringing it together in a ball and wrap it in cling film and place in the fridge for 30 minutes
- Roll the dough out on a lightly floured surface or between 2 sheets of baking paper until about ½ cm / 5mm thick
- Cut the dough into approximately 7cm rounds
- Place the dough rounds on a baking sheet that has been lined with baking paper or silicone baking sheets
- Bake for 10 - 12 minutes until golden brown
- Remove the biscuits carefully from the baking tray and allow them to cool on a wire cooling rack as they have a tendency to carry over cooking and could turn too brown once removed from the oven (I generally cool all biscuits on a cooling rack).
- When cooled, dust them with some icing sugar or decorate as desired.
SNAPPY SUGAR COOKIES

Steps:
- In a medium bowl, sift the flour, baking powder, and salt. Whisk to evenly combine.
- In a large bowl, using a handheld mixer, or in the bowl of a stand mixer, using the paddle attachment, cream the butter and sugar until light and fluffy, stopping the mixer once or twice to scrape down the bowl with a rubber spatula. Add the eggs, 1 at a time, beating after each until thoroughly incorporated. Add the vanilla. Scrape the bowl again and mix for a few more seconds. On low speed, add 1/2 the dry ingredients. Beat until combined. Add the remaining dry ingredients and beat just until the flour is completely absorbed into the dough.
- Turn the dough onto the table, gather it together, and knead gently into a smooth mass. Form it into a log and divide into 3 even parts. Flatten each section into a patty about 1/2-inch thick and cover each with plastic wrap. Chill until firm, at least 2 hours or up to 3 days. The dough may also be frozen for up to 1 month.
- Preheat oven to 350 degrees. Let the dough sit at room temperature, still covered, for about 20 minutes to soften slightly. On a lightly floured surface, roll the dough to slightly more than 1/8-inch thick.
- Cut out shapes with cookie cutters, as close together as possible, and use a palate knife or metal spatula to transfer to ungreased baking sheets, placing them about 1-inch apart. Repeat with the remaining pieces of dough. Press the scraps together, roll them out, and cut, always brushing off any excess flour, until all used up.
- Bake cookies for about 17 minutes, or until the edges begin to turn golden. Let sit for 5 minutes, then transfer to wire racks to cool completely.
- In the bowl of a stand mixer fitted with the paddle attachment, or in a bowl using a handheld mixer, begin to beat the egg whites and sugar on low speed. Be sure the bowl and beaters are free of any fat and that there is no egg yolk in the whites. After 30 seconds or so, scrape down the bowl with a rubber spatula and gradually increase the speed of the mixer to medium. Beat until the mixer thickens and stiffens, about 3 minutes.
- STORING ICING: Keep Royal Icing in an airtight container. To prevent a crust from forming while using the icing, keep the container covered with a damp towel or plastic wrap. Royal Icing will keep refrigerated for up to 2 days. Before reusing, lightly beat with a whisk or fork.
- Yield: 2 1/2 cups icing to cover about 4 to 6 dozen 3-inch cookies

VANILLA SNAP COOKIES

Steps:
- Place the butter, sugar and vanilla in a food processor and process until smooth.
- Add the flour, egg and extra egg yolk and process until a smooth dough forms.
- Turn the dough out onto a lightly floured surface and divide in half.
- Roll each piece out between sheets of non-stick baking paper until 5mm thick.
- Refrigerate for 10 minutes or until firm.
- Preheat oven to 160°C (325°F).
- Remove the top sheets of baking paper from the dough. Using a 6cm round cookie cutter, cut shapes from the dough, re-rolling as necessary.
- Place the rounds on lightly greased baking trays lined with non-stick baking paper and bake for 12-14 minutes or until golden.
- Allow to cool on trays for 10 minutes before transferring onto wire racks to cool.
VANILLA CRISPIES
Steps:
- In a medium bowl, cream together butter and sugar. Add egg and vanilla; continue to cream until smooth. Sift together the flour, baking soda, and cream of tartar; stir into the creamed mixture until well blended. Refrigerate dough for at least 1 hour.
- Preheat oven to 375 degrees F ( 190 degrees C ).
- Roll dough into 1 inch balls and place onto a cookie sheet. Cookies should be at least 2 inches apart. Lightly grease the bottom of a glass, dip it into the granulated sugar, and press the cookies down slightly. Bake for 8 to 10 minutes, until golden brown. Remove from the baking sheet to cool on wire racks.

These are soft, cake-like cookies, best with frosting. Roll them out thickly, and bake no more than 8 minutes. They will stay soft, and everyone raves over them. I use them as cutouts for holidays.

- In a medium bowl, combine flour, cocoa, baking powder, and salt.
- In a large bowl, beat the butter until creamy. Add the sugar, egg, water and vanilla. Beat on high speed for about 1 minute.
- Stir in the flour mixture until just incorporated.
- Chill dough for at least an hour.
- Preheat oven 350 degrees F.
- Roll 1/8 inch thcik. Use a round cutter to cut 2 1/4 inch circles. Place circles on lined baking sheets and bake for 17 minutes or until they start to smell and appear done.
