- Line a 9 by 5 inch or smaller loaf pan with parchment or grease well. Preheat the oven to 360 deg F (182 deg C). In a bowl, mix in the wet ingredients until the sugar is fully combined.
- In another bowl, whisk 1 3/4 cup flour, baking powder, baking soda and salt. Add spices of choice if you like. See GF option in Notes below. (Optional: Add 2 tbsp almond flour to the dry for additional texture). At this point you can also toss in seasonal berries of choice.
- Fold the dry into the wet until just about combined. Add more flour if needed 1 tbsp at a time to make just slightly thick batter (you might not need any depending on the flours used).
- Add 1/3 cup chocolate chips and mix in. Pour the batter into a prepared loaf pan. Sprinkle the remaining chocolate chips on top. or top with a streusel of choice.
- Bake for 50 to 55 mins. Cool for 10 mins, then remove from pan. Cool completely before slicing. Store on the counter for upto 2 days, refrigerated for upto 7 days, freeze (slices) for upto a month. See Tips above for troubleshooting.
- To make cupcakes/muffins: Bake for 22 to 24 mins for regular size muffinsBake in a brownie pan, bake for 40 mins.

- Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
- Beat coconut oil, brown sugar, and white sugar until creamy and fluffy, about 3 minutes. Add applesauce and vanilla extract; mix well. Add flour, baking soda, and salt; mix until well combined. Fold in chocolate chips.
- Drop spoonfuls of dough 2 inches apart onto the prepared baking sheets.
- Bake in the preheated oven until bottoms are brown and tops look a little undercooked, 8 to 10 minutes. Cool on the baking sheet for 5 minutes before removing to a wire rack to cool completely, about 10 minutes more.

Steps:
- Measure all ingredients before beginning. Grease and line an 8 or 9″ loaf pan with cooking oil and parchment paper. Preheat the oven to 350F.
- ingredients: In a medium bowl, whisk together the flour, arrowroot starch, and baking powder. Set aside.
- In a large bowl, whisk together the butter, sugar, dairy free yogurt, and vanilla extract. Then add in the dry ingredients and diary free milk, whisk just up until the flour is nearly all incorporated. Lightly tap the whisk on your bowl if there is any batter stuck in the whisk. Add in the vegan chocolate chips, and use a silicone spatula to fold the chocolate chips into the batter just until incorporated.
- Pour the batter into your prepared loaf cake pan, and bake for 50-55 minutes, or until a toothpick comes out clean. The top of the loaf will be lightly golden.
- Make the vegan chocolate ganache according to instructions.
- Allow the loaf to cool in its pan for 10 minutes. Then transfer the loaf to a cooling rack to cool completely before slicing.
- When ready to serve, pour the chocolate ganache over the loaf. Slice and enjoy!
- Store any leftovers in an airtight container and in the fridge for up to 5 days, or in the freezer for up to 3 months.

I have no idea where I found this recipe, but I've adapted it to be gluten-free. I serve it to people without allergies all the time, and they never guess that it is either GF or vegan. Great for those with dairy or egg allergies, or who keep kosher and need a pareve recipe. I've included both the GF and regular version in the ingredients.

- Preheat oven to 350 degrees.
- Grease an 8x8in square pan.
- Combine applesauce, brown sugar and vanilla in a small bowl.

- Mix oat flour, coconut flour, salt, and baking soda together in a bowl.
- Cream 1/2 cup plus 2 tablespoons shortening and coconut sugar in a bowl with an electric mixer until light and fluffy. Add eggs, one at a time, beating well and scraping down the sides of the bowl after each addition. Mix in vanilla. Slowly mix in dry ingredients. Stir in chocolate chips. Place dough in the refrigerator for 30 minutes.
- Preheat the oven to 350 degrees F (175 degrees C).
- Roll tablespoonfuls of dough into balls. Place on an ungreased cookie sheet and flatten with wet fingers.
- Bake in the preheated oven until golden brown, about 14 minutes; cookies will be tender when they come out of the oven. Let rest on the cookie sheet for 10 minutes, then transfer to a wire rack to finish cooling completely.

- As I always recommend, use a scale for accurate results. If you must use cups, make sure to scoop the flour with your cup, lightly pat down and then level off, so there are no gaps. If you want to make cupcakes, then I would suggest making these with my Truffle Frosting instead. Double the recipe for a double layer cake.
- Preheat your oven to 350 degrees and spray an 8 inch round (9 will yield too short a cake) cake pan with nonstick spray. Place a round piece of parchment paper on the bottom.
- It is important to make sure your liquids are not cold, or it will cause the coconut butter to harden. The oil tends to separate from the coconut meat in the jar and be very hard, and it's imperative that it's mixed back up properly before measuring. Otherwise, you run the chance of getting too much of just the oily part or just the meaty part, which will affect the end result. So I like to slightly warm up the jar (like 10 seconds) and empty the coconut butter in a separate container, warm up for just a few more seconds if too chunky still in the microwave until it is warm and soft enough to stir. It should be soft, but don't overheat the coconut butter or it will burn and ruin it. As you stir it, the warmth will melt it and make it more runny. Stir until completely smooth and runny, like the consistency of oil, then measure the weight.
