VEGAN PEPPERONI PIZZA TOFU CRUMBLES
These pepperoni pizza tofu crumbles taste like the real thing! They are made with extra-firm tofu, seasonings, and spices. Sprinkle on top of veggie dishes, potatoes, salads, soups, and sandwiches for an authentic pepperoni pizza flavor.

- Preheat oven to 375°, prepare baking sheet with parchment paper or a silicone mat.
- Press and drain the tofu, pouring off liquid as necessary. This will take about 30 minutes using a tofu press. If pressing between plates with weights, it might take up to one hour.
- While the oven is preheating and the tofu is pressing/draining, stir together all other ingredients into a medium-sized bowl.
- When the tofu is pressed and drained, hand crumble into small pieces directly into the mixing bowl with the other ingredients. Toss together and stir to evenly coat.
- Turn onto a prepared baking sheet. Spread evenly and put it in the preheated oven for a total of 44-50minutes, checking at intervals. (See next instruction.)
- After putting the tofu in the oven, set the timer for 20 minutes. Open the oven after the first 20 minutes and turn and stir the tofu, moving the dryer tofu from the outer edges to the center and the moister tofu in the center, out to the edges. Put back into the oven and check again in 20 more minutes. Then at 5 minute increments until it's done.
- You will know when your tofu is done because it will be nicely browned - but not burned.
- You can keep these pepperoni pizza tofu crumlbes tightly covered in the fridge for up to a week - but I've never managed to keep them around that long! If they dry out then refresh with a little veggie broth.

- Wrap tofu in a clean towel and set something heavy on top - like a cast-iron skillet - to press out liquid for 10-15 minutes. Also preheat oven to 400 degrees F (204 C).
- Once pressed, cube tofu and add to a food processor along with sea salt, black pepper, red pepper flake, ground mustard, fennel seeds, smoked paprika, garlic powder, coconut sugar, ground anise, and A1 sauce/liquid smoke (optional). Mix/pulse to combine, scraping down sides as needed.
- Sample and adjust seasonings as needed, adding more salt for saltiness, red pepper flake for heat, paprika for smokiness, or coconut sugar for sweetness.
- Transfer the mixture to a parchment-lined baking sheet (or more baking sheets, as needed, if increasing batch size). Lay a sheet of plastic wrap or parchment paper on top and use your hands to spread into a uniformly thin layer about 1/4th - 1/8th inch thick (see photo). The more even the layer is, the more evenly it will bake. Spritz with a little nonstick spray or gently brush with a bit of oil to help it crisp up.

- Pour the water in a microwave safe bowl and microwave for about 11 seconds. You want the water to be slightly warm, or lukewarm. You should be able to dip your finger in it and not feel much of a difference between the temperature of your finger and the water. That's perfect! Add the yeast and the sweetener. Give it a quick stir and set aside for about 10 minutes to allow it to get nice and frothy! Once that happens, add the olive oil. Set aside.
- In a large bowl, add the flours, corn starch, and salt. Use a whisk to sift and stir the ingredients together.
- Now, pour the frothy yeast mixture combined with oil over the flour mixture and stir to combine. The mixture should resemble a sticky dough.
- Here's my favorite time-saving trick: We're going to knead the dough right in the bowl. Sprinkle the top of the dough with a little bit of all purpose flour (have some on-hand to add as you go) and grab the far edge of the dough and turn half of it back toward you, like you're folding a towel. Sprinkle a little bit more flour and continue, pressing down on the dough ball between each turn. Continue this for about 5 minutes, or until the dough is no longer sticky. You should be able to press your thumb lightly into the top of the dough ball and it will spring back after you release it. If so, your dough is ready.
