1 cup all-purpose flour
1 cup whole wheat flour
1/2 cup Splenda granular, sugar substitute
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 1/2 teaspoons orange peel
3/4 cup orange juice
1 egg
2 tablespoons applesauce
1 cup blueberries
1/2 cup walnuts

Steps:

  • Preheat over to 350. Grease and flour your loaf pan. In medium bowl, combine all dry ingredients. In another bowl, combine the orange peel, egg, juice and applesauce. Combine the wet and dry ingredients and stir just until incorporated. Fold in blueberries and nuts. Pour into your loaf pan and bake for about 75 minutes, Or until a toothpick inserted in the center comes out clean.

From Weight Watchers Dining for Two. Great for a romantic dinner for two. The original recipe called for fresh ginger, however, I substituted crystallized ginger.

1 1/2 cups fresh blueberries (can use thawed frozen)
2 tablespoons sugar
1 teaspoon crystallized ginger, minced
1 teaspoon lemon zest, grated
1 teaspoon lemon juice
1/4 teaspoon cinnamon
1/2 cup reduced-fat baking mix, Bisquick
3 tablespoons skim milk
1/2 teaspoon sugar

Steps:

  • Preheat oven to 450. Spray two 6oz custard cups with non-stick spray.
  • Combine blueberries, sugar, ginger, lemon zest and juice and cinnamon. Divide between custard cups.
  • Combine together Bisquick and milk in small bowl. Spoon over blueberry mixture. Sprinkle with sugar.
  • Place on baking pan and bake 20 minutes until golden and bubbly.
  • Serve with vanilla ice cream.
