CHICKEN SALAD



Chicken Salad image

We might have lightened up this classic sandwich filling, but we kept its traditional creamy consistency by using reduced-calorie mayonnaise and sour cream for the dressing. Finely diced chopped celery offers crunch and dill pickles give it zing. With this versatile recipe, you could also customize it by adding other vegetables like finely chopped red bell pepper or onion. Or you can opt to turn it into "wrap" by spooning into crisp romaine lettuce leaves or use it as a stuffing for celery sticks. This recipe serves six so if you have leftovers enjoy it for lunch the next day.

3 tbsp(s) Olive oil divided
2 tbsp(s) Vinegar red wine variety, divided

6 tbsp(s) Dried plain breadcrumbs season with Italian seasoning

0.5 cup(s) Store bought marinara sauce low-fat
0.25 cup(s), shredded Part-skim mozzarella cheese shredded
0.25 cup(s) Grated Parmesan cheese
5 oz Arugula baby variety, lightly packed
1 pinch Crushed red pepper flakes or to taste (optional)

Steps:

  • In large shallow bowl, whisk 1 tbsp oil, 4 tsp vinegar, garlic, salt, black pepper, oregano, and 1 tbsp water for dressing. Spread breadcrumbs onto sheet of wax paper. Dip 1 chicken cutlet in dressing, turning until coated. Lightly coat both sides of cutlet with breadcrumbs and transfer to plate. Repeat with remaining chicken. Lightly spray chicken with nonstick spray.
  • Preheat air fryer to 360°F or 370°F for 3 minutes (depending on air fryer settings). Spray air fryer basket with nonstick spray and add 2 chicken cutlets. Air-fry chicken until golden and crisp, 4 to 5 minutes. Lift out basket. Turn chicken over and spread 2 tbsp marinara sauce on each cutlet. Sprinkle each with 1 tbsp mozzarella and 1 tbsp Parmesan.
  • Air-fry until chicken is cooked through and crisp and mozzarella is melted, 2 to 3 minutes. Keep warm. Air-fry remaining cutlets with remaining marinara, mozzarella, and Parmesan.
  • In large bowl, toss arugula and remaining 2 tbsp oil and 2 tsp vinegar. Season with salt and black pepper to taste. Divide greens among 4 plates and top each with 1 chicken cutlet. Sprinkle with red pepper flakes (if using). Serve warm.
  • Serving size: 1 salad

2 tablespoons fresh parsley, chopped
1 teaspoon Dijon mustard
1 teaspoon fresh lemon juice

Steps:

  • Place chicken in a large saucepan and pour in enough water to cover it; set pan over high heat and bring to a boil. Boil until chicken is cooked through, about 10 minutes; drain. When chicken is cool enough to handle, cut into 1-inch cubes.
  • Transfer chicken to a large bowl and add celery, pickles, mayonnaise, sour cream, parsley, mustard, lemon juice, salt and pepper; mix until blended. Yields about 1 cup per serving.
