Quick and Healthy Vegetable Beef Soup (Low Carb and Ww Friendly) image

Easy, quick and good for you soup. This recipe is actually from a WW website; but for my low carb diet I added some lean ground beef and made some other adaptions. If you are on WW, skip the beef and it's 0 points per serving. If you are watching your sodium intake, use low sodium broth and no added salt tomatoes.

1 lb lean ground beef
1/2 large onion, chopped
1/2 teaspoon olive oil (optional)
2 garlic cloves, crushed
1 (15 ounce) can diced tomatoes, undrained
3 (15 ounce) cans broth (beef, chicken, veggie)
6 ounces fresh green beans
1/4 head cabbage, chopped
4 ounces fresh mushrooms, chopped
1/2 medium zucchini, peeled and diced
bay leaf
salt and pepper, to taste

Steps:

  • In a medium to large pot, heat 1/2 tsp olive oil; brown ground beef, onion and garlic.
  • Add broth, tomatoes, veggies and seasonings.
  • Bring to a boil; simmer, cover and cook on low for 15 minutes to 30 minutes.
  • Discard bay leaf, serve.

1 large onion, chopped
1 green bell pepper, chopped
2 garlic cloves, chopped
6 stalks celery, chopped
1 teaspoon Italian seasoning
½ teaspoon chili powder
½ teaspoon dried parsley
¼ teaspoon garlic powder
salt and ground black pepper to taste
½ (15 ounce) can sliced carrots, drained
½ (15 ounce) can sliced potatoes, drained
½ (15 ounce) can green beans, drained
½ (11 ounce) can canned corn (such as Green Giant Niblets®), drained
2 (14.5 ounce) cans chicken broth
5 ½ cups water
2 cups tomato puree
¼ cup grated Parmesan cheese

Steps:

  • Spray a large soup pot with cooking spray, and place over medium heat. Cook the onions, green pepper, garlic, and celery until the onions are translucent, stirring often, about 5 minutes; mix in the Italian seasoning, chili powder, dried parsley, garlic powder, salt and black pepper. Stir in the carrots, potatoes, green beans, and corn, mixing the vegetables with the seasonings, and add chicken broth and water.
  • Bring the soup to a boil, and add tomato puree and Parmesan cheese; return to a boil, lower heat to a simmer, and cook until the green peppers, onions, and celery are tender, about 15 more minutes.

This is a soup that I came up with while my Dh is on a diet to loose weight. This makes a lot of soup. I make it and use it for several meals, it freezes well. Serve with a crusty whole grain bread.

1 lb lean beef, cut into cubes
1 medium onion, chopped
1 teaspoon garlic, diced
1 bay leaf
2 -3 teaspoons beef bouillon (more if needed)
4 -5 cups water
1 stalk celery, chopped (i add some leaves)
1 (14 ounce) can diced tomatoes
2 (6 1/2 ounce) cans V8 vegetable juice
2 small zucchini, chunked
1 cup diced carrot
1 (14 ounce) can green beans
1 cup sliced mushrooms
2 cups sliced cabbage (can use coleslaw mix)
1 cup sliced okra (optional)

Steps:

  • Put beef, chopped onion, garlic, bay leaf and water in soup pot; cook until beef is tender.
  • Add celery, tomatoes, V8 juice, zucchini, carrots, green beans, cabbage & okra if using.
  • Cook until all vegetables are done, add salt & pepper to taste if needed.
