You won't want to frost these brownies, since the marbled top is too pretty to cover up. Besides, the tasty cream cheese layer makes them taste as if they're already frosted. The crushed cookies add extra chocolate flavor and a fun crunch. -Darlene Brenden, Salem, Oregon

1 package (8 ounces) cream cheese, softened
1/4 cup sugar
1 large egg
1/2 teaspoon vanilla extract
BROWNIE LAYER:
1/2 cup butter, melted
1/2 cup sugar
1/2 cup packed brown sugar
1/2 cup baking cocoa
2 large eggs, room temperature
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1 teaspoon baking powder
12 Oreo cookies, crushed
8 Oreo cookies, coarsely chopped

Steps:

  • In a small bowl, beat the cream cheese, sugar, egg and vanilla until smooth; set aside. For brownie layer, combine the butter, sugars and cocoa in a large bowl. Beat in eggs and vanilla. Combine flour and baking powder; gradually add to cocoa mixture. Stir in crushed cookie crumbs., Pour into a greased 11x7-in. baking pan. Spoon cream cheese mixture over batter. Sprinkle with coarsely chopped cookies. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out with moist crumbs. Cool completely on a wire rack. Cut into bars. Store in the refrigerator.

Bake indulgent vegan brownies with a crumbled cookie topping. They're easy to make and don't need expensive swaps, just simple storecupboard ingredients

265g self-raising flour
245g soft brown sugar
50g cocoa powder
1 tsp vanilla extract
110ml vegetable oil
1 ½ tbsp white wine vinegar
85g dairy-free coconut yogurt
150g vegan cookies of your choice (we used Oreos), broken into chunks

Steps:

  • Heat oven to 170C/150C fan/gas 3 and line a 18 x 30cm brownie tin with baking parchment. In a bowl mix together the flour, sugar, cocoa and ½ tsp salt. In a jug mix together 125ml water with the vanilla, oil, vinegar and yogurt. Pour the wet ingredients into the dry and mix until smooth and combined.
  • Pour the mix into the tin and smooth the top. Push the chunks of vegan biscuits into the batter, leaving some poking out of the top. (We used Oreos, which are made with dairy-free ingredients, although be aware that allergy information indicates that these may contain traces of milk.) Bake for 30-35 mins, until set but still squidgy in the middle. Leave to cool in the tin, then cut into squares.

I got this recipe off the back of a box of Duncan Hines Brownie Mix. I made it with vanilla frosting and cream cheese frosting and the cream cheese frosting made it perfect. I took this to a family party and everyone ate it up.

1 (20 ounce) box Duncan Hines chewy fudge brownie mix
2 eggs
1/4 cup water
2/3 cup oil
1 2/3 cups Oreo cookies, crushed
1 (12 ounce) container cream cheese frosting

Steps:

  • Preheat oven to 350 degrees and grease bottom of 9x13 pan.
  • In bowl combine ingredients as directed on the back of the brownie mix box. Add 1 cup crushed oreos. Mix well.
  • Pour in pan and bake 24-26 minutes or until done.
  • Cool completely.
  • Spread frosting (should only need 1/2 a can) over cake.
  • Sprinkle remaining crushed oreos over top.
