VEGAN PULLED JACKFRUIT RECIPE BY TASTY
Here's what you need: young green jackfruit, olive oil, yellow onion, garlic, chili powder, paprika, cumin, liquid smoke, salt, pepper, vegetable stock, vegan bbq sauce, red onion, tomato, lettuce, burger bun

Steps:
- Preheat your oven to 400ºF (200ºC).
- Drain and rinse the jackfruit, then cut the jackfruit into smaller pieces, removing the core.
- Add the olive oil, onions, garlic, salt, and pepper to a large frying pan or skillet over medium-high heat. Sauté until the onions are tender and become translucent.
- Add the jackfruit, chili powder, paprika, cumin, liquid smoke, salt, pepper, and liquid smoke, and stir.
- Add the vegetable stock, cover, and cook another 10-15 minutes, until the jackfruit is soft enough that it can be mashed.
- Mash the jackfruit with potato masher or a couple of forks, until it looks pulled or shredded.
- Spread an even layer of pulled jackfruit across a parchment paper-lined baking sheet.
- Bake for 25 minutes.
- Remove from oven and pour over the vegan BBQ sauce and stir to combine.
- Place back in the oven for 10 more minutes.
- Build your burger, top with dressings of your choice.
- Enjoy!

JACKFRUIT BAO BUNS
These pulled jackfruit bao buns are really easy to make in less than 30 minutes! The vegan recipe makes the most of beautifully seasoned pulled jackfruit nestled in fluffy bao buns topped with quick pickled onions.

- Heat the oil in a saucepan over a medium heat, then add the onions and garlic and cook until soft - about 4 minutes.
- Stir in the ketchup, vinegar and spices.
- Add the drained jackfruit and simmer for 20 minutes, gradually pulling the jackfruit apart with tongs or two forks. When it's ready, stir in the marmite (if using) and soy sauce. Taste and add more cayenne if desired. Set aside.
- Meanwhile, make the pickled onions by placing the onion, vinegar, water, sugar and salt in a pan and bring to the boil. Take off the heat and allow to cool.
- Steam or microwave the bao buns (or slice burger buns in half and lightly char them on a grill). Fill with the pulled jackfruit, pickled onions, cucumber, cabbage and a dollop of vegan mayonnaise.

VEGAN PULLED JACKFRUIT
Use jackfruit to make this clever vegan 'pulled' meat substitute, perfect for stuffing into bread rolls and enjoying with all the barbecue trimmings

- Heat the oil in a frying pan and cook the onion until very soft, for around 10-12 mins. Add the cinnamon, cumin and paprika to the onions and cook for a further 2-3 mins. Next add the Tabasco, vinegar and bbq sauce and mix well before adding in the tomato, the drained jackfruit and 200ml water. Leave to simmer gently, covered, for 30 mins stirring every 5-10 mins to help break down the jackfruit, then take the lid off and cook a further 10 minutes.
- Once cooked, use a fork to make sure all of the jackfruit is well shredded. Check seasoning and add another tbsp of bbq sauce if necessary for extra stickiness.

- In a large mixing bowl, combine flour, yeast, sugar and salt. Add warm water and mix and knead until a smooth, pliable dough forms. This takes about 6~8 minutes with a stand mixer or about 10~12 minutes by hand.
- Drain and rinse jackfruit well. Then jackfruit it into bite size pieces and use a fork to separate the pieces.
- Gently deflate the dough and divide the dough into 8 equal piece. Roll each piece into an oval that is ¼" thick.
- Once all the buns are steamed and ready, stuff them with the delicious jackfruit filling. Then top with crunchy shredded cabbage, grated carrot, roasted peanuts and chili sauce. Serve right away. These little sandwiches are very tasty and very addictive.
