1 teaspoon seasoned salt
1 teaspoon onion powder
1 teaspoon garlic powder
1-1/2 pounds beef stew meat, cut into 1-inch cubes
2 tablespoons canola oil
3 cups water
3 medium potatoes, peeled and diced
1 cup sliced fresh carrots
1 cup chopped celery
1/2 cup chopped onion
1 teaspoon beef bouillon granules
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (8-1/2 ounces) peas, drained
1 cup tomato juice
3/4 cup medium pearl barley
1/2 teaspoon salt

Steps:

  • In a large resealable plastic bag, combine the seasoned salt, onion powder and garlic powder. Add beef and toss to coat. In a large skillet, brown beef in oil until meat is no longer pink; drain., Transfer to a 5- or 6-qt. slow cooker. Add the water, potatoes, carrots, celery, onion and bouillon. Cover and cook on low for 5-6 hours or until meat and vegetables are almost tender., Add the corn, tomatoes, peas, tomato juice, barley, salt and pepper; cover and cook 2 hours longer or until barley is tender.

Beef Barley Soup with Kale image

This Beef Barley Soup with Kale is the perfect warm and comforting soup made with tender beef, fresh veggies and barley.

2 tablespoons olive oil
1 1/2 pounds beef cubes ((chuck or sirloin work well))
1/2 teaspoon salt
1/4 teaspoon pepper
3 medium carrots (chopped)
4 stalks celery (chopped)
1 large onion (diced)
4 cloves garlic (minced)
1/2 teaspoon dried or fresh thyme
1/2 cup red wine ((substitute beef stock, if desired))
4 cups beef stock
1 1/2 cups cooked barley
2 cups fresh kale (chopped)
chopped parsley for serving

Steps:

  • Heat a large pot over medium high heat and add the olive oil.
  • Pat the cubes of beef dry and season them with salt and pepper.
  • Brown the beef on all sides in the pot (in batches if necessary - do not overcrowd the pot!), and remove the beef to a plate once each side is browned. Don't worry about cooking the beef all the way through at this stage.
  • Once the beef has been removed to a plate, add the carrots, celery, onions, garlic and thyme and saute until the onion is translucent and the veggies are soft.
  • Add the wine and stir to deglaze the bottom of the pot, until the wine has reduced.
  • Add the beef stock, cooked barley, and add the beef back into the pot.
  • If using uncooked barley, add 1/2 cup uncooked barley and increase the amount of stock to 5 cups. This will yield a creamier (less broth-y) soup.
  • Stir well to combine and cover. Reduce the heat to medium low and cook for about 30-35 minutes, stirring every 15 minutes or so.
  • Add the kale, stir well and cook for 5 more minutes, covered.
  • Serve with crusty bread.

1 (3 pound) beef chuck roast
½ cup barley
1 bay leaf
2 tablespoons oil
3 carrots, chopped
3 stalks celery, chopped
1 onion, chopped
1 (16 ounce) package frozen mixed vegetables
4 cups water
4 cubes beef bouillon cube
1 tablespoon white sugar
¼ teaspoon ground black pepper
1 (28 ounce) can chopped stewed tomatoes
salt to taste
ground black pepper to taste

Steps:

  • In a slow cooker, cook chuck roast until very tender (usually 4 to 5 hours on High, but can vary with different slow cookers). Add barley and bay leaf during the last hour of cooking. Remove meat, and chop into bite-size pieces. Discard bay leaf. Set beef, broth, and barley aside.
  • Heat oil in a large stock pot over medium-high heat. Saute carrots, celery, onion, and frozen mixed vegetables until tender. Add water, beef bouillon cubes, sugar, 1/4 teaspoon pepper, chopped stewed tomatoes, and beef/barley mixture. Bring to boil, reduce heat, and simmer 10 to 20 minutes. Season with additional salt and pepper to taste.

On one hand there is beef barley soup, and on the other there's mushroom barley soup, but why choose between the two when you can have both in one soup? Heck, why not add a bunch of other vegetables-carrots, celery, tomatoes, and chard or spinach-to the mix for even more color, flavor, and nutrition? And how about a handful of fresh dill for an earthy herbal essence? It's that kind of thinking that led me right to this wonderful, filling, meal-in-a-bowl with tender beef in every bite balanced with a bounty of whole-grain, plant-powered goodness.

