Creamy Brown Rice Pudding image

This version of rice pudding uses brown rice, cinnamon, and almond extract to make a slightly nutty comfort dessert. My mother adds raisins during the last 15 minutes; she calls this 'Speckled Pup,' but I prefer my rice pudding without raisins.

4 cups water
2 cups uncooked brown rice
¾ teaspoon salt
2 cups milk
1 (12 fluid ounce) can evaporated milk
½ teaspoon almond extract
1 cup sugar
1 (3 inch) piece cinnamon stick

Steps:

  • Bring the water and brown rice to a boil in a saucepan. Add the salt, reduce the heat to low, cover, and simmer until the rice is tender and the liquid has been absorbed, about 50 minutes.
  • Stir the milk, evaporated milk, almond extract, and sugar into the rice; add the cinnamon stick. Simmer uncovered, stirring frequently, until the dish is of pudding consistency, about 70 minutes more.

1/2 cup maple syrup or 1/2 cup honey
1 -2 cup dark raisin (optional)

  • In medium saucepan, combine rice, milk, syrup [& raisins, if including them], & bring to boil.
  • Reduce heat & simmer 20 minutes, stirring frequently.

1 ¾ cups cooked brown rice
1 ¼ cups milk
½ cup white sugar
¼ teaspoon salt
1 cup milk
1 egg, beaten
¼ teaspoon ground cinnamon
⅔ cup golden raisins
½ tablespoon butter
½ teaspoon vanilla extract
¼ teaspoon ground nutmeg

Steps:

  • Stir brown rice, 1 1/4 cup milk, sugar, and salt together in a saucepan over medium heat until thick and creamy, 15 to 20 minutes. Lower heat to medium-low.
  • Stir 1 cup milk, egg, cinnamon, and raisins into rice mixture, stirring constantly, until desired thickness, 3 to 5 minutes.
  • Remove from heat and stir butter and vanilla extract into mixture.
  • Pour pudding into serving dish and garnish with nutmeg. Allow to cool to room temperature before serving, about 20 minutes.

Steps:

  • Gather the ingredients. Preheat the oven to 350 F (180 C, Gas 4). Butter a shallow 1 1/2- to 2-quart baking dish, or spray it with nonstick cooking spray.

3/4 cup short-grain brown rice
1/4 teaspoon fine salt
1/2 cup sugar
Serving suggestion: Brown sugar, sliced bananas, and Vanilla ice cream

Steps:

  • Put the coconut milk, milk, rice, salt and sugar in a small saucepan and bring to a boil over medium-high heat. Reduce the heat so the liquid simmers very gently. Cook uncovered, stirring occasionally, until rice is tender but chewy and absorbs most of the liquid, about 1 1/2 hours.
  • Remove the pudding from the heat and transfer to a bowl, or divide among 4 to 6 individual bowls. Press plastic wrap directly on the surface of the pudding and cool in the refrigerator, about 1 hour.

1 tablespoon fresh lemon juice
1 large egg
1/2 teaspoon vanilla
1 tablespoon chopped toasted walnuts

Steps:

  • In a heavy saucepan, simmer milk, rice, sugar, salt and 1/2 cup half-and-half, covered, until rice is tender and most liquid is absorbed, about 30 minutes.
  • While rice is cooking, in a small saucepan simmer jelly, water, cranberries or raisins, and lemon juice, covered, stirring occasionally, until jelly melts and sauce thickens slightly. Keep sauce warm.
  • In a measuring cup, beat together with a fork egg, vanilla and remaining 1/4 cup half-and-half.
  • Remove rice from heat and stir in egg mixture. Cook rice pudding over low heat, stirring constantly, until thick and creamy, about 5 minutes.
  • Stir walnuts into sauce and serve rice pudding with sauce.
