DRIVE-IN WALNUT BURGER
Steps:
- Set up grill for direct cooking over high heat. Oil grate when ready to start cooking.
- In a food processor, combine walnuts, garbanzo beans, bread crumbs, grill seasoning, paprika, pepper flakes, oil and vinegar and pulse until coarsely ground.
- In a small bowl whisk egg, add to food processor and pulse for 10 seconds, just enough to incorporate egg. Divide into 4 equal-size parts; roll into balls, and flatten with the palm of your hand into 3/4-inch-thick patties.
- Place burgers on oiled grill. Cook 4 minutes per side.
- Serve hot on toasted buns with lettuce, tomato, avocado and honey mustard.

Steps:
- Grind walnuts in blender or food processor, then mix with the rest of the burger mixture ingredients: oats, breadcrumbs, eggs, milk, onion, garlic, sage, and salt/pepper. Place the mixture in the refrigerator for about an hour to let the flavors come together and thicken slightly.
- Place a skillet over medium heat and add in just enough oil to make a thin layer. Form the patties, then lightly fry for 2-3 minutes per side until golden brown. Once patties are brown, add the vegetable broth to cover the patties, then bring to a boil. Reduce heat to low and simmer, covered, for 20 minutes.
- I love these most with fresh tomato slices, lettuce, pickled and spicy mustard!

Steps:
- Soak lentils overnight in enough water to cover.
- Cook lentils in boiling water until tender; drain.
- Finely dice the mushrooms, green pepper, celery, carrots, garlic, onion, and walnuts.
- Saute the vegetables and walnuts in margarine. Add salt, black pepper, chili powder, and mustard and stir well.
- In a bowl, mix sauted vegetables, lentils, and rolled oats. Mash together moderately.
- Add tomato paste, eggs, and Worcestershire and mix well.
- Form into 5 large flat patties.
- Broil until browned and crispy, about 6-8 minutes on each side.
- Top each patty with a slice of cheddar and return to the broiler until cheese is melted.

Steps:
- Combine walnuts, breadcrumbs, garlic, cumin, corander, pepper flakes, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper in a food processor.
- Process until finely ground.
- Add the lentils and 1 Tablespoon oil; pluse until coarsely chopped.
- Some of the lentils should remain whole.
- In a large bowl, whisk egg.
- Add lentil mixture and stir well.
- Divide the lentil mixture into 4 equal size parts, and roll into balls.
- Flatten them into 3/4 inch patties.
- Heat remaining 3 tablespoons oil in a large skillet.
- Add burgers and cook over medium low heat until crisp and browned, turning gently after 8 to 10 minutes.
- Cook another 8-10 minutes.
- Serve on buns as a sandwich, adding your favorite garnishes: tomatoes, pickles, lettuce, etc.
- Or, serve as a main dish with your favorite sauce.

- Preheat oven to 350°. Line a baking sheet with parchment paper or a silicone baking mat, set aside.
- In the basin of a food processor, combine 2 cups of the lentils, the walnuts, onion, garlic, salt, black pepper, worcestershire sauce, and mushrooms. Pulse until the mixture forms a smooth, thick paste—scraping the sides as necessary. Don't have a food processor? Check the recipe notes for an alternative method. Transfer the mixture to a large mixing bowl.
- Add in the remaining lentils, the eggs and 1 cup of the breadcrumbs, mix well. Continue adding breadcrumbs, 1/4 cup at a time, until the mixture can easily be formed into patties.

- Load up your food processor with the walnuts, chopped onion, garlic, and mushrooms. Pulse until you have a coarsely but evenly chopped mixture.
- Heat a saute pan over medium-high heat and add a teaspoon of oil. Transfer the mushroom walnut mixture to the pan, and fry, while stirring, for 7-9 minutes. While that’s cooking, grind the black beans in the food processor until they are coarsely chopped.
- Remove the pan from the heat and allow the mixture to cool for several minutes before stirring in the bread crumbs, the chopped black beans, the Worcestershire sauce and the egg. Mix well to combine, and chill the burger mixture for 20 minutes to an hour.
