2 tablespoons minced fresh mint
1 tablespoon lemon juice
1 tablespoon olive oil
2 teaspoons sugar

Steps:

  • Place watermelon and mint in a large bowl. In a small bowl, whisk lemon juice, oil and sugar until sugar is dissolved. Drizzle over salad; toss gently to combine.

Using the fresh mint growing in my garden, this is a delightful,refreshing summer salad. It's my daughter's recipe.

3 quarts watermelon, cubes
3/4 cup thinly sliced sweet onion
1/2 cup minced fresh mint leaves
3 tablespoons cider vinegar
1 dash salt
1 tablespoon chili powder
6 tablespoons olive oil

Steps:

  • In large bowl, mix the watermelon cubes, onion slices and mint.
  • In small bowl or mixing cup, blend dressing ingredients.
  • Add to watermelon mixture and toss to combine.
  • Chill for at least two hours.

A chef friend tells me he thought this up, and wouldn't give me the recipe...but I found it on www.foodnetwork.com (Paula Deen). The only thing different (that I can tell) is that he used balsamic vinegar. Sounds strange, but it is a delightful combination of flavors.

1 (5 lb) seedless watermelon
1 vidalia onions or 1 other sweet onion
1/4 cup red wine vinegar
salt and pepper
1/2 cup extra virgin olive oil (I use Enova oil)
2 tablespoons of fresh mint, chopped
4 ounces feta cheese, crumbled
6 whole mint sprigs (optional for garnish)

Steps:

  • Cut the flesh from the melon and cut into bite size pieces, removing and discarding any seeds, and set aside. Peel and slice the onion into rings.
  • In a small bowl, combine the vinegar, salt, pepper, and whisk until salt is dissolved. Slowly whisk in the olive oil, a few drops at a time. Add in the chopped mint, taste, and adjust seasonings.
  • In a large bowl, combine the melon, onion, and feta. Pour the dressing over the melon mixture and toss gently until everything is coated and evenly mixed. Garnish with mint sprigs.
  • To serve, divide salad among individual plates and garnish with mint leaves.
