- Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
- Mix flour, sugar, baking powder, and salt in a large bowl. Stir milk, oil, egg, and vanilla extract into flour mixture until batter is just blended. Gently fold blueberries into batter; pour into prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 60 to 70 minutes.

- Preheat oven to 200°C/390°F (180°C fan forced).
- Line loaf pan: Butter and line a loaf pan with parchment / baking paper. The picture pan is 21 x 11 x 7 cm (8.3 x 4.5 x 2.75") which makes a nice tall loaf.
- Coat blueberries: Toss blueberries in flour (less flour sticks if dry, more if frozen). This helps keep them suspended in the batter.
- Whisk Dry ingredients in a bowl.
- Add Wet ingredinets: Make a well in the Dry ingredients. Add Wet ingredients. Whisk until incorporated.
- Fold in blueberries: Fold in blueberries, including any flour remaining in the blueberry bowl.
- Bake: Pour into the prepared tin. Bake for 50 minutes, then cover with foil. Bake for a further 15 - 25 minutes, or until a skewer comes out clean. Check after 15 minutes, then if the skewer comes out with batter on it, bake a further 10 minutes.
- Cool: Rest for 5 minutes then turn onto a cooling rack and completely cool. Drizzle with Glaze. Wait until the glaze sets (about 20 minutes) before slicing to serve.

- Heat oven to 350°F. Grease bottom only of 9x5-inch loaf pan with shortening or cooking spray.
- In medium bowl, beat butter and granulated sugar with electric mixer on medium speed until smooth. Beat in eggs, vanilla, sour cream, lemon peel and juice. Stir in flour, baking soda and baking powder.

BLUEBERRY LOAF CAKE
Steps:
- Preheat oven to 180 degrees. Grease and flour a loaf pan and set aside.
- Sift the dry ingredients together. Set aside.
- In a large bowl, add the butter and sugar and beat till creamy.
- Add eggs one after the other and beat after each addition.
- Add the vanilla extract and briefly beat.
- Add 1/3 of the flour mixture and 1/3 cup of milk and beat on low speed till combined.
- Add again half the flour and the remaining milk and beat till combined.
- Add the blueberries into the remaining flour, sift with a spatula.
- Add into the beaten mixture and fold in till all the flour is moist and the batter is well mixed. Do not overfold.
- Pour the batter into the prepared pan and bake for 50 to 60 minutes, still the skewer comes out clean.
- Cool in pan for 10 minutes before flipping onto a rack. Cool completely before slicing and serving.

VERY BERRY ICED TEA
Steps:
- Bring 4 cups of water to a boil. Add the tea bags to a heatproof container and pour over the boiling water. Allow the tea to steep for 5 minutes, then remove the bags.
- Meanwhile, put the jelly in a small pot set over medium-high heat. Add the cranberry juice and stir to combine. Bring the berry mixture to a simmer and cook until the jelly is dissolved, about 4 minutes.
- Strain the berry mixture through a sieve into the tea container (discard any seeds/pulp). Add 6 cups ice cubes to the berry tea and stir to combine. Once cooled, keep refrigerated in an airtight container.
- To serve, place ice cubes into 8 tall glasses. Add raspberries to each glass. Pour the tea over the ice and berries.
LEMON BLUEBERRY YOGURT LOAF
Steps:
- Preheat the oven to 350 F degrees. Grease an 8.5x4.5x2.5 inch loaf pan with butter or cooking spray then flour it.
- In a large bowl whisk together the 1 1/2 cups of flour, baking powder and salt. Set aside. In another bowl, whisk together the yogurt, sugar, eggs, lemon zest, vanilla extract and vegetable oil.
- Add the wet ingredients to the dry ingredients and whisk until combined.
- In another small bowl mix together the blueberries with the 1 tbsp of flour. This will prevent the blueberries from sinking to the bottom of the loaf. Gently fold the blueberries into the batter.
- Pour the batter into the prepared loaf pan and bake for 50 minutes or until an inserted toothpick in the center of the loaf comes out clean. Each oven is different so baking time could vary greatly. Mine took about 1 hour and 10 minutes to be completely done.
- While the loaf is baking make the lemon syrup by cooking the lemon juice and 1 tbsp of sugar in a small saucepan just until the sugar dissolves and the mixture is clear. Set aside.
- Make the lemon glaze by whisking the icing sugar, lemon juice and vanilla extract. This glaze needs to be quite runny, so add milk as needed, about a tbsp at a time until the desired consistency is achieved.
- When the cake is done, remove it from the oven and allow it to cook in the loaf pan for about 10 minutes. Remove from loaf pan onto a baking rack, then place the baking rack over a baking sheet. Poke holes in the cake using a skewer or toothpick then pour the lemon syrup all over the cake. Allow it to cool.
- Once the cake is cooled, drizzle with the lemon glaze, cut into slices and serve.

