Pretty much an amazing summer drink. All the perfection of a great gin and tonic, but with a little twist. Plus, it looks pretty! I like this drink sitting in the backyard while grilling anything! I think it also makes a good winter drink when you need a quick 'get-away,' as long as you can find the watermelon!

Ingredients

¼ lime, juiced
¼ cup chopped seedless watermelon
½ cup ice, or as needed
2 tablespoons gin, or to taste
2 cups tonic water

Steps:

Squeeze lime into cocktail glass and drop lime wedge into the juice; add watermelon and enough ice to fill glass to top. Pour gin and tonic water over the watermelon and ice; stir.

Ingredients

1 cup water
1 cup sugar
small bunch of basil
1 small watermelon
1/2 cup gin
over ice

Steps:

Put 1 cup water, 1 cup sugar and a small bunch of basil in a small saucepan. Boil until sugar dissolves, discard the basil and chill. Peel 1 small watermelon (3 pounds), and cut the flesh into large chunks. Purée them in a blender until smooth. Pour the purée through a fine-mesh strainer, and discard the solids. Combine the juice with the chilled basil syrup and about 1/2 cup gin. Serve over ice.

2 cups cubed seedless watermelon
8 ounces* gin
2 ounces lime juice
1 tablespoon simple syrup or maple syrup
1 cup ice

Steps:

Chop the watermelon. Add all ingredients to a blender and blend until smooth. Pour into 6 glasses: the foam will rise to the top. Garnish with a lime wedge if desired.

2large limes
100g watermelon
2 tbsp gin
tonic water

Steps:

Cut the limes into 16 pieces. Squeeze 2 pieces of lime into each of the 8 glasses, then drop in the squeezed flesh. Chop the watermelon and divide among the glasses, and throw in some ice cubes. Pour gin over each and top up with chilled tonic water.

Recipe from Eating Well magazine and it is simply divine! So summery and fruity, yet not overly sweet. You can definitely make this non-alcoholic by simply omitting the gin. They also recommend this pretty pink cocktail to be served at Bridal Showers.

4 cups diced watermelon
6 ounces gin, divided
8 tablespoons lime juice, divided
1 1/3 cups ginger ale, divided (we use diet with great results)
4 lime wedges, for garnish

Steps:

Puree the watermelon. Strain (I do not strain, I simply use the puree); divide the juice among 4 TALL ice-filled glasses.
Top each glass with 1 1/2 ounces gin, 2 tablespoons lime juice and 1/3 cup ginger ale (I use a little more soda).
Garnish with the lime wedges.
NOTE: I mix mine up to take to the pool by combining the puree, gin and lime juice in a container and then just take cans of soda. I find that this amount makes 5 LARGE drinks.
