Easy Vegetable Pot Pie image

This pie takes only a few minutes of preparation time. The filling is made using a can of cream soup and a can of mixed vegetables mixed with a little thyme. The kids are sure to love this savory pastry.

1 (15 ounce) can mixed vegetables, drained
½ cup milk
½ teaspoon dried thyme
½ teaspoon ground black pepper
2 (9 inch) frozen prepared pie crusts, thawed
1 egg, lightly beaten

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a medium bowl, combine potato soup, mixed vegetables, milk, thyme, and black pepper.
  • Spoon filling into bottom pie crust. Cover with top crust, and crimp edges to seal. Slit top crust, and brush with beaten egg if desired.
  • Bake for 40 minutes. Remove from oven, and cool for 10 minutes before serving.

1 onion, chopped
8 ounces mushrooms
1 clove garlic, minced
2 large carrots, diced
2 potatoes, peeled and diced
2 stalks celery, sliced 1/4 inch wide
2 cups cauliflower florets
1 cup fresh green beans, trimmed and snapped into 1/2 inch pieces
3 cups vegetable broth
1 teaspoon kosher salt
1 teaspoon ground black pepper
2 tablespoons cornstarch
2 tablespoons soy sauce
1 recipe pastry for double-crust pie

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Heat oil in a large skillet or saucepan. Cook onions, mushrooms, and garlic in oil for 3 to 5 minutes, stirring frequently. Stir in carrots, potatoes, and celery. Stir in cauliflower, green beans, and vegetable broth. Bring to a boil, then turn heat down to a simmer. Cook until vegetables are barely tender, about 5 minutes. Season with salt and pepper.
  • In a small bowl, mix the cornstarch, soy sauce, and 1/4 cup water until cornstarch is completely dissolved. Stir into vegetables, and cook until sauce thickens, about 3 minutes.
  • Roll out 1/2 of the dough to line an 11x7 inch baking dish. Pour the filling into the pastry lined dish. Roll out remaining dough, arrange over the filling, and seal and flute the edges.
  • Bake in preheated oven for 30 minutes, or until the crust is brown.

Half a Premade 9-inch Pie Crust, thawed as directed on package
Half a Small Onion, diced (about 1/2 cup)
1 Large Carrot, peeled and diced (about 1/2 cup)
1 Celery Stalk, diced (about 1/2 cup)
1 Small Potato (6-7 ounces), peeled and diced (about 1 cup)
1 tablespoon Olive Oil
2 tablespoons Unbleached All-Purpose Flour
1/4 teaspoon Fine Sea Salt
1/4 teaspoon Dried Thyme
1/4 teaspoon Dried Parsley
1/8 teaspoon Dried Rosemary
1/8 teaspoon Black Pepper
3/4 cup Vegetable Broth
1/2 cup Whole Milk, plus more for brushing the pastry
1/2 teaspoon Soy Sauce
1/4 cup Frozen Green Peas, thawed

Steps:

  • Remove the thawed pie dough from the fridge and place it on the counter while you gather and prep your ingredients.
  • Chop the onion, carrot, celery, and potato into small 1/4-inch thick pieces.
  • Preheat the oven to 375°F. If using a toaster oven adjust the cooking rack to the bottom position and select the BAKE setting.
  • Heat the oil in a 10-inch skillet over medium-high heat.
  • Add the diced onion, carrot, celery, potato, and a few pinches of salt and pepper.
  • Sauté until the vegetables are tender, about 7 to 10 minutes, depending on how large they are.
  • Sprinkle the flour and seasonings over the vegetables, stir to coat everything, then cook for 1 minute.
  • Slowly whisk in the broth, milk, and soy sauce. Stir well to incorporate the flour and make sure that no lumps form.

  • Roll out the dough so it hangs a little bit over the baking dish or ramekins. Press the edges to seal the dough. Cut 3 or 4 small slits to vent and lightly brush the dough with milk or cream.
  • Bake until the filling is bubbling and the crust is golden brown, about 20 to 25 minutes.
  • Let the pie(s) cool for at least 10 minutes before serving.

I was craving pot pie one day, so I threw this vegan version together with what I had on hand. It came out more wonderful than I could have imagined and it's even better the second day. I am not a big fan of complicated recipes, so I tried to keep it as simple as possible. I used a bag of organic frozen veggies to cut down on the work (corn, peas, carrots, green beans).