- Preheat the oven to 350 degrees F. Grease and line a 8x4 (or 9x5) loaf pan with parchment paper.
- Using a whisk or electric mixer, cream together the butter, sugar, and lemon zest. Add the milk and eggs then mix until combined.
- Mix together the flour, baking powder, and salt together and then slowly add to the batter in batches, whisking in between, until well incorporated and the batter is smooth. Using a spatula, gently fold in most of the blueberries, reserving a small handful of blueberries.
- Pour the batter into the loaf pan and sprinkle the remaining blueberries on top. Bake for 45-60 minutes, until a wooden skewer comes out clean in the center.

- Put the dried fruit and sugar in a bowl and pour over the hot tea.
- Leave to soak overnight, or if you are in a hurry for two hours.
- Heat the oven to 150C/130C fan/gas 2
- Line a 900g/2lb loaf tin with baking parchment or use a loaf tin liner
- Add the flour, lemon zest and beaten egg and stir with a spoon till mixed through.
- Bake for 11/4 to 11/2 hrs or until it is well risen, firm to the touch and a skewer inserted in the centre comes out clean.

- Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line a 9 by 5 inch loaf pan with baking or parchment paper.
- Add 1 cup blueberries (set aside remaining 1/4 cup of blueberries) and cornflour to a small bowl and mix until blueberries are coated. Set aside.
- In a large mixing bowl, add olive oil, sugar, vanilla, eggs, lemon juice and zest. Whisk briefly to combine.
- Add flour, baking powder and yogurt. Gently mix with a wooden spoon until combined - but be careful not to over mix.
- Add roughly 1/2 of your batter to prepared tin. Then add the coated blueberries to the remaining batter and gently mix through, before adding mixture to prepared tin. Press extra blueberries on top.
- Bake loaf for approximately 45-55 minutes or until a skewer inserted in the middle comes out clean. If you find the top of your loaf is browning too much, simply add a piece of alfoil over the top towards the end of cooking.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
- Grate the zest from the lemon onto a small plate. Cut the lemon in half, and squeeze the juice from both halves. Make a topping by whisking together 1 teaspoon of the lemon zest, 1 tablespoon of the lemon juice, and the confectioners' sugar in a small bowl. Set aside.
- Whisk together the white sugar, melted butter, eggs, sour cream, the remaining lemon zest, and the remaining lemon juice in a large bowl until evenly blended. Stir in the milk; set aside.
- Whisk together the flour, baking powder, and salt in a separate large bowl. Remove 3 tablespoons of the flour mixture and set aside. Make a well in the center of the flour mixture; pour the milk mixture into the well and stir the batter just until combined.
- Fold the frozen blueberries into the reserved 3 tablespoons of the flour mixture, then fold the blueberries into the batter. Pour the batter into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 60 minutes.
- Remove from oven; immediately poke holes all over the top of the loaf with a toothpick, and pour the topping evenly over the loaf. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

- Preheat oven to 350F with rack in centre of the oven.
- Grease and line a 9x5 or 4x11 loaf pan with parchment paper that overhangs the sides by about 1 inch. Set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
- In another medium bowl, toss the fresh blueberries with 1 Tbsp of the flour mixture. Set aside.
- In a large bowl with an electric mixer or the bowl of a stand mixer fitted with a paddle attachment, beat together the butter and sugar at medium speed until light in colour and fluffy, about 3 minutes. Add the eggs, one at a time, beating well between each addition.
- *Take a moment at this point to scrape down the bowl well, especially the bottom of the bowl, where unincorporated butter sometimes hide. After scraping, beat for 30 seconds to incorporate any bits.
- Beat in the vanilla.
- With the mixer on low, mix in half of the flour mixture, then add all of the buttermilk, followed by the remaining flour mixture. Scrape down the sides of the bowl and mix in.
- Remove the mixer bowl from the mixer. Use a rubber spatula to gently fold in the blueberries and any excess flour in the bowl with the blueberries.
- Spoon the batter into the prepared loaf pan, mounding it slightly in the centre.
- Bake the loaf for 55-60 minutes, or until a skewer inserted into the middle of the cake comes out clean.
- Allow the loaf to cool in the pan for 10 minutes, then gently lift it out of the loaf pan by grabbing the edge of the parchment along the sides. Place onto a cooling rack. Allow to cool a few minutes more, then gently remove the parchment. Allow the loaf to cool completely.
- Serve garnished with some icing/confectioners' sugar, if desired.

- Preheat oven to 325 degrees. grease and line loaf pan with parchment paper; set aside.
- In a small bowl whisk together yogurt, zest, lemon juice (from 1 lemon), and vanilla, set aside. In a medium bowl, whisk together flour, baking powder, baking soda, and salt; set aside.
- Using a stand mixer or electric mixer, add butter and sugar to the bowl and cream together until combined; about 2 minutes at high speed.
- Add eggs, one at a time, combining well after each egg. Slowly add half of the flour mixture, and mix at a slow speed (or you will have a mess all over!)
- Add half of the yogurt mixture and mix until just combined.
- Add remaining flour mixture and combine; add remaining yogurt mixture and mix until just combined.
- Place the blueberries in a bag and add a couple of tablespoons of flour. Give it a toss so the blueberries are coated. This will stop them from sinking to the bottom during baking.
- Remove bowl from stand mixer, add in blueberries, and stir gently with a fork to combine.
- Pour batter into loaf pan. Cook for 50-60 minutes, testing with a toothpick starting at 50 minutes. When it comes out clean, bread is done.
- Allow to cool on a wire rack for 15 minutes.
- In a small bowl add confectioners sugar, and slowly add lemon juice while mixing with a fork. When the glaze is moist and thick, you have enough lemon juice, you don't want to add too much. 8. Drizzle over the top of the bread and cut into slices.

