VEGAN COCONUT CARAMEL
I use this caramel for making diary-free Twix® bars! It has a delicious caramel flavor, and is just as yummy as all those non-vegan alternatives out there. In fact, I'm not vegan, and I prefer it! You could make it a little harder to make caramel candies, or a little runnier for dipping caramel apples.

Steps:
- Combine coconut milk, brown sugar, 2 tablespoons plus 2 teaspoons margarine, and vanilla extract in a saucepan. Heat on low, watching carefully and stirring occasionally, until mixture registers 236 degrees F (113 degrees C) on an instant-read or candy thermometer. Remove from heat. Mix in any grease that separated from the mixture, or carefully pour it off.

*VEGAN* CHOCOLATE CARAMELS
Based on a current recipe in the Recipezaar database, I've made some significant substitutions that allowed the recipe to be vegan, if you accept that the Hageland chocolate was made in a factory where non-vegan items were made. Otherwise, use the brand you prefer. It must be a dark chocolate for this to work though.

Steps:
- Put all the ingredients in a heavy bottom pot with room for boiling and stirring, and bring to the boil, stirring constantly with a wooden spoon.
- After it reaches a full boil, too high to stir down, lower the heat until it will still boil but not boil up.
- Cook for 35 minutes at a continuous active low boil, stirring constantly.
- Put into 8x8 inch 2 inch deep pan on waxed paper to cool.
- Cut when fully cooled.

- Add dates, tahini, maca and sea-salt to a food processor and blend until well combined (should start to form a ball in the food processor).
- Place the "caramel" on a piece of parchment paper and cover with another piece. Using a rolling pin start to flatten to a square/rectangle shape about 1/2" thick. Place in the freezer for at least 20 minutes or until firm enough to cut.
- Melt the chocolate by using a double boiler or a pot filled with water and a heat safe bowl or other pot on top. Break the chocolate bar into pieces in the top section and turn the burner on and start to boil the water. Stirring occasionally to prevent the chocolate from overcooking. Once the water has boiled and all the chocolate is melted turn the burner off or on low.

- Melt half the chocolate by placing it into a microwave safe bowl and microwave in 30 second intervals bringing it out to stir every 30-seconds.
- In a heart-shaped silicon mold, spoon in the melted chocolate using a teaspoon or brush to gently nudge the chocolate up the sides of the mold as much as you can. When the bottom and sides are coated as well as possible, place the mold into the freezer to allow the chocolate to set.
- Prepare the caramel centers. Melt the coconut butter by placing the whole jar (sealed) into a bowl of very hot water. After a few minutes, take it out and stir the coconut butter very well. This is because it usually separates when cold, so you need to get it all well mixed again.
- Measure out a quarter cup of melted coconut butter into a bowl. Add the maple syrup or golden syrup and vanilla and mix into a thick caramel.
