Sfouf (Lebanese Turmeric Cake) image

This Lebanese cake flavored with anise seeds was one of my favorite treats growing up. It's a beautiful bright yellow thanks to turmeric powder. My grandmother shared her recipe with me so I can finally make it for myself!

1 tablespoon tahini
1 ½ cups boiling water
2 teaspoons whole anise seeds
1 ½ cups white sugar
3 cups all-purpose flour
2 teaspoons ground turmeric
1 ½ teaspoons baking powder
1 ¼ teaspoons anise seed powder
½ cup vegetable oil
½ cup unsalted butter, melted
2 tablespoons pine nuts

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking pan with tahini.
  • Combine boiling water and anise seeds in a glass measuring cup; let steep, about 5 minutes. Strain into a bowl; stir in sugar until dissolved. Discard anise seeds.
  • Mix flour, turmeric, baking powder, and anise seed powder together in a bowl. Make a well in the center; mix in oil and butter. Stir in sweetened anise water until batter is the consistency of thick yogurt.
  • Pour batter into the prepared baking pan. Score top into diamond shapes with the tip of a knife; place 1 pine nut in the center of each diamond.
  • Bake in the preheated oven until top is lightly browned, about 30 minutes.

Spongy and aromatic, our vegan sfouf cake is an egg-free and dairy-free option to classic Lebanese semolina cake, spiced with turmeric and star anise.

20 mL of Apple Cider Vinegar
480 mL of Almond Milk
280 g of Fine Semolina
160 g of Plain Flour
16 g of Baking Powder
1 tsp of Baking Soda
1 tsp of Ground Turmeric
0.5 tsp of Ground Star Anise
85 mL of Maple Syrup
2 tbsp of Tahini
45 mL of Vegetable Oil (e.v.o. oil or canola)
2 tsp of Orange Essence (or orange blossom water)
2 tbsp of Sesame Seeds

Steps:

  • Prepare the vegan buttermilk by combining vinegar and milk in a bowl and let it sit for a few minutes.
  • In another bowl, mix semolina, flour, baking powder, baking soda, turmeric, star anise, and a pinch of salt.
  • Now, pour in the vegan buttermilk, followed by maple syrup, tahini, oil, and orange essence.
  • Combine all into a smooth cake batter.
  • Pour the batter into a greased 20 cm (8 inches) baking tin and sprinkle it with sesame seeds. Then, let it sit for 20 minutes before baking.
  • Bake the cake for 50 minutes at 160°C (320°F).
  • Let the cake cool down before slicing into squares, rectangles or diamond shapes.
