VEGAN CHOCOLATE SCONES
Rich chocolatey scones bring a dessert vibe to the breakfast table! :) Dairy-free and gluten-free and easy to make.

- Preheat the oven to 400 degrees F and line a baking sheet with parchment paper (or spray with cooking spray).
- In a mixing bowl, stir together the gluten-free flour, raw cacao powder, coconut sugar, baking powder, sea salt, and chocolate chips until well-combined.
- Pour the full-fat canned coconut milk into the mixing bowl and stir until a thick dough forms. Toward the end of stirring, you'll need to use your hands to get the dough to come together.
- Form the scone dough into a large ball then form it into a disc and place it on a cutting board.
- Slice the dough into eight triangles. If the chocolate chips poke out of the dough, simply gently press them back in. Place the triangles onto the parchment lined baking sheet. Bake for 18 to 22 minutes, or until the scones feel firm when pressed.
- Allow scones to cool at least 10 minutes before serving.
- Note: If you'd like, make a simple powdered sugar glaze for the scones, or melt 1/2 cup of coconut butter in the microwave for a tasty glaze without sugar.

- Preheat oven to 400 degrees.
- In a large bowl, combine flour, sugar, xanthan gum, baking powder, baking soda, and salt. Whisk or mix ingredients together until well-combined.
- Cut butter into very small pieces. Blend butter into flour mixture using a pastry blender or two butter knives.
- Stir in chocolate chips or chocolate chunks.
- Whisk buttermilk and vanilla extract together in a small cup before adding it into the mixture. Stir until the dough comes together, but do not over-mix.
- Transfer dough to a cool, floured surface and knead it four to five times. Pat the dough into a circle approximately 7 inches round and 1 1/2 inches thick. Cut the dough into eighths.
- Make an egg wash by combining one well-beaten egg with 1 tablespoon of milk. Brush wash over the tops of the scones.
- Make cinnamon sugar by combining granulated white sugar and cinnamon. Sprinkle on top of the scones.
- Transfer scones to a cookie sheet. Bake at 400 degrees for 15 to 20 minutes, or until a toothpick inserted into one of the scones comes out clean.
- Remove from oven and transfer to a wire rack to cool.

- Then, add in the very cold butter chunks and pulse until the butter is the size of small peas. If you don't have a food processor you can also do this in a bowl with a pastry blender or two knives. You just want the butter to remain cold and not melt into the flour mixture.
- Then, add in the vanilla and almond milk. Start with ⅛ cup of almond milk and keep adding more until the mixture is slightly wet and can be held together into a dough (I ended up using almost the full ½ cup of milk but it will depend on your brand of flour).

- In a food processor or large mixing bowl, combine the blanched almond flour, arrowroot flour, coconut sugar, baking powder, salt, and cinnamon. Pulse or whisk together.
- Add in the coconut oil and pulse or use a pastry cutter or fork to work the coconut oil into the dry ingredients until only very small chunks of coconut oil remain.
- In a small mixing bowl, whisk together the coconut milk, flax egg, and vanilla extract. Add to the dry ingredients and stir or pulse until completely combined. Stir in the chocolate chips.
- Place a sheet of parchment paper on a baking sheet and dust with arrowroot flour. Put the dough on top of the parchment, dust with more arrowroot flour, and press into a circle, about 1½” thick and 8” across. Place in the refrigerator for at least 1 hour or up to 24 hours to chill. If leaving in the refrigerator for more than a few hours, I recommend wrapping the dough in plastic wrap so it doesn’t dry out.
