8 cups all-purpose flour
2 cups granulated sugar
2 cups dry buttermilk
1/2 cup baking powder
2 teaspoons kosher salt
1 teaspoon vanilla extract
2 tablespoons salted butter, plus more for serving
Pancake syrup, warmed, for topping

Steps:

For the pancake mix: Whisk together the flour, sugar, dry buttermilk, baking powder and salt in a large bowl. Divide the mix into 8 quart-sized wide mason jars, about 1 1/2 cups of dry pancake mix per jar. Seal and store until ready to use.
For finishing and serving: Add 3/4 cup water and 1 teaspoon vanilla extract to a mason jar of pancake mix and shake until completely incorporated.
Warm a griddle over medium heat and grease with the butter. Drop in the batter with a 1/4-cup measure and fry the pancakes until golden brown and cooked through, 2 to 3 minutes per side. Serve with softened butter and warm syrup.

8 tablespoons unsalted butter, melted
2 large eggs
2 1/2 cups milk
1 tablespoon vanilla extract
2 3/4 cups all-purpose flour
2 tablespoons baking powder
1/4 cup sugar
1/2 teaspoon kosher salt
1 cup chocolate chips
1 heaping cup blueberries
1 cup thickly sliced strawberries
Maple syrup, warm, for serving

Steps:

Preheat the oven to 425 degrees F.
Use 2 tablespoons of the melted butter to generously grease the bottom and sides of an 18-by-13-inch half-sheet pan.
Into a blender, add the eggs, milk and vanilla. Next add the flour, baking powder, sugar, salt and 4 tablespoons of the melted butter. Blend until just combined, about 30 seconds.
Pour the mixture into the prepared pan. Imagine the sheet pan in thirds, then sprinkle the chocolate chips in the first third, the blueberries in the second and the strawberries in the third, making 3 sections or stripes. Bake until golden brown and cooked through, about 20 minutes. Remove from the oven and brush with the remaining 2 tablespoons of melted butter.
To serve, cut a square of the chosen flavor of pancake and top with some warm maple syrup.

Steps:

Mix with wire whip until batter is uniform. Pour onto 400F griddle and cook about 1 minute on each side, turning when bubbles form on top.
Note: Different brands of baking powder may give different batter thicknesses. If needed, add more or less milk to get the desired pancake thickness.
Variation: For a buttermilk pancake, substitute 1¼ cup + 2 tbsp buttermilk for the milk. As above, use more or less buttermilk to get the desired pancake thickness.
