ITALIAN ROMANESCO CAULIFLOWER SALAD



Italian Romanesco Cauliflower Salad image

This is a traditional salad from Naples, known as Insalata di Rinforzo, which is typically served at Christmas time. It's lovely and colorful as it uses cauliflower, lime green Romanesco and dark green broccoli and is jazzed up with olives and red pickled peppers. It is served with a lemon-based vinaigrette and sometimes anchovies and capers.

2 pounds broccoli, broken into florets
1 head cauliflower, broken into florets
1 head Romanesco cauliflower, broken into florets
2 lemons, juiced
6 ½ tablespoons extra-virgin olive oil
1 clove garlic, minced
1 teaspoon chopped fresh oregano
salt and ground black pepper to taste
10 green Italian olives, or more to taste
10 black Italian olives, or more to taste
2 papaccelle (pickled sweet peppers), cut into strips

Steps:

  • Bring a large pot of lightly salted water to a boil. Add broccoli and cook uncovered until just tender, about 1 1/2 minutes. Remove to a plate with a slotted spoon, reserving water, and let cool.
  • Stir cauliflower into the boiling water. Cook until just tender, about 3 minutes. Remove to a plate with a slotted spoon, reserving water, and let cool.
  • Stir Romanesco cauliflower into the boiling water. Cook until just tender, about 3 minutes. Drain and let cool.
  • Whisk lemon juice, olive oil, garlic, oregano, salt, and pepper together in a small bowl to make dressing.
  • Layer broccoli, cauliflower, and Romanesco cauliflower on a round serving plate. Decorate each layer with green and black olives and strips of papaccelle. Pour dressing on top.

Veronica Romanesco Salad With Bacon image

With romanesco being relatively new on the market, it's difficult to find recipes for it so I had to create one. If you cannot find romanesco at the grocers or farmers' market, use regular [[top quality]] broccoli, broccolini or broccoflower.

1 head romanesco, chopped into 1 1/2-inch chunks (about 1 pound)
3 slices bacon, crisply cooked
1/2 cup shallot, roasted and diced
1/2 cup fresh basil leaf, choppped
1/3 cup walnuts (hazelnuts=filberts) or 1/3 cup hazelnuts, roasted (hazelnuts=filberts)
3 tablespoons prunes, cut into bite size pieces (raisins, dried apricots or currants can be substituted)
1/3 cup olive oil
2 garlic cloves, roasted (for less pronounced garlic flavor use elephant garlic or roasted garlic)
2 tablespoons champagne vinegar
1/4 teaspoon salt
1/4 teaspoon white pepper
2 teaspoons fresh lemon juice

Steps:

  • Preheat oven to 400 degrees.
  • Wrap the whole, unpeeled shallots and unpeeled garlic cloves in aluminum foil. Roast the shallots and garlic in the oven at 400 degrees for about 15 minutes or until softened. Cool; dice onion, peel and mince garlic.
  • In the meantime, crisply cook the bacon on medium heat. Set aside to drain on paper towel and cool, then chop into bite-sized pieces.
  • Toast the nuts lightly and set aside to cool.
  • Blanch the romanesco in boiling water for 2-3 minutes but no longer. Immediately drain and rinse with cold water to stop the blanching process.
  • In a small non-reactive bowl combine the salad dressing ingredients and blend using an immersion blender. Adjust seasoning if necessary.
  • In a large salad bowl combine the blanched romanesco with the roasted shallots, bacon, basil leaves, roasted nuts, dried fruit of choice and salad dressing.
  • Toss to coat well and marinate for at least 2 hours but up to 6 hours.
  • Best eaten within 24 hours.

Roasted Potato Salad With Bacon image

Awesome recipe with the perfect pairing of tater and bacon with capers for piquancy. Delish! Easier to make than the sum of the parts suggests too. Nice. Like it that way.This recipe works great with quartered Yukon Gold potatoes so don't fret the insane price of fingerling potatoes (make plans to grow your own next year!). Be sure to chill this salad at least two hours (preferably overnight) & then bring to room temp to serve. From the Tribune's Food & Drink Weekly.

4 lbs potatoes (new or fingerling)
3/4 teaspoon garlic, chopped
3 tablespoons olive oil
1 teaspoon kosher salt
2 teaspoons black pepper, freshly ground
1 lb bacon, thick-cut
1 cup mayonnaise
3 tablespoons whole grain mustard (to taste)
1 tablespoon red wine vinegar (to taste)
1/2 red onion, trimmed and sliced lengthwise into 1/8 -inch slices
1/4 cup capers

Steps:

  • Heat the oven to 375°F.
  • Clean and halve fingerling or new potatoes lengthwise.
  • In a large bowl, toss the potatoes with the garlic, olive oil, 1 teaspoons salt and several grinds of pepper. Place the potatoes in a single layer on a parchment-lined baking sheet. Roast the potatoes until golden brown and tender, about 1 hour, tossing occasionally. Remove and cool.
  • While the potatoes are roasting, cut the bacon crosswise into one-fourth-inch pieces. Cook the bacon in a large sauté pan over medium heat until the fat is rendered and the bacon is crisp, about 15 minutes. Stir frequently, watching that the bacon does not stick to the bottom of the pan. Remove from heat and drain the bacon on a paper towel-lined plate, reserving the grease for another use.
  • In a medium bowl, whisk together the mayonnaise, mustard and red wine vinegar. Season with one-half teaspoons salt and several grinds of black pepper. Taste and adjust mustard, vinegar and seasoning if desired.
  • In a large bowl, combine the potatoes and bacon with the sliced onion. Gently stir in enough dressing to coat, then stir in the capers. Taste and adjust seasoning if desired.
  • Cover and refrigerate the salad for at least 2 hours to allow the flavors to develop. The salad will keep for 3 days, refrigerated. Allow the salad to warm slightly at room temperature before serving.
