ORANGE WAFFLES WITH MAPLE-ORANGE SYRUP

Steps:
- In 1-quart saucepan, heat all syrup ingredients just until hot. Keep warm while making waffles.
- Heat waffle iron. (Waffle irons without a nonstick coating may need to be brushed with vegetable oil or sprayed with cooking spray.) In large bowl, stir all waffle ingredients with wire whisk or fork until blended.
- For each waffle, pour batter onto center of hot waffle iron. (Check manufacturer's directions for recommended amount of batter.) Close lid of waffle iron. Bake 3 to 5 minutes or until steaming stops. Carefully remove waffle. Serve waffles with syrup.

- TOAST the waffles as directed. Place 2 waffles on each of 6 plates. Top each waffle with 1 tablespoon of the orange syrup.
SWEET POTATO WAFFLES WITH CINNAMON MAPLE SYRUP
Fluffy sweet waffles that taste like fall on a plate!

Steps:
- Combine sweet potatoes, milk, butter, brown sugar, and vanilla in a food processor; pulse until well combined and smooth.
- Mix flour, baking powder, and salt together in a large bowl. Stir in sweet potato mixture.
- Preheat and grease a waffle maker.
- Beat egg whites in a stand mixer on high speed until stiff peaks form. Fold into the waffle batter, 2 cups at a time, until well incorporated.
- Scoop 1 cup batter onto the preheated waffle maker. Close the lid and cook until slightly golden and crispy, about 5 minutes. Remove to a plate and repeat to make remaining waffles.
- While the waffles are cooking, heat maple syrup in a pot over low heat until warm. Stir in cinnamon. Serve with waffles.

CHERRY CHIP WAFFLES WITH CHERRY SYRUP
While on a recent trip to Door County, Wisconsin, for a family reunion, I created this yummy recipe using some freshly picked cherries. It was a hit with all ages and everyone was asking for more. -Heather Karow, Burnett, Wisconsin

- Preheat waffle maker. In a small saucepan, cook and stir sugar and 1/2 cup water over medium heat until sugar is dissolved. Add cherries; cook and stir until cherries are tender, 3-5 minutes. Mix cornstarch and remaining 2 tablespoons water until smooth; stir into pan. Bring to a boil; cook and stir until thickened, 1-2 minutes. Remove and keep warm., In a large bowl, whisk flour, baking powder, cinnamon and baking soda. In another bowl, whisk buttermilk, eggs, oil and extract until blended. Add to dry ingredients; stir just until moistened. Stir in cherries and chocolate chips. Bake waffles according to manufacturer's directions until golden brown. Serve with syrup and, if desired, additional chocolate chips., Freeze option: Cool waffles on wire racks. Freeze between layers of waxed paper in an airtight container. Freeze cherry syrup in a freezer container. To use, partially thaw cherry syrup in refrigerator overnight. Heat through in a saucepan, stirring occasionally. Reheat waffles in a toaster on medium setting. Or, microwave each waffle on high until heated through, 30-60 seconds.

- Preheat waffle maker. Mix softened butter and orange zest; stir in walnuts., Whisk together first six waffle ingredients. In another bowl, whisk together eggs, milk, pumpkin and melted butter; add to dry ingredients. Stir just until moistened., Cook waffles according to manufacturer's directions until golden brown. Serve with butter mixture and syrup.
