I am posting this recipe, by request. It is a very nice non-tomato sauce vegetarian lasagna. Not gluten-free!

Steps:
- Dice zucchini. Coarsely chop broccoli and spinach.
- In a nonstick 12 -inch skillet over medium heat, melt butter (or margarine), cook zucchini, broccoli, oregano, and 1/4 teaspoon of salt, stirring frequently, until vegetables are tender-crisp, about 5 minutes. Add Spinach and toss until wilted. remove skillet from heat.
- In medium bowl, with fork, mix ricotta and eggs; set aside.
- Prepare lasagna noodles as label directs. Drain.
- Meanwhile, preheat oven to 350 degrees F.
- In 2-quart saucepan over medium heat, melt 3 tablespoons margarine (or butter). Stir in flour and 1/4 teaspoon salt until smooth. Gradually stir in milk; cook, stirring constantly until sauce comes to a boil and thickens. Remove saucepan from heat; stir in Parmesan cheese.
- In13-by-9-inch glass baking dish, layer half of the prepared lasagna noodles, half of the ricotta mixture, half of the vegetable mixture, and half of the mozzarella. Top with half of the sauce, then with the remaining noodles, ricotta, and vegetable mixture. Spoon remaining sauce over vegetable layer; arrange remaining mozzarella on top.
- Bake lasagna 40 to 45 minutes until hot and bubbly. Let lasagna stand 10 minutes for easier serving.

- Preheat oven to 400 degrees F. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
- In a large skillet or Dutch oven, heat oil over medium-high heat. Add mushrooms, zucchini, bell pepper, onion, and garlic. Cook and stir the veggies just until tender (about 3-5 minutes).
- While the veggies cook, use a separate bowl to stir together egg, parsley, basil, ricotta cheese, 1 ¼ cups mozzarella, and ¼ cup Parmesan.
- When the vegetables are done cooking, stir the marinara sauce into the skillet.
- Spread ¼ of the marinara-vegetable sauce mixture in a thin layer in the bottom of the prepared baking dish. Top with 3 no-boil lasagna noodles (or as many as you need to cover a single layer in the dish), ⅓ of the ricotta mixture, and another ¼ of the sauce mixture.
- Repeat layers two more times. Finish with remaining 1 cup of mozzarella and ¼ cup of Parmesan cheese on top. Cover with a piece of greased foil.
- Bake for 35 minutes. Remove foil, and bake for another 5-10 minutes (or until heated through and cheese on top is browned). Let stand for about 10 minutes before slicing and serving.

- Preheat oven to 400 degrees F (200 degrees C). Spray a large baking sheet with cooking spray.
- Arrange zucchini, bell peppers, mushrooms, and onion wedges on prepared baking sheet. Scatter basil and garlic over vegetables and spray with cooking spray. Season with salt and black pepper.
- Bake in preheated oven until vegetables are lightly browned and tender, 10 to 25 minutes.
- Bring a large pot of lightly salted water to a boil. Cook lasagna in the boiling water, stirring occasionally until cooked through but firm to the bite, about 8 minutes. Drain.
- Bring pasta sauce to a simmer in a saucepan over medium-high heat. Mix mozzarella cheese and Parmesan cheese in a bowl.
- Pour about 1/3 cup pasta sauce in a 9x13-inch baking dish. Layer 3 lasagna noodles over sauce. Spread about of 1/4 the roasted vegetables over noodles and top with about 1/4 the sauce. Sprinkle 1/4 of the mozzarella-Parmesan cheese mixture over the sauce. Repeat layers 3 more times, ending with the cheese.
- Bake in preheated oven until cheese is melted and sauce is bubbly, 20 to 25 minutes. Allow lasagna to rest for 10 minutes before slicing.

