Deer Jerky image

A zesty venison jerky that you can make at home in your oven. If you have a food dehydrator, you can dry the jerky in it by following the manufacturer's instructions. You can also reuse the marinade for additional batches.

1 pound boneless venison roast
4 tablespoons soy sauce
4 tablespoons Worcestershire sauce
2 tablespoons liquid smoke flavoring
1 tablespoon ketchup
¼ teaspoon pepper
¼ teaspoon garlic powder
¼ teaspoon onion salt
½ teaspoon salt

Steps:

  • Slice meat into long strips, 1 inch wide and 1/8 inch thick. In a large releasable plastic bag, combine soy sauce, Worcestershire sauce, liquid smoke, ketchup, pepper, garlic powder, onion salt and salt. Place meat in, and close bag. Refrigerate overnight. Knead occasionally, to evenly distribute marinade.
  • Preheat oven to 160 degrees F (70 degrees C). Place a pan on the bottom of oven to catch drips, or line with aluminum foil.
  • Place meat strips on a rack so that they do not touch each other, and dehydrate for 6 to 8 hours in the oven, or until desired consistency is achieved.

Number Of Ingredients 16

1/2 cup ketchup
1/2 cup brown sugar
1/2 cup apple cider vinegar
2 tablespoons Worcestershire sauce
2 teaspoons kosher salt
1 teaspoon garlic powder
1 teaspoon paprika
1 1/2 pounds top round, top sirloin or similar cut of beef, placed in the freezer for 30 minutes
1 cup soy sauce
1/2 cup brown sugar
2 tablespoons sriracha
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon ground ginger
Juice of 1 lime
1 1/2 pounds top round, top sirloin or similar cut of beef, placed in the freezer for 30 minutes

Steps:

  • For the BBQ jerky: Stir together the ketchup, brown sugar, vinegar, Worcestershire, salt, garlic powder and paprika in a bowl. Thinly slice the frozen beef against the grain. Coat the meat in the mixture. Marinate the meat, refrigerated, for 4 hours or overnight.
  • Preheat the oven to 200 degrees F. Line a baking sheet with foil and set a baking rack on top.
  • Lay the slices of meat flat on the baking rack in a single layer. Bake until the jerky is completely dried, 3 1/2 to 4 hours.
  • For the teriyaki jerky: Stir together the soy, sugar, sriracha, Worcestershire, garlic, ginger and lime juice in a resealable plastic bag. Thinly slice the frozen beef against the grain. Place the meat in the bag and marinate the meat, refrigerated, for 4 hours or overnight.
  • Preheat the oven to 200 degrees F. Line a baking sheet with foil and set a baking rack on top. Lay the slices of meat flat on the baking rack in a single layer. Bake until the jerky is completely dried, 3 1/2 to 4 hours.

This is the best jerky recipe I have found! You can use either ground venison or beef!

2 pounds lean ground venison or beef
2 ½ teaspoons salt
2 teaspoons monosodium glutamate (MSG)
1 teaspoon hot pepper sauce
2 teaspoons sugar-based curing mixture (such as Morton® Tender Quick®)
1 ½ teaspoons barbeque seasoning
2 teaspoons water
2 teaspoons hickory-flavored liquid smoke
2 teaspoons garlic powder
½ teaspoon pepper

Steps:

  • In a large bowl, combine ground venison, salt, MSG, hot sauce, curing mixture, barbeque seasoning, water, liquid smoke, garlic powder, and pepper; mix thoroughly. Cover, and refrigerate for 2 hours.
  • Line food dehydrator trays with plastic wrap. Pat meat mixture into a very thin layer on the trays. Place in dehydrator set according to manufacturers directions. Once the meat has firmed up, after about the first 2 hours, remove it from the plastic, cut into strips, and replace onto the racks. Continue until the meat is done drying, about 5 to 10 hours total depending on machine.
  • When finished, blot off any grease with a paper towel. Store in the refrigerator in a jar with a tight fitting lid.

I came across this recipe lately....I remember making this for my son all the time...everyone loved this homemade dried beef.

1 lb flank steak
1/2 cup soy sauce
1/2 cup honey
1/4 cup lemon juice
2 -3 cloves fresh garlic, crushed
1 teaspoon Worcestershire sauce
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Prepare a large baking sheet with a wire rack to fit on baking sheet.
  • Put the flank steak in the freezer for 30 mins, or until firm, but pliable.
  • Slice the steak very thinly across the grain, about 1/8-in thick; or ask your butcher to slice the meat at time of purchace.
  • In a small bowl, combine the soy sauce, honey, lemon juice, garlic, Worcestershire sauce, onion powder, salt and pepper; mix well.
  • Mix and coat the beef strips with the sauce mixture.
  • Refrigerate for 2 hours.
  • Preheat the oven to 180F.
  • Place the strips on a wire rack on a baking sheet.
  • Bake for 12 hours, or until meat is dried (it should bend, but not snap).
  • Store in an airtight container when cool.

  • Prep the Cuts. Use a sharp knife to cut chunks of venison about the size of your index finger. There isn't an exact science, but do keep the cuts under a half-inch thick.
  • Salt Soak. Place the venison cuts in salted water for 24 hours to draw out the blood. This step is easy to overlook, but it keeps the jerky tender.
  • Find the Cure. Buy a bag of commercial curing mix, available at sporting goods stores (it looks like regular salt). It's important the mix contains either sodium nitrite or sodium nitrate.
  • Making Magic. Remove the venison cuts from the salt soak. Place them in a sealable, plastic freezer bag and mix in the cure (including dry seasonings).
  • Head to the Oven. Preheat the oven to 200 degrees. Place the venison cuts on a pizza pan with holes in the bottom or on a wire rack over a cookie sheet.
  • Wait 5 Hours. Cook the venison cuts in the oven at 200 for five hours. Flip each piece at the 2.5-hour mark. Final Step: Eat Up. Have a bite after the jerky completely cools.
