A delicious homemade Mexican Pizza recipe which is easy to make and healthy! This loaded vegetarian pizza is topped with refried beans, onion, corn, peppers, jalapeño, and vegan cheese. It can be made with a (gluten-free) pizza crust or with flour tortillas!

Your favorite pizza crust ((I made my own crust, see notes))
One 16 oz can refried beans ((I used homemade, see notes))
1 medium onion
1 medium red bell pepper
1/4 cup corn
2/3 tsp ground cumin
1/2 tsp paprika
1/2 tsp garlic powder
A pinch of cayenne
1 jalapeño pepper (or more to taste)
7-8 oz vegan cheese ((I used homemade, see notes))
Salt and pepper (to taste)
Salsa ((optional, see notes))

Steps:

  • First, prepare the dough using my Homemade Gluten-Free Pizza Crust Recipe (click for the recipe) or use a store-bought pizza crust. Check the recipe notes below for the tortilla version.
  • Preheat oven to 400 degrees Fahrenheit (205 degrees Celsius) and line a large baking sheet with greased parchment paper.
  • Transfer the Refried Beans to a bowl and add a splash of water to make the mixture spreadable. Add all spices (cumin, paprika, garlic powder, cayenne pepper).
  • Chop/dice/slice the onion, pepper, and jalapeño.
  • Transfer the pizza crust onto the lined baking sheet and add a thick layer of refried beans.
  • Put the veggies, jalapeño, and corn on top.
  • Finally, add a generous layer of vegan cheese (I added my Vegan Cheese Sauce).
  • Sprinkle with salt and bake the pizza in the oven until crispy, about 20 minutes. Enjoy!

1 sweet onion, (diced)
8 cloves garlic, (minced)
1 tbsp olive oil ((or sub vegetable stock))
12-14 oz frozen vegan meatless crumbles ((see post for plant based sub ideas))
1 tbsp taco seasoning, (divided)
8-12 6in flour tortillas shells ((see post if GF))
15 oz can refried beans (*Make sure they are vegan friendly)
1/2 cup red enchilada sauce ((store bought or click link for homemade))
1/4 cup vegan cheddar cheese
1/4 cup vegan Mozzarella cheese
2 roma tomatoes, (diced)
additional toppings ((see post for ideas))
cooking spray

Steps:

  • Preheat oven to 350 degrees F.
  • Chop onions and garlic.
  • Add oil to a skillet over medium low heat.
  • Saute onions for 2-3 minutes or until softened.
  • Add garlic and half of the taco seasoning. Stir together and cook for 1 minutes.
  • Add meatless crumbles and sprinkle remaining taco seasoning over top and stir. Cook for 4-5 minutes (or according to package instructions if longer than this). Remove from heat.
  • Spray both sides of the tortillas with cooking spray.
  • In another skillet, heat over medium, and add a tortilla and cook until golden brown. Flip and cook the other side. *Tips: You can be doing this while sauting the meatless crumbles mixture so they are ready at the same time. The skillet will continue to heat the long it's going, so the first tortilla will take the longest to get golden brown and the remaining ones will cook much faster so pay attention to avoid burning.
  • Heat refried beans.
  • On one tortilla spread 1/6th the amount of refried beans each tortilla.
  • On top of the beans, add 1/6th the amount of the meatless crumbles mixture.
  • Add another tortilla on top.
  • Repeat this with any more pizzas you are making or place the beans and meat mixture in the fridge for later pizzas once cooled.
  • Add 2 tablespoons of the enchilada sauce on the top tortilla.
  • Add a tablespoon or 2 of each vegan cheddar and mozzarella on top.
  • Bake for 7-10 minutes or until cheese have melted and everything is heated throughout.
  • Remove from oven. Top with diced tomatoes and any other optional toppings.
  • Cut into slices and enjoy.

1 onion, chopped
1 (15 ounce) can refried beans
10 (6 inch) corn tortillas
1 tablespoon taco seasoning
1 cup enchilada sauce
1 roma tomato, chopped
1 cup vegan cheese, shredded
1 (2 1/4 ounce) can black olives, sliced
2 green onions, sliced

Steps:

  • Sautee onion in oil. Add beans and taco seasoning. Heat through.
  • Spread mixture evenly on 5 tortillas. Top with other 5 tortillas.
  • Spread with enchilada sauce. Sprinkle tomatoes, then cheese, then olives, then green onions on top, dividing evenly between all five "pizzas.".
  • Broil in oven for 1-2 minutes or until "cheese" is melted.
  • Cut each "pizza" into four sections with pizza cutter.

Our copycat version has all the signature elements of the fast-food favorite, just bigger and beefier than ever. Skip the drive-thru and give our homemade spin a try for a fun and easy weeknight meal. Add any additional garnishes you like (such as jalapeños, sour cream, or diced avocado).

2 tablespoons vegetable oil
8 (8 inch) flour tortillas
1 cup refried beans, warmed
1 cup cooked, Mexican-seasoned ground beef
½ cup taco sauce
¼ cup red enchilada sauce
1 cup shredded mozzarella cheese
1 cup shredded Mexican cheese blend
½ cup diced tomatoes
3 tablespoons sliced black olives
3 tablespoons chopped green onions

Steps:

  • Heat 1 tablespoon oil in a deep skillet over high heat. Pan-fry each tortilla turning frequently, adding more oil as needed, until golden brown, 2 to 3 minutes per side. Allow to drain on paper towels.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • To assemble each pizza, place 4 fried tortillas on a baking sheet. Spread 3 tablespoons of refried beans evenly on top of every other tortilla, then add 2 to 3 tablespoons ground beef. Place the other 4 tortillas on top.
  • Mix together the taco sauce and enchilada sauce in a small bowl. Spoon 2 tablespoons of the mixture on top of the tortillas and spread evenly. Sprinkle ¼ cup of each type of cheese evenly on top.
  • Bake in the preheated oven until the cheese is melted, 3 to 4 minutes. Remove from the oven and top with diced tomatoes, black olives, green onions, and any additional garnishes. Cut into quarters, and serve immediately.

1 (1 1/4 ounce) package taco seasoning
2 tablespoons water
8 small flour tortillas
1 (16 ounce) can refried beans, warmed
2/3 cup mild picante sauce or 2/3 cup salsa
1 cup shredded cheddar cheese or 1 cup monterey jack cheese, blend
1/4 cup chopped tomato
1/4 cup chopped green onion

Steps:

  • -Using your hands, mix together beef, taco seasoning, and water.
  • -Brown the beef mixture in a skillet over medium-high heat for 5-6 minutes, using a wooden spoon or spatula to break up the meat as it cooks; set aside.
  • -In 375 degree oil, fry tortillas for 30-45 seconds per side, keeping as flat as possible and popping any bubbles that may form; drain on brown paper bags.
  • -Spread beans, then meat, then picante sauce/salsa over 4 of the tortillas; set aside.
  • -Spread cheese, then tomatoes, then onions over remaining tortillas; stack one of these tortillas on each of the others.
  • -Place pizzas under a hot broiler just until cheese has melted.
