Vegan Chocolate Banana

This is a minimalist recipe that relies on only natural banana sugars for sweetening and soybeans for creaminess. I invented it this morning for my family's breakfast and it was well-liked, even though we are not vegans.

1 tablespoon unsweetened cocoa powder

Steps:

  • Place soybeans in a blender; add water, a little at a time, and blend to pudding consistency. Add chopped bananas and cocoa; blend until combined.
  • Transfer to a bowl. Garnish with walnuts in the center and banana slices around the edges.

Chocoholic? After eating this rich chocolate pudding you'll question the integrity of box puddings! Use dark, semisweet, or milk chocolate, whatever suits your taste buds! You may want to use a bigger saucepan, I think its easier to mix in. A whisk would beat a spoon by far (no pun intended). If this dish isn't rich enough for you, you could try using chocolate milk, but any milk is fine: skim, 1%, 2%, whole, even soy milk. Same thing with the chocolate; use whatever suits your taste buds: dark, semisweet, or milk chocolate.

This is a Cambodian recipe that I've learned from a Cambodian-American friend of mine. I'll even eat it for breakfast! It's delicious served warm, can be dressed up with other fruit and is also a refreshing cold dessert.

½ cup small pearl tapioca
7 cups water, divided
5 medium ripe bananas, sliced
¼ teaspoon salt
½ cup white sugar
¾ cup coconut milk

Steps:

  • Place 2 cups of water in a microwave-safe dish and heat until warm in the microwave, about 2 minutes. Add the tapioca and let stand for 10 minutes. Drain in a sieve. You'll have a mushy puddle of tapioca left over.
  • Pour the remaining water into a saucepan and add the drained tapioca. Bring to a boil, then simmer over medium heat until the tapioca begins to turn transparent. Stir frequently to avoid sticking.
  • When the tapioca is transparent, stir in the bananas, sugar and salt. Simmer for 10 to 15 more minutes, stirring frequently. When the bananas are broken down fairly well, remove from the heat and stir in the coconut milk until well blended. The tapioca pearls will become visible and the pudding will be the consistency of thick soup. Taste and adjust the sugar if desired.
  • Cool to room temperature or slightly warmer. Stir again before serving.

6 cups cubed stale bread (about 1 lb)
1 cup chocolate chips
3 ripe bananas, sliced 1/2 thick
2 -2 1/4 cups almond milk or 2 -2 1/4 cups soymilk
3 tablespoons arrowroot or 3 tablespoons tapioca flour
1/2 cup maple syrup
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees and grease a 9 x 5 loaf pan with softened margarine. Place cubed bread in a large bowl.
  • In a small bowl whisk together ½ cup soy milk and the arrowroot powder till no lumps remain. Add 1½ cups soy milk, maple syrup, vanilla, cinnamon and nutmeg and whisk to combine.
  • Pour over cubed bread and stir to coat every piece. Allow to sit for at least 15 minutes for liquid to soak into bread. Depending on what kind of bread you use and how stale it is, add more soy milk (¼ cup at a time) and allow more soaking time till every piece of bread is saturated and there's a little bit of extra liquid. Mixture should look mushy and wet.
  • Fold in chocolate chips and bananas (using hands is the easiest for this), mashing up a little bit of the bananas.
  • Pour mixture into loaf pan, patting down to make an even top.
  • Bake 28-35 minutes till top is puffed, slightly browned and feels firm. Allow to cool slightly before slicing and serving. Also pudding can be scooped with an ice cream scoop when slightly cooled.

  • Add the coconut milk, maple syrup, salt, and the vanilla bean pod and scrapings if using. Place over medium heat and, stirring constantly, bring to a bare simmer. Don't let the mixture boil, or it could curdle. Reduce the heat to low and cook, stirring and scraping the bottom of the pot frequently with a wooden spoon or heatproof silicone spatula, until the mixture thickens, 45 minutes to 1 hour. The pudding should be roughly the texture of gravy, with the tender tapioca balls suspended in the mixture rather than sinking to the bottom.
  • Remove from the heat, stir in the chocolate and vanilla paste or extract, if using. The pudding will be runny at this point, but it will thicken as it cools. Let cool to warm. Thin with more plant milk if you're serving this chilled; I usually add an additional 1/2 cup. Serve slightly warm, at room temperature, or chilled. Store in the fridge for up to 4 days.
