Easy vegan chili. You can saute the onions, peppers and garlic for a better flavor, but it's not necessary.

- Combine vegetable broth, kidney beans, pumpkin puree, black beans, garbanzo beans, diced tomatoes, red bell peppers, onion, tomato sauce, baby spinach, green chile peppers, olives, orange juice, garlic, vegetable oil, tomato paste, cocoa powder, brown sugar, cumin, chipotle powder, salt, Mexican oregano, and coriander in a slow cooker.
- Cook on Low, stirring occasionally, until flavors combine, about 8 hours.

Steps:
- Place black beans into a large bowl and cover with several inches cool water; let soak 8 hours to overnight.
- Drain and rinse beans thoroughly; place in a large pot. Cover with 1 inch of water; add lentils. Bring mixture to a boil; stir in roux mix until fully incorporated. Cover, reduce heat, and simmer until beans are tender, about 30 minutes.
- Place diced bell pepper in a microwave-safe bowl; cook in the microwave until slightly tender, 30 to 60 seconds. Stir bell pepper, tomato soup, pumpkin puree, chili seasoning mix, sugar, cinnamon, nutmeg, cloves, and onion powder into bean mixture. Cover and simmer until flavors have blended, about 15 minutes, stirring occasionally.

- In a big soup pot, heat the oil over medium heat. Add the onion, carrot, and bell pepper and sauté them until they begin to brown, about 5 minutes. Add the garlic, jalapeño, soy sauce, and spices and cook that all together for another 30 seconds. Add the tomatoes, pumpkin, broth, and beans and stir that up so everything is mixed. Get those flavors mingling and sh*t. Turn down the heat, cover, and let that simmer together for about 15 minutes. Stir it around every now and then.
- When it is done simmering, turn off the heat and stir in the lime juice. Serve right away with your favorite toppings.

- Add in the chopped celery and bell pepper and sauté a few minutes more until soft and cooked through.
- Add in the spices--from the chili powder to the black pepper--and stir until all the veggies are coated in the spices. Continue stirring and cooking the spices for a few minutes.
- Add in the canned chopped tomatoes, kidney beans, black beans and pumpkin puree and stir to combine. Bring the chili to a boil and then reduce the heat to a simmer. Allow the chili to simmer for 10-20 minutes. If you like your chili a bit runnier, add in some vegetable broth to thin it out. I love mine thick so I don't add any extra liquid. Towards the end of the cooking process, taste and add more salt and spices to your liking.

- Heat the oil in a dutch oven or sauce pan over medium heat. Add the onion and red bell pepper and cook until translucent, about 5 minutes. Stir in the chili powder, cumin, oregano, cinnamon, nutmeg and garlic cloves and cook another minute or two until the spices are fragrant, stirring often.
- Add in the fire roasted and diced tomatoes with juice along with the pumpkin puree and whisk to combine.
- Reduce heat to low, partially cover and let simmer for at least 30 minutes, stirring often. The longer this cooks, the more flavor develops so feel free to make this one in the afternoon to let simmer for hours.