TEA LOAF

- Mix the sultanas, raisins and orange zest in a large mixing bowl. Pour over the tea and cover the bowl. Leave to sit for a minimum of 6 hours or ideally overnight to allow the dried fruit to soak up all the liquid.
- Heat the oven to 180C/160 fan/gas 4. Grease and line a 900g loaf tin. Add the eggs, flour and sugar to the soaked fruit, ensuring everything is well combined. Spoon the mixture into the tin and place in the centre of the oven for 1 hour 30 mins or until firm to the touch. Leave to cool in the tin for 15 mins before transferring to a wire rack.
- Cut into thick slices and serve with butter. To store, wrap tightly and keep in an airtight container for up to five days. The loaf will taste even better after a few days.

- Cake:.
- Sift flour, baking powder & salt together; set aside.
- Cream butter & gradually beat in sugar. Add egg & milk; beat until smooth.

- Heat the oven to 180C/160C Fan oven. Grease a 900g/2lb loaf tin then line the base and ends with grease proof paper.
- Put the butter, sugar, flour, eggs and vanilla extract into a large bowl and beat with an electric hand mixer for 5 minutes until pale and creamy - the mixture will be very thick.
- Spread one-quarter of the mix into the tin, then scatter over a third of the fruit.
- Carefully dot and spread another quarter of the cake mix on top, and scatter with another third of the fruit, repeat this step.
- Finally dot the rest of the cake mix over and gently spread with the back of a spoon.
- Bake for 1 hour until an inserted skewer comes out clean, then leave to cool.
- Mix the icing sugar and soft cheese to make the frosting then smooth onto the top of the cake. I normally start with 100g of soft cheese and add as much icing sugar as I think it needs.

All I have to say is..if you like blueberry muffins made with fresh blueberries ( of course from scratch too..lol), then you'll absolutely love, love this..this is so good, it's hard to stop eating it..lol..I altered this just a tad..cause hubby says there's no such thing as too many blueberries..lol...not cake, not...

Steps:
- 1. NOTE: pics are out of order..but you get the idea..lol.. Lightly grease 2 large loaf pans ( I use bakers joy, so grease and flour even if you don't use bakers joy)..
- 2. Preheat oven to 325°..
- 3. Combine first 3 ingredients..set aside.. Then in a seperate bowl, cream the butter, sugar and egs till light and fluffy.
- 4. Add flour mixture to creamed mixture in fourths, and the milk in 3rds... Beginning and ending with flour mixture...till just mixed and smooth..
- 5. With a rubber spatula, stir in the blueberries.SPOON OR SCOOP equal portions into your 2 prepared loaf pans..should be half in each , and smoothed out..
- 6. Put into preheated 325° oven and bake till just done..about 50 min..
- 7. I always check it at 40 min..but is usually done in 50 min..
- 8. Note : original recipe calls for 1 cup of blueberries..if you want very few blueberries, that's a good route to go.. IF like the rest of us, you can't get enough blueberries, and there's no such thing as too many blueberries..I use about2 cups or more( more actually),, use your judgement:) And enjoy..
- 9. I can't even wait to let it cool down to try the first slice:)?
- 10. And the old saying that everything's better with butter???? Not true in this case..lol..not to say that it's not good still , cause it is..but it's better with out all by itself ..in this case..lol

- Grease large 1½ pound loaf pan and preheat oven to 350°F.
- In a large mixing bowl or mixer, combine sugar, flour, baking powder and salt.
- Beat eggs, milk and oil.
- Gradually add dry mixture to wet until just moist.
- Fold in blueberries.
- Pour batter into pan an inch and a half below to compensate for rise.
- Optional: sprinkle sugar on top just before baking if you're not topping with glaze.
- Bake 50-60 minutes. Allow to cool on wire rack 10-15 minutes before removing from loaf pan.

CREAM CHEESE AND BLUEBERRY LOAF

Steps:
- Preheat oven to 350 degrees F. Grease 2 9x5 loaf pan with butter.
- In a small bowl toss blueberries with 2 Tbsp flour. Set aside.
- In a medium bowl combine the flour, baking powder and salt. This is the dry mixture.
- In a stand mixer bowl cream together butter, cream cheese, sugar and vanilla. Add eggs, one at a time, beating well after each addition.
- Slowly add the dry mixture into the creamed butter until everything is combined.
- Using a spatula fold in blueberries. At this stage using a spatula is better to keep the blueberry whole.
- Pour batter equally into the loaf pans and baked for approximately 60-70 minutes or until a toothpick inserted into the middle of the loaves comes out clean.
- Let rest on wire rack for 10 minutes. Invert the bread onto a wire rack so it will become completely cool before slicing into it.
