Mom tinkered with vegetarian stuffing recipes until we settled on this one that the whole family enjoys. I've continued to serve it, even to my meat-eating family, and everyone loves it.

½ cup vegan margarine
1 cup shredded carrot
1 cup chopped celery
1 medium onion, chopped
½ teaspoon salt
¼ teaspoon ground cinnamon
⅛ teaspoon ground black pepper
8 cups seasoned bread cubes
2 cups chopped apple
½ cup chopped walnuts
½ cup vegetable broth, or more as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Melt margarine in a skillet over medium heat. Add carrot, celery, and onion; cook until onions are tender and translucent, about 5 minutes. Add salt, cinnamon, and pepper. Remove vegetable mixture from heat.
  • Combine bread cubes, apples, and walnuts in a large bowl. Add vegetable mixture and drizzle with vegetable broth until evenly moist.
  • Bake in the preheated oven until golden brown on top, about 30 minutes.

This is a veganized version of a favorite stuffing recipe in my family. When I became a vegan a few years ago, my mom and I converted all of our favorite Thanksgiving recipes, and this one turned out especially great in vegan form. You could easily make in non-vegan by using real sausage instead. This makes quite a bit, so feel free to halve the recipe.

2 packages plain seasoned stuffing mix
1 (14 ounce) package Lightlife Gimme Lean ground sausage (or other veggie sausage)
5 -6 stalks celery, chopped
1 white onion, chopped
2 garlic cloves, chopped
1 -2 tablespoon poultry seasoning
4 apples, chopped
1 cup vegetable broth
1 cup white wine
salt and pepper

Steps:

  • Saute the onions, celery and garlic in a little bit of oil or butter over medium-high heat until limp.
  • Cook the sausage according to directions.
  • Mix everything together and bake in a greased baking dish for one hour at 350.

4 cups bread cubes (baguettes, ciabatta, multi-grain, plain sandwich bread)
1 carrot
2 stalks celery
1 medium fuji apple
1 medium red onion
3 tablespoons olive oil
2 tablespoons apple cider vinegar
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon cumin
2 cups vegetable broth
2 tablespoons brown sugar

Steps:

  • Preheat oven to 350 degrees. Chop up your bread of choice into fairly small cubes. Put on a baking sheet and toast until golden brown (15-20 minutes).
  • Shred the carrot. Chop the celery, apple (can leave skin on or remove), and onion.
  • Heat olive oil in a large pot over high heat. Add fruit and simmer for a few minutes until soft. Add vinegar. salt, and seasonings. Cook another few minutes.
  • Pour in vegetable broth and cook until it bubbles. Turn off the heat.
  • Stir in brown sugar. Then add toasted bread cubes and stir until saturated.
  • Spoon into lightly greased baking dish and bake at 350 degrees for 15-20 minutes until golden brown.
