WALLA-WALLA ONION CASSEROLE

Here in Washington state we are lucky to get Walla-Walla onions for a short time and this make a nice busy day casserole. I'm sure you could use any sweet onion and get the same taste. We serve it with boiled Kielbasa and a simple salad.

Ingredients

3 cups chopped onions
1/4 cup butter
1 tablespoon flour
1 cup chicken broth
1 (5 1/2 ounce) can evaporated milk
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup grated cheese
1 cup cracker crumb

Steps:

Boil onion chunks for 15 - 20 minutes; drain and rinse well.
Melt butter in saucepan on med.
Stir in flour, broth and milk, stirring until thickened.
Add onions, salt and pepper.
Place onion mixture in a 1-1/2 quart casserole dish,.
top with cheese and cracker crumbs.
Bake at 350°F for 40 minutes.
Serves 6.

A nice side dish for roast beef or ham. Use Walla Walla Sweets or Vidalia's for this. Regular yellow onions aren't sweet enough.

Ingredients

1/4 cup unsalted butter
3 medium walla walla onions (or Vidalia's)
2 cups swiss cheese, grated and divided
1 cup saltine, crushed and divided
2 tablespoons unsalted butter
2 eggs
3/4 cup half-and-half
1 teaspoon salt
1/8 teaspoon fresh ground black pepper

Steps:

Peel and cut the onions in half and then quarter the halves. Slice the quarters in food processor fitted with slicing disc.
Preheat oven to 350 degrees.
Melt 1/4 cup butter in a large skillet and saute onions over medium heat until tender.
Place half the onion mixture into a 1 1/2-quart oven-proof casserole.
Sprinkle 1 cup of Swiss cheese and 1/2 cup cracker crumbs over onions. Repeat layers of onions and cheese.
Beat eggs with the half-and-half, salt and pepper. Pour evenly over layered contents of casserole.
Melt 2 tablespoons butter in skillet and stir in remaining cracker crumbs. Lightly brown over medium heat. Sprinkle browned crumbs over casserole.
Bake for 25 minutes.

1 12oz egg noodles, cooked
1/2 c onion, chopped
2 c shredded cheese (save 1 cup of cheese for top)
1 c frozen peas (thawed)
1 1/2 walleye filets, cooked & flaked
2 (10.75 oz) cream of mushroom soup, condensed
1 small can mushrooms, sliced
1 1/2 c potato chips, crushed

Steps:

Preheat oven 425 degrees. Cook noodles and drain. In large bowl mix all ingredients, except 1cup cheese and crushed potato chips. Spread mixture evenly on bottom of 9 x 13 baking dish. Sprinkle on top of casserole, potato chips and 1 cup of cheese. Bake 15 to 20 minutes until cheese is bubbling.