- Preheat oven to 200C/390F.
- Place vegetables on the tray, drizzle with oil, sprinkle with garlic, salt and pepper. Toss.
- Roast for 25 minutes, turning at 15 minutes, until tender and browned.
- Remove from oven, loosen from tray with spatula while warm (can stick when cools).
- Heat oil in a skillet over medium high heat. Add garlic and onion, cook for 3 minutes until golden.
- Add passata, crushed tomato, water, dried herbs, chilli, salt and pepper. Stir. Simmer on medium low heat for 20 minutes. Adjust salt at the end. *Add a teeny touch of sugar if it's a bit sour, depends on quality of tomatoes used.*
- Remove from stove and let cool for 5 minutes before using.
- Place ingredients in a bowl and mix until combined.
- Preheat oven to 160C/320F.
- Spread a ladle of tomato sauce on the base of a large baking dish (Note 5).
- Cover with lasagna sheets, tearing as required to fit.
- Top with roasted vegetables, scatter over red peppers. Spoon over 2 1/2 cups of Sauce, then sprinkle with half the cheese.
- Cover with lasagna sheets. Spread over Ricotta mixture.
- Cover with lasagna sheets. Pour over remaining sauce and sprinkle with remaining cheese.
- Bake for 25 - 30 minutes or until the cheese is golden. If using dried lasagna sheets, stick a knife in the middle to ensure it's cooked - if it needs longer, cover and stick it back in the oven.
- Rest for 5 minutes before cutting and serving. Store leftovers per notes - brilliant reheated!

- Dip each pasta sheet into warm water to slightly soften, one by one.
- Mix ricotta with the 2 eggs and a handful of grated cheese, salt and pepper. Combine til incorporated.
- Butter casserole dish and ladle sauce all over the bottom.
- Add enough noodles to cover the bottom of the pan.
- Ladle sauce all over noodles.
- Spread mixed veggies all over the noodles.
- Sprinkle with grated cheese, shredded cheese and dot it with torn, fresh mozzarella.
- Layer the zucchini strips to cover first layer.
- Add more sauce on top of zucchini.
- Spread ricotta mixture all over, you probably won't use all of it but spread a nice amount because this is the only layer you will do it on.
- Repeat with all the other ingredients until you reach the top.
- Spoon sauce all over, add shredded cheese and slices of fresh mozzarella, chopped parsley and pine nuts.
- Drizzle with olive oil and place foil over pan.
- Bake at 350 for 30 minutes.
- Take foil off and bake for 10 more minutes. Sides should be bubbling.
- Place under the broiler for a few seconds to get the cheese extra golden.
- Let it rest for ½ hour before cutting.

- Preheat the oven to 400 degrees F. Coat a 9x13-inch baking dish with nonstick spray.
- In a large saucepan or Dutch oven, heat the olive oil over medium heat. Add the sweet potato, bell peppers, red onion, zucchini, dried basil, and ¼ teaspoon kosher salt. Cook until the vegetables are tender and begin to brown, about 10 minutes.
- Add the tomato sauce and balsamic to the vegetables. Stir to combine then bring the mixture to a gentle simmer. Let simmer, stirring occasionally, for 10 minutes.
- In a large bowl add the ricotta, 1/4 cup Parmesan, egg, and remaining 1/2 teaspoon salt. Mix well, until the mixture is evenly combined.
- Stir in the spinach, using a fork to break it up and distribute it as evenly with the ricotta mixture as possible.
- Spread a thin layer of the vegetable tomato sauce on the bottom of the prepared baking dish in an even layer. Arrange 3 lasagna noodles on top, breaking the ends if needed so that they fit. Leave some space around the noodles, as they will expand as they cook.
- Top the noodles with 1/3 of the remaining sauce, half of the ricotta mixture, the next 1/3 portion of the sauce, and 1/2 cup of the mozzarella.
- Top with 3 more noodles, the remaining ricotta mixture, and 1/2 cup mozzarella (no tomato sauce in this layer).
- Top the cheese with the 3 final noodles. Spread the remaining sauce over the top.
- Sprinkle with the remaining 1 cup mozzarella cheese and remaining ¼ cup Parmesan.
- Cover the lasagna with foil (be careful not to let the foil touch the top of the cheese or it will stick-I like to stick a few toothpicks in the top of the lasagna so that they are poking up and keep the foil off of the cheese). Bake it covered for 25 minutes.
- Remove from the oven, uncover, and rotate the pan by 180. Continue cooking uncovered for 15 to 20 more minutes, until it is hot and bubbly and the cheese is beginning to have brown spots.
- Remove from the oven and let cool for 15 minutes to set. Sprinkle with fresh basil, then slice and serve.

