This Vegan Greek Salad is bursting with flavors, it tastes pretty similar to traditional classic Greek salad except it has vegan feta and irresistible creamy avocado, to take it to another level.

- In a large bowl, combine cherry tomatoes, cucumbers, onions, olives, avocado, feta cheese in a bowl and toss.
- Make the Greek salad dressing, in a small bowl combine, olive oil, lemon juice, maple syrup, garlic, parsley or cilantro, oregano, and salt. Pour dressing over salad and toss gently and serve.

- 1. Add the extra virign olive oil, crushed garlic, juice of the lemon, salt, pepper and a teaspoon of oregano to a jar. Shake vigirously to get a good mix. Set to one side. 2. Dice the tofu into small cubes and add to the marinade. Put it in the fridge overnight. It's really important the tofu has time to lift the flavours. 3. Next, prepare the salad vegetables. Dice the two large tomatoes into bite sized chunks and add to the salad bowl. 4. Peel the cucumber with a vegetable peeler, cut it in half lengthways before chopping into bite sized chunks. 5. Add the pitted olives to the salad bowl. 6. Finely slice half a red onion and add to the salad. 7. Gently mix together. 8. Strain the tofu out of the marinade and evenly place on top of the salad. If you prefer, you can tip the marinade in as well. However, I prefer to keep it to one side, so people can use it to their taste. 9. You can add a small drizzle of the marinade as your vegan greek dressing before serving. 10. Put the leftover marinade in a serving bottle.

VEGAN GREEK SALAD
Steps:
- Add the chopped romaine lettuce to the mixing bowl, then add the sliced red bell pepper, sliced red onion, sliced cherry tomatoes, sliced cucumber and kalamata olives.
- Toss everything up together and then pour over the vinaigrette and toss again before adding your vegan feta.
- Serve right away.

A delicious vegan feta cheese Greek Salad. Just as delicious as it's non-vegan counterpart but with 100% dairy-free vegan feta cheese. Made up of olives, cucumber, tomato, red onion and Mint and a simple extra virgin olive oil based dressing- both a delicious and nutritious meal.

- Note* For this recipe, I assume that you have already prepared the vegan feta cheese, following this recipe.
- Begin by chopping the cucumber, as pictured, in small chunks. Then thinly slice the red onion. Note* I left the tomatoes whole. However, you can chop them in half if you'd prefer.
- Remove the stems from the mint and keep the leaves, no need to cut them. I love mint, so this tastes divine. However, you can also add a handful of salad greens if wanting to make the mint more of an 'accent' flavour.
- Mix the cucumbers, onion, mint, cherry tomatoes and olives in a large bowl.
- Pour the lemon juice and olive oil over the veggies and season with salt and pepper then mix well, to combine and evenly coat the salad. *
- Add cubes of vegan feta and serve. Optionally, you can also serve it together with pita bread that's been slightly toasted in the oven, to make it crunchy. That way it works like a cracker as well as like croutons - for interesting textural differences in the dish.And that's it - your vegan greek salad is ready to be eaten and enjoyed.
