Christmas Tree Vegetable Platter image

A broccoli and tomato "tree" with pretzel "trunk" and cauliflower "snow" are delicious dippers for a cool and creamy dip.

1/2 cup sour cream or crème fraîche
1/4 cup mayonnaise or salad dressing
3 tablespoons fresh chopped parsley
3 tablespoons finely chopped fresh chives
1/2 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 small clove garlic, finely chopped
3 cups fresh broccoli florets
14 grape tomatoes
1/2 yellow bell pepper, cut into strips
1 1/2 cups fresh cauliflower florets
3/4 oz (about 40) pretzel sticks (from 15-oz bag)

Steps:

  • In small bowl, stir together dip ingredients. Cover; refrigerate at least 1 hour to blend flavors.
  • Rinse and thoroughly dry vegetables. Trim broccoli and cauliflower floret stems.
  • Arrange broccoli on serving platter to form tree shape and tomatoes to form garland. Arrange bell pepper to form star and cauliflower to form snow (see photo). If desired, cover and refrigerate up to 4 hours.
  • Just before serving, arrange pretzels at bottom of tree to form trunk. Serve with dip.

1 broccoli stem

1 Styrofoam cone
Tacky glue
Cheesecloth
Green food coloring
Kale
Toothpicks
Veggie trims: radishes, carrots, peppers, zucchini, cauliflower, broccoli, asparagus, baby corn, black olives and clementines
GARLAND AND DECORATIONS:
Daikon radishes
Turnips
Green, sweet red and yellow pepper rings

Steps:

  • Stack cake dummies (found in cake decorating stores or at www.cookscakeandcandy.com-search "Styrofoam dummy rounds"). Cut Styrofoam cone to about 4 in. high; glue on top of small cake dummy. Glue remaining cake dummies together. Wrap the form in cheesecloth dyed with food coloring., Attach kale leaves with toothpicks. Add veggie trims., For daikon radish garland, use a vegetable peeler to create long, thin ribbons from radishes. Drape around the tree, going under some trims and over others, and tucking in the ends to hide., For ornaments, cut turnips into 1/4-in.-thick rounds. Use cookie cutters to make ornaments; attach with toothpicks., Make a tree topper of interlinked pepper rings.

This Veggie Christmas Tree is sure to be a show stopper! It is tasty, impressive, and oh so festive.

4 heads broccoli (med-large heads)
1 medium carton cherry tomatoes
1 slice cheddar cheese (1/4 inch thick)
celery, bell peppers, carrots (optional)

Steps:

  • Rinse all veggies and chop up the broccoli into florets. Cut the celery and slice the bell peppers if you are using them.
  • Wrap the styrofoam cone with a double layer of plastic wrap. Starting at the base of the cone insert toothpicks into the cone and attach a row of broccoli. Continue inserting toothpicks adding rows of broccoli and cherry tomatoes until you reach the top of the cone.
  • Place one toothpick in the very top of the cone. Cut a star out of the cheese using a mini cookie cutter or a knife. Carefully slide it onto the toothpick on the top.
  • Arrange the bell peppers, celery. carrots, other vegetables or crackers that you choose to use around the base of the tree. Serve with the bacon ranch cheese ball or your favorite Marzetti® Veggie Dip. ENJOY!

I saw this at a party one year and I thought it was so cute I had to try it. It makes a great centerpiece for an appitizer table or even for individual tables. These internet pictures show you some examples of how far you can go with making the tree.

ITEMS NEEDED:
- styrophome cone
- toothpicks
- red and green fruits or veggies
- cheese
- knife
- cutting board
- look through your produce section and find yummy red and green healthy treats to put on your tree.
SUGGESTED VEGGIES AND FRUIT:
- cucumbers
- cherry tomatoes
- radishes
- red and/or green seedles grapes
- apple, rinsed and cubed
- cheddar cheese, cubed
- red and/or green bell peppers, 1 1/2 inch circles
- mozzarella cheese, low-fat, cubed

Steps:

  • First prepare your veggies or fruit. If you are using apples, cut them in cubes, and if you won't be eating your tree for a while just brush some lemon juice on your apples to prevent browning.
  • Wrap the cone in clear plastic food wrap, securing it with floral pins/scotch tape in one or two places.
  • Using the toothpicks, attach the veggies, and cheese cubes to the cone. Push the toothpicks into the cone (you may need to cut the toothpicks down to fit in the top of your cone). Angle the toothpicks upwards to help keep the fruit and veggies from falling off. Cover the whole cone!
  • A star made of cheese can be attached to the top of the tree with a toothpick. It can be hand carved or cut with a small star-shaped cookie cutter.
  • place the tree in the center of a serving platter and surrround with other cut veggies. Serve with a bowl of your favorite dip(s).

This is a great recipe for a great presentation for the Christmas. It makes it easy to serve vegetables and dip in a festive way. I use pretzel sticks to make the tree trunk for its authentic bark-like color. Serve as stated or if you choose fill all around the tree with cauliflower and put the ranch dip in a separate dish if you need to refill or keep cold.