- Preheat oven to 400 degrees F.
- Spray a baking pan with cooking spray.
- Place a large pot filled with water on the stove and bring to a boil.
- Add in the peppers and boil for 6 minutes.
- Take out of the water, cool and then peel off the skins. Set aside.
- Mix the ricotta, egg yolks and parley and set aside.
- Place a layer of eggplant slices on the bottom.
- Top with 1/3 of the ricotta mixture.
- Add 1/3 of the tomato sauce on top of the ricotta.
- Sprinkle 1/3 cup of the Parmesan cheese and 1/3 cup of the mozzarella.
- Continue with a layer of zucchini, ricotta, sauce and cheese.
- Then make the last layer the peppers, ricotta, sauce and cheese.
- Cover with foil and bake for 30 minutes then take off the foil and cool for another 15 minutes or until browned on top.
- Test the vegetables with a fork to make sure tender. Cooking time will depend upon the thickness of the vegetables.
- Let stand 15 minutes before serving.
VEGETABLE LASAGNA WITHOUT THE LASAGNA
A nice change, leaving out the lasagna. I like to add some sliced mushrooms and hot peppers. This is another dish that you can experiment with and make it to suit your own taste. Do ahead and pop it in the oven 1 hour or so before serving. With eggplants I find it depends on the age and size whether you peel it or not. I recommend that you peel them. I also substitute unpeeled Zucchini for the eggplant.

- Preheat oven to 425 degrees Fahrenheit.
- Sprinkle both sides of the peeled egg plant slices with 1/2 tsp salt and 1/4 tsp pepper.
- Place strips of egg plant and the chopped onions on a non stick baking sheet, in a single layer, and bake for 5 to 7 minutes; turn the strips over and bake a little longer until the eggplant is slightly soft. You should still be able to lift the slices but they should be soft. Stir up the onions; they should be translucent. If one is done before the other, take it out of the oven until both are cooked.
- Mix together the ricotta, egg white, green onion and remaining salt and pepper.
- Spread 1 1/2 cups of tomato sauce on the bottom of a 9x13" oven proof casserole.
- Place a layer of eggplant and onion, using about one third.

- Add another layer of veggies (1/3).
- Cover with the rest of the ricotta.
- Add the rest of the veggies.
- Add the remaining tomato sauce on top.
- Sprinkle with the mozzarella and parmesan cheeses.
- Cover with foil and bake for 1 hour at 375 degrees Fahrenheit.
- Remove foil and bake another 5 to 10 minutes until the cheese is nicely browned.

- Preheat oven to 350 degrees.
- Combine spaghetti sauce and water together.
- Combine mozzarella and Parmesan together in a large bowl. Remove 1.5 cups of cheese and reserve for topping the lasagna.
- To the bowl of cheese add spinach, ricotta, pesto, garlic, oregano, and egg, along with a few pinches of salt and pepper.
- Mix until well combined.
- Pour 1 cup sauce/water mixture into a 9x13 baking dish and spread across the bottom. Layer 5 noodles, slightly overlapping to cover the bottom of the pan. I like to do four noodles the long way, and then break off the end of a noodle to fit it widthwise and cover the rest.
- Layer 1/2 of the ricotta mixture in an even layer on top of the noodles. Then drizzle a 1/2 cup of sauce on top of that.
- Then layer another 5 noodles, the remaining ricotta mixture, and another 1/2 cup sauce.
- Lastly, layer 5 noodles and the remaining sauce. Then sprinkle with reserved cheese.
- Cover the pan tightly with foil and bake for 50 minutes. Remove foil and bake for another 10 minutes or until the noodles are al dente and sauce is bubbling. Broil for 1 minute on high, just until the cheese starts to turn golden brown.
- Let cool for 10 minutes before serving. Garnish with parsley and serve with extra sauce on the side if desired.
