Vegetarian Summer Rolls with 3 Dipping Sauces image

Vegetarian summer rolls with avocado, tofu & fresh veggies. Serve them with 3 dipping sauces - peanut sauce, hoisin & Vietnamese dipping sauce!

1 cup shredded carrots
½ large red bell pepper ( - julienned)
½ large yellow bell pepper ( - julienned)
6 cocktail cucumbers ( - julienned)
16 oz firm tofu ( - cut into ½ inch strips)
3 - 4 cups spring mix or shredded lettuce
1 cup shredded red cabbage
1 avocado ( - cut into ½ inch strips)
4 oz dried vermicelli rice noodles ( - cooked according to the directions)
1 cup fresh herbs ( - cilantro, basil, mint (use any combination))
rice paper wrappers ( - I used 10 inch wrappers (25 cm))
¼ cup vegan fish sauce ( - (See Note 1 for other vegan alternative); For non-vegetarians: substitute with regular fish sauce)
¼ cup sugar
⅓ cup water
2 Tablespoons lime juice ( - freshly squeezed, about half a lime)
2 teaspoons rice wine vinegar
1 clove garlic ( - finely diced)
1 small Thai chili pepper ( - finely diced)
1 Tablespoon shredded carrot ( - for garnish)
1 teaspoon chili garlic sauce ( - (optional))
½ cup hoisin sauce
4 teaspoons sugar
4 teaspoons water
4 teaspoons lime juice ( - freshly squeezed)
1 Tablespoon chopped peanuts ( - for garnish)
¼ cup creamy peanut butter ( - I used all natural unsweetened peanut butter)
¼ cup lite coconut milk ( - can substitute with water)
1 ½ Tablespoon hoisin sauce
1 ½ Tablespoon lime juice
1 teaspoon brown sugar
1 Tablespoon chopped peanuts ( - for garnish)
1 Tablespoon chili garlic sauce ( - (optional))

Steps:

  • For each sauce, set aside the garnish and mix together all the ingredients in a medium size bowl. Add the garnish right before serving. Makes 3/4 cup peanut sauce; makes 3/4 cup hoisin sauce; makes 1 cup of Vietnamese dipping sauce (nuoc cham).
  • Cut the block of tofu into 1/2 inch strips. Add a teaspoon of oil to a pan over medium high heat and fry the tofu strips until they are golden brown on both sides. About 4 - 5 minutes. Set this aside.
  • Add about a third inch of water to a large shallow dish to dip the rice paper wrappers in. Dip one sheet of rice paper wrapper in the water for two seconds and place it on a flat surface. (see Note 2)
  • Starting with the side closest to you, add the mix greens/lettuce and shredded red cabbage on top of the rice paper wrapper, leaving an inch of wrapper on the edge to grab ahold of later. This will provide a barrier between the vegetable filling and the delicate rice paper wrappers.
  • Next place the peppers, carrots, tofu, and avocado on top of the mixed greens. Finally add the vermicelli rice noodles and fresh herbs on top of everything. You should have a stack of the filling piled on top of each other.
  • (Optional) For presentation: if you prefer to see the colorful vegetables through the wrapper, lay them flat on the rice paper wrapper in the center. As you're rolling it up, you should be able see the vegetables through the rice paper.
  • Starting from the end closest to you, pick up the inch of wrapper left uncovered and roll it up a quarter of the way.
  • Continue rolling until all the filling is rolled into the rice paper wrapper.
  • Fold the left and right side of the wrapper towards the center and continue to roll it all the way up.
  • Place the summer roll on a plate and let it sit for 1 minute or until the wrapper is no longer tacky. The surface should still feel soft and pliable but it should not feel sticky since the excess water should be absorbed by now.
  • Cut each summer roll crosswise into about 2 inch pieces and arrange them on a plate. Serve with the peanut, hoisin, and Vietnamese dipping sauces.

Fresh, light and healthy Vietnamese salad rolls are packed with vermicelli noodles, shrimp, fresh vegetables and herbs and dipped in homemade peanut sauce.

9 large shrimp, peeled and deveined
1 cup thin rice vermicelli noodles
6 (8.5 inch) rice wrappers
1 cup carrots, shredded
1/3 cup cilantro, loosely chopped
3 tablespoons fresh basil, chopped
3 tablespoons fresh mint, chopped
2 tablespoons hoisin sauce (or black bean sauce)
1 tablespoon peanut butter
1 tablespoon water
1/2 tablespoon fresh lime juice
1/2 tablespoon honey (or granulated sugar)
1 tablespoon roasted peanuts, chopped

Steps:

  • Bring a pot of water to a boil over high heat and add shrimp. Cook for 5 minutes. Remove and run it under cold water to cool down. Once cool enough to handle, slice in half.
  • Prepare the vermicelli noodles: Bring a pot of water to a boil over high heat and add vermicelli noodles. Cook for 2 minutes until soft. Transfer the noodles to a bowl with a strainer to completely drain out any water.
  • Fill a large shallow bowl with warm water, about 1 to 2 inches high. Take one wrapper at a time and quickly dip it into the warm water for one second, or according to package directions. Shake off excess water. The wrapper will start to soften and feel a bit sticky. Transfer the wrapper onto a clean dry flat surface.
  • Place 2 tablespoons of vermicelli noodles in the center of the wrapper into a log shape, leaving 2 inches of space on each side. Place 3 pieces of shrimp, pink side down, on a row above the noodles. Add 2 tablespoons of shredded carrots in a row underneath. Place 1 tablespoon of cilantro, 1/2 tablespoon basil and 1/2 tablespoon mint on top of the shrimp.
  • From the bottom, roll the wrapper up tightly but gently so that you don't tear it. Roll it up halfway over top of the noodles. Then fold over the left and right sides inward. Then continue to tightly roll the wrapper to seal the mixture inside. If the wrapper doesn't feel soft and pliable, apply some water to your fingers and to the wrapper to help it soften.
  • Combine hoisin sauce, peanut butter, water, lime juice, and honey. Stir well with a spoon until smooth and uniform. Sprinkle some chopped roasted peanuts on top.

1/2 cup Lite Soy Sauce
1 tsp finely minced fresh Ginger
Rice Paper Wraps
Basil and Cilantro - optional (2 leaves of either one per roll)
2 Cucumbers - cut into matchsticks
2 small red Bell Pepper - cut into matchsticks
2 small yellow Bell Pepper - cut into matchsticks
2 small Orange Bell Pepper - cut into matchsticks
2 cup shredded Carrots ( I bought the shredded carrots to save on prep work.)
1/2 head red Cabbage - sliced very thinly

Steps:

  • Prepare a container with hot water for the rice paper. Place each wrap in the water for 30 seconds just to make it pliable and easy to work with. put the new wrapper in when you start wrapping each one and the process will go faster.)
  • Lay the wrap on a wooden cutting board
  • Add a little of each of the vegetables to the middle of the wrap and top with basil and cilantro leaves.
  • Fold the sides in first, then roll from the side nearest you to the other end. The rice paper will stick to itself. Continue making the rolls until the ingredients are done.

A nice light appetizer. Delicate rice wrappers are filled with noodles, shrimp, carrots, lettuce and basil. Cooked chicken or beef may be substituted for shrimp.

1 (8 ounce) package rice vermicelli
8 ounces cooked, peeled shrimp, cut in half lengthwise
8 rice wrappers (6.5 inch diameter)
1 carrot, julienned
1 cup shredded lettuce
¼ cup chopped fresh basil
½ cup hoisin sauce
water as needed

Steps:

  • Bring a medium saucepan of water to boil. Remove from heat. Place rice vermicelli in boiling water, remove from heat, and let soak 3 to 5 minutes, until soft. Drain, and rinse with cold water.
  • Fill a large bowl with hot water. Dip one rice wrapper in the hot water for 1 second to soften. Lay wrapper flat, and place desired amounts of noodles, shrimp, carrot, lettuce and basil in the center. Roll the edges of the wrapper slightly inward. Beginning at the bottom edge of wrapper, tightly wrap the ingredients. Repeat with remaining ingredients.
  • In a small bowl, mix the hoisin sauce with water until desired consistency has been attained. Heat the mixture for a few seconds in the microwave.
  • Serve the spring rolls with the warm dipping sauce.

  • Prepare your dipping sauce by mixing all ingredients together until the sugar is dissolved. Set aside.
  • Heat the oil in a pan and saute your veggies 3-6 minutes until wilted, but still firm. Add in the remaining seasonings, taste and add more of any seasoning as you see fit. Set aside as you prepare your wrappers.
  • Fill a 9" round cake pan (or any pan large enough to accommodate the wrapper) with hot tap water. Place the wrapper in the water, making sure the whole wrapper is submersed. After a minute (or more) the wrapper will be rubbery and pliable. Carefully lift it out of the water, letting the excess drip back in in the pan. Spread your wrapper out on your work surface. Now add the another wrapper to the water to soften while you work. As the water cools, it will take slightly longer, but it will soften!
  • On one side of the wrapper closest to you, put desired amount of filling down about 2 inches from the edge, spreading it out 5-6". Leave a little flap (closest to you) to fold over the filling. Fold the flap over the top tucking it around all the filling. Pull back a bit to secure all the fillings in. Roll once over, then fold the left and right sides into the middle to close the ends. Finish by rolling the remainder wrapper up. Serve fresh with the dipping sauce of your choice.

  • Dipping sauces: Mix your dipping sauce together first, let set so the flavors can mingle. It will taste much different after a few minutes. Taste for flavor before serving.
  • Fill a large bowl with warm water. Depending on the size of your sheets you can use a shallow pie dish or large bowl or pot.
  • Dip the rice paper in the warm water for just 2 – 3 seconds, it should be stiff, and will soften as you begin to work.
