EASY PICKLED SHRIMP
Poaching the shrimp with Old Bay seasoning before pickling with cider vinegar, lemon juice, and aromatics is the key to this flavorful appetizer.

Steps:
- In a medium pot, bring 2 quarts water, Old Bay, bay leaf, and 1 tablespoon salt to a boil. Reduce heat; simmer 10 minutes. Add shrimp and cook until just pink and opaque, 30 seconds; drain.
- Stir together shrimp and remaining ingredients in a bowl. Transfer mixture to a container. Cover tightly; shake to distribute. Chill at least 5 hours and up to 2 days before serving.
PICKLED SHRIMP
Shrimp season is summer and fall in marshy coastal Georgia and South Carolina and in the Louisiana Gulf. If you can find shrimp from any of those places at those times of year, get enough for eating for several weeks, and make this marinated or pickled shrimp, which lasts that long. There is a version of a recipe for this everywhere, over eons, including in Sciappi's "The Works." His recipe is for a fish called gilthead, but the method and result are almost identical. Something very similar to this exact recipe was popular through the middle of last century as Pickled Shrimp, or Shrimp Sea Island. And the Alabama chef Frank Stitt has a recipe almost exactly like this one, in one of his fine cookbooks.

- Make court bouillon for shrimp: Put a few peppercorns, 4 bay leaves, 1/4 onion and/or leek, 1 clove garlic and a few sprigs fresh thyme or oregano in a pot of water. Bring to a boil, and let cook 15 minutes. Then add 1 teaspoon salt and shrimp, and cook for 2-3 minutes at below a boil. Remove shrimp with a strainer.
- In separate bowl, combine all other ingredients except oil and oregano. Let sit 5 minutes. Add shrimp. Mix well. Add oil, and mix. Add oregano, and mix. Serve at least 5 hours later and ideally the next day, cold or room temperature.

- Bring a large pot of lightly salted water to a boil. Add shrimp, and cook for about 5 minutes, until pink. Drain and set aside.

- Combine the lemon juice, olive oil, vinegar, seafood seasoning, dill, parsley, mustard, chile, garlic, lemon slices and onion in a large bowl, toss together and set aside.
- In a large pot of boiling water, add the kosher salt. Add the shrimp and cook just until they begin to turn pink and float to the top, about 2 minutes. Drain and immediately add them to the pickling liquid.
- Let stand for 5 to 10 minutes at room temperature and then serve. Or refrigerate until you are ready to serve them.

- In a large saucepan of boiling water cook shrimp with salt and crab-boil spices until just cooked through, 1 to 2 minutes. Drain shrimp and transfer to a large bowl.

- For pickling mixture:
- Stir rice vinegar, olive oil, lemon juice, lemon slices, onion slices, garlic cloves, bay leaves, celery seeds, mustard seeds, coarse kosher salt, and black pepper in large bowl until salt dissolves. DO AHEAD: Can be made 1 day ahead. Cover and chill.
- For boiling mixture:
- Place 8 cups water in large pot. Add coarse salt, bay leaves, thyme sprigs, garlic, paprika, mustard seeds, allspice, celery seeds, cardamom pods, and cinnamon stick. Bring to boil over high heat. Boil 5 minutes. Add shrimp; stir to separate. Boil just until shells turn pink, about 2 minutes. Using large skimmer, transfer shrimp to colander to drain.
- Line rimmed baking sheet with layer of ice cubes. Scatter shrimp on ice to cool quickly, about 5 minutes. Peel and devein shrimp, leaving tails intact. Add peeled shrimp to pickling mixture; stir to blend. Cover and refrigerate at least 3 hours and up to 6 hours.
- Using slotted spoon, lift shrimp from pickling mixture. Arrange on platter. Serve with crusty bread.
- What to drink:
- A special meal like this deserves a bubbly beginning. With the shrimp, pour a crisp Champagne. We like the Franck Bonville NV Brut Sélection (France, $30), which is fruity with citrus and mineral notes.
VINEGAR PICKLED SHRIMP
got this from my close friend and she told me to post it here so we can both find it easily! Super yummy and easy. You can use any amount of shrimp up to 5 lb, i usually use 3. I don't reduce the rest of the ingredients though. I also use peeled and deveined, but you can use shell on if you prefer that. You can also use frozen or thaw, just adjust the cooking time.
