VANILLA CRISPIES
Steps:
- In a medium bowl, cream together butter and sugar. Add egg and vanilla; continue to cream until smooth. Sift together the flour, baking soda, and cream of tartar; stir into the creamed mixture until well blended. Refrigerate dough for at least 1 hour.
- Preheat oven to 375 degrees F ( 190 degrees C ).
- Roll dough into 1 inch balls and place onto a cookie sheet. Cookies should be at least 2 inches apart. Lightly grease the bottom of a glass, dip it into the granulated sugar, and press the cookies down slightly. Bake for 8 to 10 minutes, until golden brown. Remove from the baking sheet to cool on wire racks.

When I was a little girl, my mother would always make us crepes on Sundays. I also loved the smell of vanilla when my mother would make her cookies. So, I would always ask her to make her cookies, and when she refused, I would take out the vanilla and sit it next to me with the cap open, so that I could breathe the aroma. My mother get a kick out of this, and said, well, if it's that important, we'll add a little vanilla kick, just for you. After the first time she put the vanilla in, there was never a last...it became a tradition.

Steps:
- In a large bowl, mix together the milk, egg yolks and vanilla. Stir in the flour, sugar, salt and melted butter until well blended.
- Heat a crepe pan over medium heat until hot. Coat with vegetable oil or cooking spray. Pour about 1/4 cup of batter into the pan and tip to spread the batter to the edges. When bubbles form on the top and the edges are dry, flip over and cook until lightly browned on the other side and edges are golden. Repeat with remaining batter.
- Fill crepes with your favorite fruit, cream, caramel or even ice cream or cheese to serve.

- Preheat the oven to 400 degrees F (200 degrees C). Unfold puff pastry sheets, and place flat onto baking sheets. Bake for 10 to 15 minutes, or until lightly browned and puffed. Set aside.
- Combine the sugar, custard powder and cornstarch in a large saucepan. Mix in just enough milk to form a paste, then gradually mix in the rest. This will prevent lumps from forming. Add the butter. Cook over medium heat, stirring frequently until thick. You may need to use a whisk to ensure a smooth consistency. When the mixture comes to a simmer, cook stirring constantly for 2 minutes. Remove from the heat, and stir in the egg yolks and vanilla.
- Line a 9 inch baking dish with aluminum foil. Place one of the baked pastry sheets in the bottom of the dish. Spread the custard filling in an even layer over the pastry, and top with the other sheet.
- Mix the confectioners' sugar with 1 tablespoon of milk, and a dash of vanilla to make an icing. Spread over the top of the pastry. Refrigerate until the custard layer is firm. Remove from the pan and slice.

- Mix sugar, butter, egg and vanilla in a large bowl.
- In another, medium-sized bowl, mix the dry ingredients.
- Gradually add this mixture to the larger bowl, beating with a hand-held mixer.
- Cover and refrigerate for a minimum of one hour.
- Heat the oven to 375°.
- Shape the dough into 1-inch balls.
- If you want to add sprinkles, place the balls into a shallow pan, such as a pie pan, that has a layer of sprinkles on the bottom.
- Gently flatten the dough into the sprinkles using the bottom of a glass.
- If you are not using sprinkles, dip the bottom of the glass in granulate sugar.
- Line a cookie sheet with parchment paper.
- Bake until barely browned (these cookies are meant to be soft) or about 8 minutes.
- Immediately remove from the cookie sheet and lay on aluminum foil.

- Sift the flour and icing sugar together. Add the grated lemon peel and mix.
- Then mix the butter into the dry ingredients.
- Add the egg yolks and mix in completely but as lightly as possible.
- Leave to rest for at least 15 minutes.
- Roll out to around 1.5 to 2cm diameter lengths, then cut into approx 15cm lengths.
- Place onto a baking sheet covered in baking parchment, rounding down the ends and forming into crescent shapes.
- Bake in a pre-heated oven 150C / fan 130C / gas 2 for around 10 minutes.
- Leave to cool slightly until warm, and then place into tins and cover with vanilla icing sugar.
