This easy margarita recipe is like vacation in a glass. A bit of the chile-lime seasoning Tajín on the rim of your glass contrasts with the sweet orange and agave.

4 ice cubes, plus more for serving
1 ounce lime juice, plus lime wedge for garnish
1 ounce mezcal (see Tip) or tequila
½ ounce orange liqueur, such as Grand Marnier
¼ ounce agave nectar
⅛ teaspoon chile-lime seasoning, such as Tajín, plus more for the rim

Steps:

  • Combine ice, lime juice, mezcal (or tequila), orange liqueur, agave and chile-lime seasoning in a cocktail shaker or jar with a tight-fitting lid. Shake for 10 seconds.
  • Rub lime wedge around the rim of a low-ball glass and dip in chile-lime seasoning, if desired. Fill the glass with ice and strain the cocktail into it.

Steps:

  • Place watermelon in a blender; blend until smooth. Pour through a fine mesh strainer to remove seeds and pulp.
  • Pour watermelon juice into ice cube tray; place in freezer until frozen, about 3 hours.
  • Place 4 cups of frozen watermelon cubes, tequila, lime juice, and sugar into a blender; pulse until smooth.

Mixing cocktails may seem intimidating, but it's actually quite intuitive once you understand how to balance the alcohol, sweetness and acidity. In "3-Ingredient Cocktails" (Ten Speed Press, 2017), Robert Simonson presents the formula for a perfect margarita: 1½ ounces tequila, 1 ounce Cointreau and 3/4 ounce lime juice, shaken and served. Even easier to memorize, this version uses 6 ounces fresh watermelon juice - a sweet but subtle nod to summer - and 2 ounces each tequila, Cointreau and lime juice. Be sure to taste and add more watermelon juice if your margarita is too boozy, and extra lime juice or even a pinch of salt if it's too sweet.

1 teaspoon Tajín or 1/2 teaspoon ground cayenne (optional)
Ice, as needed
6 ounces fresh watermelon juice (from about 1 1/2 cups chopped seedless watermelon, blended and strained)
2 ounces tequila, preferably blanco
2 ounces Cointreau (optional)
2 ounces fresh lime juice (from 1 to 2 large limes), rinds reserved
2 to 3 thinly sliced jalapeño rounds (optional)

Steps:

  • Prepare the salted rim, if using: In a small shallow bowl or plate, combine the sea salt and Tajín. Set aside.
  • In a shaker filled with ice, combine the watermelon juice, tequila, Cointreau (if using), lime juice and jalapeño (if using). Shake to combine. (Note: The watermelon flavor shines brighter without the Cointreau, but the liqueur takes the drink into more traditional margarita territory. If you'd like to compare, first try the mixture without, the liqueur, then add 1 ounce of it per serving.)
  • Using one of the squeezed lime halves, run it along the rim of two rocks glasses, then dip the rims into the salt mixture. Fill the glasses with ice, then strain the margaritas into the glasses and enjoy immediately.

1 red bell pepper, chopped

1 tablespoon apple cider vinegar
1 ½ teaspoons salt, or to taste
¼ teaspoon freshly ground black pepper
2 tablespoons crumbled feta cheese
2 tablespoons minced fresh cilantro

Steps:

  • Combine watermelon, tomatoes, red pepper, cucumber, shallot, lime juice, vinegar, salt, and pepper in a high-powered blender. Blend until smooth, 20 to 30 seconds. Refrigerate for at least 1 hour to allow flavors to meld and soup to chill.
  • Stir gazpacho before serving, as it has a tendency to separate, and divide between 4 bowls. Top with feta cheese and cilantro.

  • For the Jalapeno Simple Syrup: Add sugar and water to a small saucepan. For a less spicy syrup, remove ribs and seeds from jalapeno then add to the saucepan. For a more spicy syrup, slice jalapeno then add - seeds and all - to the saucepan. Bring mixture to a simmer over medium-high heat, stirring occasionally, then cook until sugar is dissolved, 1-2 minutes. Remove pan from heat then let cool - the longer the jalapeno stays in the syrup, the spicier it will be. Strain syrup through a fine mesh sieve into a mason jar or container then chill. Can be done several days ahead of time.
  • Add watermelon juice, tequila, lime juice, and jalapeno simple syrup to a rocks or cocktail glass then stir to combine. Fill glass to the top with ice then serve with fresh jalapeno slices. Alternatively you could add the ingredients into a shaker, fill it halfway up with ice, then shake to chill.
