VEGETARIAN LOW CAL/ LOW CARB STUFFED TOMATO
Delicious oven baked stuffed tomato with spinach and meat substitute crumbles-can always use real ground meat. So good and easy!

Steps:
- Cut tomato in half and carefully cut out pulp to save.
- Chop tomato pulp and onion.
- Mix semi-thawed crumbles, spinach, tomato, and onion, plus any spices you'd like.
- Place tomato in sprayed pan and stuff with mixture, surround with any leftover mixture.
- Spray with cooking spray and place in 350 degree oven.
- Bake for about 45 minutes checking and repraying every 25 minutes.

Vegetarian Stuffed Tomatoes with zucchini and mint

Steps:
- Rinse tomatoes and halve horizontally, then trim stem so top half stands upright.
- Scoop out seeds and flesh from tomatoes with a teaspoon. Pass through a sieve into a bowl, pressing on solids with the spoon to extract as much liquid as possible.
- Rinse zucchini, wipe dry and cut into about 5 mm (approximately 1/4-inch) cubes.
- Stir the zucchini into the tomato pulp and season with vinegar, salt and pepper.
- Toast the sesame seeds in a small dry pan until golden brown, tossing frequently, then stir into the zucchini mixture while still warm.
- Rinse the mint, shake dry and pluck leaves. Reserve some leaves for garnish and finely chop the rest, then fold into the zucchini mixture.
- Season zucchini mixture with salt and pepper, then spoon into the tomato halves. Garnish with reserved mint leaves and serve.

Steps:
- In a bowl, mix tuna, celery, artichoke pieces, mayo, pine nuts, lemon juice, italian seasonings, hot pepper sauce, salt and pepper.
- Stuff each tomato with tuna salad and arrange tomatoes in a microwave safe dish.
- Preheat broiler.
- Microwave on high for 4 min or until filling is hot.
- Remove tomatoes from microwave and top each with shredded cheese, and slide under the broiler for 3 min or until cheese is melted and bubbling.
