4 boneless skinless chicken breasts (1-1/4 lb.)
1 pkg. (10 oz.) frozen chopped spinach, cooked, well drained
1/4 lb. (4 oz.) 2% Milk VELVEETA, cut up
2 tsp. fat-free milk

Steps:

  • Preheat broiler. Brush dressing evenly onto chicken breasts; place on broiler pan sprayed with cooking spray.
  • Broil 10 to 12 minutes or until chicken is cooked through, turning chicken over after 5 minutes. Meanwhile, mix VELVEETA Made With 2% Milk and milk in small microwavable bowl. Microwave on HIGH 1 to 2 minutes or until VELVEETA is melted, stirring after 1 minute.
  • Mix half of the VELVEETA mixture with spinach; place on serving plate. Top with chicken and remaining VELVEETA mixture.

1 cup CLASSICO Tomato and Basil Pasta Sauce
1 pkg. (6 oz.) fresh baby spinach leaves
1 pouch (4 oz.) VELVEETA Cheese Sauce Queso Blanco
1/4 cup KRAFT Grated Parmesan Cheese
1/2 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese

Steps:

  • Heat oven to 375°F.
  • Cook pasta in large saucepan as directed on package, omitting salt. Meanwhile, cook and stir chicken in large skillet sprayed with cooking spray 8 to 10 min. or until done. Stir in pasta sauce; cook and stir 2 to 3 min. or until heated through.
  • Drain pasta; return to saucepan. Add spinach, VELVEETA and Parmesan; mix lightly.

1 pound elbow macaroni
6 tablespoons salted butter
1 pound boneless, skinless chicken breast, cut into small cubes
Kosher salt and freshly ground black pepper
2 cloves garlic, minced
1/2 cup chicken stock
2 cups whole milk
1/2 cup heavy cream
1 cup shredded white Cheddar
1 cup shredded fontina cheese
2 teaspoons cornstarch
8 ounces white processed cheese, such as Velveeta or queso blanco, cubed
3 cups baby spinach
1 1/2 cups halved cherry tomatoes
1/4 cup chopped fresh parsley

Steps:

  • Cook the pasta according to the package instructions. Drain and set aside.
  • Heat half the butter in a braiser over medium heat. Add the chicken, then sprinkle with a pinch of salt and pepper. Cook until the chicken is browned on all sides and cooked through, about 4 minutes. Add the garlic, then stir and cook briefly. Add the chicken stock, scraping the bottom of the pan as it boils. Add the milk, cream and the remaining 3 tablespoons butter and cook, stirring, until it is warmed through and the sauce is simmering.
  • Toss together the Cheddar, fontina and cornstarch in a bowl.
  • Sprinkle the shredded cheese mixture into the pan, stirring constantly until the cheese is completely melted. Add the processed cheese cubes and allow them to melt. Bring to a simmer and allow the sauce to thicken, about 1 minute. Add the cooked macaroni, the spinach and tomatoes, then stir until well combined. Taste and adjust the seasonings. Garnish with the fresh parsley and serve.

All-purpose flour, for dredging
6 tablespoons (3/4 stick) unsalted butter
2 tablespoons shallots, sliced
1 tablespoon chopped garlic
1 1/2 cups dry white wine
1 cup whipping cream
1 tablespoon chopped fresh Italian parsley
2 (10-ounce) packages frozen cut-leaf spinach, thawed, drained

Steps:

  • Sprinkle the chicken with salt and pepper. Dredge the chicken in the flour to coat lightly. Shake off any excess flour. Melt 2 tablespoons of butter in a heavy large skillet over medium heat. Add the chicken and cook until brown, about 5 minutes per side. Transfer the chicken to a plate and tent with foil to keep it warm.
  • Melt 2 tablespoons of butter in the same skillet over medium heat. Add the shallots and garlic and saute until the shallots are translucent, stirring to scrape up any browned bits on the bottom of the skillet, about 1 minute. Add the wine. Increase the heat to medium-high and boil until the liquid is reduced by half, about 3 minutes. Add the cream and boil until the sauce reduces by half, stirring often, about 3 minutes. Stir in the parsley. Season the sauce, to taste, with salt and pepper. Add the chicken and any accumulated juices to the sauce, and turn the chicken to coat in the sauce.
  • Meanwhile, melt the remaining 2 tablespoons of butter in another large skillet over medium heat. Add the spinach and saute until heated through. Season the spinach, to taste, with salt and pepper. Arrange the spinach over a platter. Place the chicken atop the spinach. Pour the sauce over and serve.

1/2 cup grated Parmesan cheese
1/2 teaspoon dried basil

2 green onions, chopped
1 teaspoon minced garlic
1 tablespoon all-purpose flour
1/4 teaspoon salt
1/2 cup whole milk
1 tablespoon sherry or chicken broth
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
2 tablespoons diced pimientos
1/2 cup sour cream
1 cup shredded part-skim mozzarella cheese

Steps:

  • Flatten chicken to 1/2-in. thickness. In a large resealable plastic bag, combine the Parmesan cheese, basil and oregano. 6 (4 ounce) thin boneless, skinless chicken breasts, cut in half
1 teaspoon cantanzaro herbs (such as Savory Spice Shop®) or Italian seasoning
½ teaspoon salt
¼ teaspoon black pepper
3 tablespoons unsalted butter
½ cup diced onion
2 tablespoons chopped sun-dried tomatoes
2 cloves minced garlic
¼ cup dry white wine (such as Pinot Grigio)
1 cup shaved Parmesan cheese, plus more for garnish
¾ cup heavy cream
½ cup 1% milk
1 (8 ounce) package fresh spinach

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Cook fettuccine at a boil until tender yet firm to the bite, about 8 minutes.
  • Meanwhile, season both sides of the chicken breasts with herbs, salt, and pepper. Melt butter in a skillet over medium-high heat and cook chicken breasts until golden, 3 minutes per side. Remove chicken from skillet, set aside, and keep warm.