12 ounces lean beef stew meat, cut into 1/2-inch pieces
1 teaspoon salt, divided
1/2 teaspoon freshly ground pepper, divided
2 tablespoons olive oil, divided
1 large onion, diced
8 ounces cremini mushrooms, coarsely chopped
2 medium-size carrots, diced
2 celery stalks, diced
1/2 small bunch green Swiss chard, stems and leaves separated and chopped, or 3 cups lightly packed chopped spinach
2 garlic cloves, minced
4 cups low-sodium beef broth
One 14-ounce can no-salt-added diced tomatoes
1/2 cup pearled barley
1/3 cup coarsely chopped fresh dill

Steps:

  • Season the meat with 1/4 teaspoon each of the salt and pepper. Heat 1 tablespoon of the olive oil in a large soup pot over medium-high heat. Add the meat to the pot and cook, stirring occasionally, until well browned, about 5 minutes. Transfer the meat to a plate.
  • Add the remaining tablespoon of olive oil to the pot, then add the onion and mushrooms and cook, stirring occasionally, until softened, about 4 minutes. Add the carrots, celery, chopped chard stems, if using (if you are using spinach, do not add it here), garlic, the remaining 3/4 teaspoon salt and 1/4 teaspoon pepper and cook, stirring often, for 2 minutes more.
  • Add the broth, 2 cups of water, the diced tomatoes with their juices, and the barley and return the meat with any accumulated juices to the pot. Bring to a boil, then lower the heat to low, cover, and simmer until the barley is cooked and the meat is tender, about 1 hour. Add the chard leaves or spinach and the dill and cook for 2 minutes more, then serve.

Kale, Barley and loads of other healthy ingredients make for a dang good soup. Perfect for cold winter nights or cool fall evenings.

2 tbsp olive oil or canola oil
1 medium onion, chopped
2 cloves garlic, crushed
1 lb top round steak, cubed (can use any cut of beef you prefer or even hamburger)
3-4 stalks celery, large sliced
2-3 small or medium potatoes, large diced
4-5 carrots, large sliced
1 29 ounce can diced tomatoes + 1 can water
2-3 cups water
1½ cups cooked Barley*
1 cup frozen peas
1½ cups frozen green beans
2 cups chopped kale
¼ tsp Italian seasoning (can use a pinch of basil, thyme, parsley and oregano, if you don't have italian seasoning)
3 tsp beef bullion**
1 tbsp brown sugar
salt and pepper (approx ½ tsp salt and ¼ tsp pepper)

Steps:

  • Heat oil in large soup pan and add onions, garlic and beef cubes. Generously salt and pepper and cook until meat is no longer pink.
  • Add potatoes, carrots and Celery and beef bullion, and continue cooking for 3-4 minutes stirring constantly so veggies won't stick to bottom of pan.
  • Add diced tomatoes, water (just enough to cover soup ingredients by about an inch), italian seasoning and cooked barley. Bring to a boil and then take it down to a simmer. Simmer for 15-20 minutes or until veggies are tender. (add more water if necessary during cooking process.)
  • When veggies are tender, add frozen peas, green beans, kale and 1 tbsp brown sugar. Simmer for 10 minutes or until beans and peas are tender.
  • Taste broth and add more salt and pepper if needed.
  • Serve with rolls or crackers.

I got this recipe from Epicurious and modified it to suit my family's taste. Once a week during the fall and winter I have "soup night" and invite friends and family. This is one of our favorites. I usually just serve it with homemade wheat bread. It is perfect cold weather comfort food. Enjoy!

2 tablespoons oil
1 -1 1/2 lb stew meat
3 stalks celery, chopped
1 large onion, chopped
1/4 cup barley (not quick cooking)
4 cups water
2 (14 1/2 ounce) cans beef broth
1 (29 ounce) can diced tomatoes
1 (10 ounce) package frozen corn
2 cups carrots, sliced
2 bay leaves
2 teaspoons garlic powder
1 1/2 cups frozen peas
1 1/2-2 teaspoons hot pepper sauce
salt and pepper

Steps:

  • Heat oil in a large dutch oven.
  • Add meat, season with salt and pepper and saute until dark brown. (About 8 minutes).
  • Remove beef and set aside.
  • Add celery, onions and barley to pan and saute until onion is golden (about 15 minutes).
  • Add water, broth, tomatoes, corn carrots, bay leaves, and garlic.
  • Return beef to pot and bring to a boil.
  • Reduce heat to med/low and simmer uncovered one hour.
  • Add peas and hot pepper sauce.
  • Cover and simmer 30 more minutes.
  • Season to taste with salt and pepper and additional hot sauce if desired.
  • Serve.
  • Wait for the compliments.
