Very soft and chewy cookies that require little effort and don't even taste vegan, these have an outstanding bold flavor with the orange and cranberry complemented quite nicely by the fragrant vanilla.

¾ cup white sugar
½ cup margarine
1 orange, zested
1 ½ teaspoons vanilla extract
¼ teaspoon salt
¼ teaspoon baking powder
1 ½ cups all-purpose flour
1 ½ cups dried cranberries
¼ cup unsweetened applesauce

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease 2 baking sheets.
  • Beat sugar, margarine, orange zest, vanilla extract, salt, and baking powder together in a large bowl until blended. Stir in flour, applesauce, and cranberries until dough is well combined.
  • Drop dough onto baking sheets by tablespoons, 2 inches apart; flatten slightly.
  • Bake in the preheated oven until edges are golden brown, 6 to 7 minutes. Let cool for 5 minutes; transfer to a wire rack to cool completely, about 15 minutes.

A nice thing to have around during the holidays, but don't expect them to stay around long. These orange-flavored cranberry cookies are tart and delicious, not to mention beautiful. Not really a favorite of kids.

1 cup butter, softened
1 cup white sugar
½ cup packed brown sugar
1 egg
1 teaspoon grated orange zest
2 tablespoons orange juice
2 ½ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
2 cups chopped cranberries
½ cup chopped walnuts
½ teaspoon grated orange zest
3 tablespoons orange juice
1 ½ cups confectioners' sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a large bowl, cream together the butter, white sugar and brown sugar until smooth. Beat in the egg until well blended. Mix in 1 teaspoon orange zest and 2 tablespoons orange juice. Combine the flour, baking soda and salt; stir into the orange mixture. Mix in cranberries and if using, walnuts, until evenly distributed. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Cookies should be spaced at least 2 inches apart.
  • Bake for 12 to 14 minutes in the preheated oven, until the edges are golden. Remove from cookie sheets to cool on wire racks.
  • In a small bowl, mix together 1/2 teaspoon orange zest, 3 tablespoons orange juice and confectioners' sugar until smooth. Spread over the tops of cooled cookies. Let stand until set.

6 tablespoons canola oil
1/2 cup maple syrup
1 cup orange juice (best with pulp)
3 cups white whole wheat flour
4 teaspoons baking powder
2 teaspoons cinnamon (or to taste)
1/2 teaspoon ground cloves (or to taste)
1/2 teaspoon salt (or to taste)
2/3-1 cup dried cranberries (orange-flavored works best if available)
2/3 cup walnuts (chopped)
1 tablespoon turbinado sugar (or to taste)

Steps:

  • Heat oven to 375 degrees.
  • In a large bowl, mix the oil, syrup, and orange juice.
  • In a separate bowl, mix the flour, baking powder, spices, and salt.
  • Add the dry ingredients to the large bowl and mix only until there are no visible flour clumps.
  • Mix in cranberries and walnuts.
  • Gather the dough up in your hands and place on a lightly floured surface. Knead the dough a few times to make it a cohesive mass and then pat it into three 4-5 inch rounds that are about 3/4-1 inch high. (Or if you want larger but fewer scones you can pat the dough into 2 rounds 5-7 inches wide.)
  • Sprinkle generously with turbinado raw cane sugar for extra crunch.
  • Cut each round with a sharp knife into 8 triangles (like a pie), and place them on a cookie sheet with parchment paper.
  • Cook for 15-20 minutes or until firm and lightly browned. (Note: the scones tend to firm up slightly after they are removed from the oven and cool down so it is better to undercook them than to overcook them.) Best served warm but stay good for several days.
