I used to have the luxury of time, which allowed me to cook from scratch. But after a husband and child, I'm sure glad I saved my "convenience" recipes, like this this super easy pasta dinner. -Ramona Rasas-Satinskas, Hockessin, Delaware

4 cups uncooked wagon wheel pasta
1 pound lean ground beef (90% lean)
2 cans (10-3/4 ounces each) condensed tomato soup, undiluted
1 cup medium salsa
1 jar (4-1/2 ounces) sliced mushrooms, drained
1 teaspoon dried oregano
1/2 cup sour cream
1/3 cup shredded Monterey Jack cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the soup, salsa, mushrooms and oregano. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Stir in sour cream; heat through., Drain pasta; serve with sauce mixture. Sprinkle with cheese.

1 envelope spaghetti sauce mix
1/8 teaspoon pepper
4 ounces sliced Colby cheese, cut into strips

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. , Stir in the water, soup, corn, spaghetti sauce mix and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until heated through. , Drain pasta; stir into beef mixture. Top with cheese; cook and stir for 2 minutes or until cheese is melted.

1 1/2 cups frozen chopped onions
2 garlic cloves, chopped
1 (14 ounce) jar spaghetti sauce
1 (14 1/2 ounce) can diced tomatoes
3/4 cup water
1/2 lb wagon wheel macaroni
1 cup shredded mozzarella cheese
1/2 cup shredded parmesan cheese

Steps:

  • In large nonstick skillet over medium-high heat, add beef, onions and garlic. Cook, breaking up with sppon, until no longer pink, about 5 minutes. Pour off drippings.
  • Stir in spaghetti sauce, diced tomatoes, pasta and 3/4 cup of water. Spread mixture level; bring to simmer. Cook, uncovered, until pasta is just tender, about 14 minutes.
  • Sprinkle on mozzarella, then parmesan; cover and let stand until cheese is melted, about 5 minutes. Serve immediately.

1 lb ground beef or 1 lb ground turkey
1/2 cup chopped onion
1 package taco seasoning mix
1 1/2 cups water
1 1/2 cups thinly sliced zucchini
1 can diced tomato
1 1/2 cups uncooked instant rice
1 cup shredded cheddar cheese

Steps:

  • In a large skillet, brown ground beef and onion, then drain.
  • Stir in remaining ingredients except rice and cheese, bring to a boil.
  • Stir in rice.
  • Reduce heat to low and cover and simmer 5-7 minutes or until liquid is absorbed, stirring occasionally.
  • Remove from heat.
  • Fluff mixture with fork, sprinkle with cheese.
  • Cover and let stand 3 minutes or until cheese is melted.
  • Serve and enjoy!

1 package (1 oz) Old El Paso™ taco seasoning mix
2 1/4 cups water
1 1/2 cups uncooked wagon wheel pasta (5 1/2 oz)
1 1/2 cups frozen corn
1 can (15 oz) Progresso™ kidney beans or pinto beans, drained, rinsed
1 medium tomato, chopped (3/4 cup)
1/2 cup sour cream
1 cup shredded Cheddar cheese (4 oz)
1 tablespoon chopped fresh chives

Steps:

  • In 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until brown; drain.
  • Stir seasoning mix, water, uncooked pasta, corn, beans and tomato into beef. Heat to boiling; stir. Reduce heat to medium-low. Cover; cook 10 to 15 minutes, stirring occasionally, until pasta is desired doneness and most of the liquid has been absorbed.
  • Stir in sour cream. Remove from heat. Sprinkle with cheese and chives. Cover; let stand 2 to 3 minutes or until cheese is melted.

1 tablespoon dried, minced onion
1/2 cup milk
1 1/2 pounds ground beef
1 egg, beaten
1/2 cup quick-cooking oats, uncooked
2 teaspoons salt
1/4 teaspoon pepper
browning and seasoning sauce to taste
1 cup spaghetti sauce with mushrooms
1 cup kidney beans

Steps:

  • Soak onion in milk for 5 minutes mix in beef, egg, oats, salt and pepper. Mound in a 12" skillet score into 5 or 6 wedges. Brush top lightly with browning sauce set aside. 1/2 pound wagon-wheel (or any short) pasta
1 10-ounce box frozen lima beans
1 tablespoon olive oil
1 large onion, sliced thinly
2 tablespoons crème fraîche (or sour cream)
1 tablespoon finely chopped fresh thyme (optional)
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
4 ounces creamy aged goat cheese, cut into small chunks

Steps:

  • 1. Bring a large pot of salted water to a boil, then add the pasta.
  • 2. After 5 minutes, add the lima beans.
  • 3. Meanwhile, heat the olive oil in a skillet over medium heat. Add the onion and cook until browned, about 7 minutes.
  • 4. When the pasta is ready, drain it with the beans (reserving 1/2 cup of the liquid), then return the pasta and beans to the pot along with the onion, crème fraîche, thyme (if using), salt, pepper, goat cheese, and the reserved water. Toss together and serve.
