LOTS O'VEGGIES SAUSAGE SPAGHETTI SAUCE
This Italian sausage and ground beef recipe is full of vegetables and Italian herbs -- the longer it cooks the better! Full of flavor, and makes a great base sauce for lasagna. It's critical to use fresh basil, other herbs may be dried. Do not use canned tomatoes which have any corn syrup in them. Home canned tomato equivalent is 3 quarts. If you want a spicier sauce add either crushed red pepper to taste or use hot Italian sausage.

Steps:
- In a medium skillet over medium heat, cook sausage and ground beef until brown. Drain, reserving 2 tablespoons drippings. Set aside.
- In a large stock pot or Dutch oven heat oil over medium heat. Cook onions in oil until translucent. Stir in green and red bell peppers, zucchini, mushrooms and carrots and cook until just tender. Add browned sausage and ground beef. Stir in basil, spinach, thyme, oregano, garlic, sugar and salt and pepper. Cook 2 to 5 minutes. Pour in tomatoes, stir well, reduce heat, cover and simmer 3 hours, stirring occasionally.

- In a 6-qt. stockpot, cook pasta according to package directions; drain and return to pot., Meanwhile, in a large skillet, cook and crumble sausage with mushrooms over medium-high heat until no longer pink, 5-7 minutes. Stir in tomatoes; bring to a boil. Stir in spinach until wilted., Add to pasta; heat through. Sprinkle with cheese; remove from heat. Let stand, covered, until cheese is melted.

- Heat oil in an extra-large skillet over medium-high heat. Add sausage; cook until browned, turning occasionally, about 5 minutes. Remove from the skillet, reserving drippings in skillet.
- Add onion, bell pepper, and garlic to the skillet; cook, stirring, over medium heat until softened, 5 minutes. Carefully add wine to skillet. Cook, scraping up any browned bits, for 1 minute. Add crushed tomatoes, fire-roasted tomatoes, Italian seasoning, sugar, salt, and red pepper. Return sausage to skillet. Bring to a boil. Reduce heat; simmer, covered, stirring occasionally, for 10 minutes. Uncover and cook until desired consistency, about 5 minutes.
- Meanwhile, bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
- Serve pasta topped with sauce and sprinkle with Parmesan cheese.

- In a large skillet, heat 1 tablespoon of olive oil and add sausage. Cook, occasionally stirring, until it's cooked through, drain the fat. Add another tablespoon of olive oil into the skillet with sausage, add chopped onion and garlic, half of the Cajun seasoning - cook, constantly stirring, on high heat until onion softens.
- Add chopped bell peppers, tomatoes, mushrooms, and the remaining half of Cajun seasoning to the skillet with sausage. Cook for about 2 minutes, constantly stirring, on medium-high heat to sear the vegetables nicely on stove-top.
- Add wine to the skillet, bring to boil, reduce to simmer and simmer, covered, occasionally stirring, for about 5-7 minutes. The liquid should reduce somewhat but not completely. Remove from heat. Salt to taste. Add more Cajun seasoning, if necessary.

- Preheat a large sauce pot over medium heat and begin to brown the sausage. Break up sausage with the back of a wooden spoon as it cooks and move it to the side of the pot.
- In a food processor, pulse all vegetables (except garlic) until they are about pea size or smaller.
- Add the veggies to the other side next to the sausage and saute them in the fat from the sausage, adding a bit of olive oil if needed. Season with salt and pepper.
- Cook until the sausage is brown and the veggies are sauteed. Pulse the garlic in the food processor until minced and add to the pot.