½ butternut squash, peeled and cut into 1/2-inch cubes
3 Yukon gold potatoes, cut into 1/2-inch cubes, or more to taste
4 tablespoons olive oil
½ large sweet onion, diced
3 cloves garlic, minced, or more to taste
5 tablespoons all-purpose flour
1 (32 fluid ounce) container vegetable broth
2 tablespoons vegan Worcestershire sauce
1 teaspoon salt, or more to taste
1 teaspoon ground black pepper, or more to taste
1 teaspoon dried oregano
1 teaspoon ground thyme
¾ cup water
1 (10 ounce) package frozen mixed vegetables
1 vegan pie crust

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet with cooking spray.
  • Place squash and potatoes on the prepared baking sheet.
  • Bake in the preheated oven for 15 minutes. Set aside.
  • Heat olive oil in a heavy-bottomed saucepan over medium-high heat. Add onion and garlic; saute until onion is translucent, about 7 minutes. Add flour; mix thoroughly. Cook, stirring constantly to prevent burning, until a thick paste is formed, 2 to 3 minutes.

  • Add frozen vegetables to the broth mixture. Cook until heated through, 3 to 4 minutes. Pour mixture into a large baking dish. Roll out the pie dough to fit the baking dish and lay it on top; make a few cuts in the dough to allow steam to escape.
  • Bake in the preheated oven until filling is bubbling and crust is browned, about 30 minutes.

2 cups sliced yellow onions (2 onions)
1 fennel bulb, top and core removed, thinly sliced crosswise
1/2 cup all-purpose flour
2 1/2 cups good chicken stock
1 tablespoon Pernod
Pinch saffron threads
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
3 tablespoons heavy cream
1 1/2 cups large-diced potatoes (1/2 pound)
1 1/2 cups asparagus tips
1 1/2 cups peeled, 3/4-inch-diced carrots (4 carrots)
1 1/2 cups peeled, 3/4-inch-diced butternut squash
1 1/2 cups frozen small whole onions (1/2 pound)
1/2 cup minced flat-leaf parsley
3 cups all-purpose flour
1 1/2 teaspoons kosher salt
1 teaspoon baking powder
1/2 cup vegetable shortening
1/4 pound cold unsalted butter, diced
1/2 to 2/3 cup ice water
1 egg beaten with 1 tablespoon water, for egg wash
Flaked sea salt and cracked black pepper

Steps:

  • Melt the butter in a large pot over medium heat. Add the onions and fennel and saute until translucent, 10 to 15 minutes. Add the flour, reduce the heat to low, and cook for 3 more minutes, stirring occasionally. Slowly add the stock, Pernod, saffron, salt, and pepper, and bring to a boil. Simmer for 5 more minutes, stirring occasionally. Add the heavy cream and season to taste. The sauce should be highly seasoned.
  • Cook the potatoes in boiling salted water for 10 minutes. Lift out with a sieve. Add the asparagus, carrots, and squash to the pot and cook in the boiling water for 5 minutes. Drain well. Add the potatoes, mixed vegetables, onions, and parsley to the sauce and mix well.
  • For the pastry, mix the flour, salt, and baking powder in the bowl of a food processor fitted with a metal blade. Add the shortening and butter and mix quickly with your fingers until each piece is coated with flour. Pulse 10 times, or until the fat is the size of peas. With the motor running, add the ice water; process only enough to moisten the dough and have it just come together. Dump the dough out onto a floured board and knead quickly into a ball. Wrap the dough in plastic and allow it to rest in the refrigerator for 30 minutes.
  • Preheat the oven to 375 degrees F.
  • Divide the filling equally among 4 ovenproof bowls. Divide the dough into quarters and roll each piece into an 8-inch circle. Brush the outside edges of each bowl with the egg wash, then place the dough on top. Trim the circle to 1/2-inch larger than the top of the bowl. Crimp the dough to fold over the sides, pressing it to make it stick. Brush the dough with egg wash and make 3 slits in the top. Sprinkle with sea salt and cracked pepper. Place on a baking sheet and bake for 1 hour, or until the top is golden brown and the filling is bubbling hot.
