VEGGIE PHILLY CHEESESTEAK
a vegetarian version of the popular 'Philly Cheesesteak' sandwich with portobello mushrooms instead of meat

Steps:
- Heat a large non stick pan over medium-low heat and add 1 tbsp butter. When the pan is heated, add the sliced onions and a pinch of salt.
- Cook the onions for about 20 minutes or until they start to brown then remove them from the pan.
- Increase the heat to medium and add the cooking oil. Add the sliced portobello mushrooms to the pan and cook for about 10 minutes, or until they have released their moisture and begun to brown.
- Add the tamari, and a splash of water if the pan is getting dry, then add the peppers and cooked onions to the pan. Saute for about 5 minutes, or until the peppers have become tender. Season well with sea salt and pepper.
- Heat your oven to 400℉
- Mix the crushed garlic into 1.5 tbsp butter and brush onto both sides of the sub roll. Bake in the oven for 5 mins or until the butter melts and the roll begins to toast.
- Remove the roll from the oven and top with the mushroom mixture then cover it with slices of the provolone cheese.
- Place the roll back in the oven and toast until the cheese melts.
- Remove from the oven and serve!
- Line each roll with provolone slices and top with the mushroom mixture.
- Serve

- Preheat oven to 375
- In a little bit of oil on medium-high heat, saute strips of onion until translucent and brown, about 5-10 minutes. Once the onions start to cook, add in your green peppers and cook for a little until green peppers start to become soft.
- Add in your vegan beef and all of the spices and mix until well combined. Saute until the vegan beef is browned and cooked.
- Place your sliced hoagie rolls and one slice of vegan cheese each in the oven and cook until the inside of the bread is crispy to the touch.
- Meanwhile, place 3-4 slices of vegan cheese on top of the meat and veggie mixture in the pan. Cover the pan and let cook for 2-4 minutes or until the vegan cheese is melted. Once the vegan cheese is melted, take your spatula and mix until the cheese is combined throughout the Philly cheesesteak filling.
- Remove the hoagie rolls from the oven once they are crispy. Carefully spoon half of the filling onto the two hoagie rolls. The filling will spill out but that is okay!
- Serve immediately with chips, french fries, or a side salad!

- To make the caramelized onions: In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Saute the sliced onions for 6-8 minutes, until lightly browned. Sprinkle with 1/2 teaspoon salt and lower the heat to medium-low. Stir the onions only every 9-10 minutes. They're ready when golden brown and sweet, which can take up to an hour.
- In a medium skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the mushrooms and peppers and saute until the mushrooms release most of their juices, about 7-8 minutes.
- Sprinkle mushrooms with soy sauce and oregano. To thicken the mushrooms and their juices, sprinkle with 1 tablespoon of flour, stirring to brown.
- Melt the provolone cheese by placing each slice over a section of mushrooms and peppers. Cover the pan with a lid to melt.
- Scoop the melted cheese and mushrooms onto a toasted sub roll. Top with caramelized onions and enjoy!

- Preheat toaster oven to 300 degrees F (150 degrees C).
- Heat 1 1/2 teaspoon butter and 1 1/2 teaspoon oil in a large nonstick skillet over medium-high heat until hot but not smoking, about 2 minutes. - Pepper and Onions: Heat 1 Tbsp of oil in a large saute pan over medium heat. Add pepper and onion, cooking until soft and fragrant, 5 to 7 minutes.
