1 onion, quartered
1 (10.5 ounce) can beef broth
1 (1 ounce) packet dry au jus mix
1 (.7 ounce) package dry Italian salad dressing mix (such as Good Seasons®)
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Place beef chuck roast into a slow cooker and scatter onion quarters around the meat. Pour the beef broth over the meat and sprinkle the au jus mix, Italian salad dressing mix, salt, and black pepper over the roast.
  • Cover cooker, set on Low, and cook until meat is very tender, 6 to 8 hours.

3 pounds beef chuck roast
3 (1 ounce) packages dry Italian salad dressing mix
1 cup water
1 (16 ounce) jar pepperoncini peppers
8 hamburger buns, split

Steps:

  • Place the roast into a slow cooker, and season with Italian dressing mix. Pour in the water. Cover, and cook on High for 6 to 7 hours. During the last hour, shred the meat with two forks - if it does not shred easily, cook longer. Add the peppers, and as much of the juice as you like for additional flavor. Serve on buns.

1/2 cup kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup granulated garlic
1/4 cup granulated onion
1/2 cup dried basil
1/2 cup dried oregano
5 to 7-pound roast beef round
1/2 cup extra-virgin olive oil

Steps:

  • Preheat oven to 300 degrees F.
  • Combine all the seasoning ingredients in a medium jar.
  • Trim all the fat from beef round. (I grind the trimmings), but you can cut them up into bite-size pieces and place on the bottom of a roasting pan. Sprinkle the trimmings with some of the seasoning mix. Place the roast beef on top of the trimmings and coat the beef well with more of the seasoning mix. Drizzle olive oil on top of the roast and pat the oil over the seasonings. Place into the preheated oven on lowest rack and roast approximately 1 1/2 to 2 hours, uncovered, until the internal temperature registers *130 degrees F on an instant-read thermometer. Remove from oven and let stand about 20 to 30 minutes before carving. This roast can be used for sandwiches, thinly cut or thickly cut and served with beef gravy, if desired.

salt and ground black pepper to taste
2 tablespoons olive oil
2 cloves garlic, minced
1 cup water
1 tablespoon anise seed
1 tablespoon sesame seed
1 large green bell pepper, julienned

Steps:

  • Rinse and pat dry the roast. Coat the roast evenly with the flour; season with salt and pepper.
  • Heat the olive oil in a skillet over medium-high heat. Add the garlic to the hot oil; sear the beef in the oil until all sides are slightly browned. Transfer the roast to a slow cooker. Pour the water over the roast.
  • Cook on Low for 5 hours. Add the anise seed and sesame seed to the slow cooker and cook another 4 hours. Add the green bell pepper and continue cooking until the meat is tender and easily pulled apart, about 1 hour more.

2 chuck roast (2-3 lbs ea.)
1 (4 ounce) package Good Seasons Italian dressing
4 (4 ounce) envelopes au jus mix
1 (8 ounce) jar pepperoncini peppers

Steps:

  • Rub roasts with Italian dressing. Put roasts in pan. Cut up pepperocini peppers to taste (I used about half a jar) and put on top of roast. Use some of the pepperocini juice too. Mix packages of aujus with 4 cups water (don't heat). Pour over roasts.
  • Bake at 350 deg. approx 4 hrs COVERED. Check for liquid content. If gravy is thickening, add water. (The roast must stay in the liquid).
  • When it is done it will shred easily with fork in the pan.

3 large onions, cut into 1/2in wedges
1/2 cup vegetable oil
4 tablespoons fresh coarse ground black pepper
3 tablespoons kosher salt
2 cups water

Steps:

  • In bottom of pan place onions first.
  • Put roast on top of onions.
  • pour water to cover onions.
  • Pour oil over roast.
  • Sprinkle pepper, than salt over roast.
  • Cook 20 minutes for every pound at 350 uncovered.
  • If cut of meat is really wide, you may need to increase 5-8 minutes additional per pound. I let it cool off alittle and then use meat slicer to cut into slices.
  • I place cut meat back into pan with onions and gravy.
  • Really nice for sandwiches.

3 -4 lbs beef roast
2 (7/8 ounce) packages Italian salad dressing mix
1/4 cup vinegar
2 (10 ounce) cans au jus sauce (if you cant find AuJus ,you could sub. brown gravy)
1/2 cup water
2 bell peppers, sliced (optional)
1 sweet onion, sliced (optional)

Steps:

  • Add meat into a slow cooker.
  • If desired add sliced bell pepper and onion.
  • Add italian dressing, vinegar, water and Au Jus to crockpot.
  • Cook on low for 6-7 hours.
  • Take fork and shred beef. Continue to cook 1-2 hours longer. I like to serve these on hoagie rolls, with pepperoncinni peppers.

It proved too tough and the tasters preferred the meatiness and tenderness of a top sirloin roast. Elevating the roast on a rack kept it out of the jus and kept the meat from becoming too mushy. To get the browned crust desired, the roast was browned in a skillet before adding the "rub".

1 (4 lb) top sirloin roast, fat trimmed to 1/4 inch thick (boneless)
4 teaspoons garlic powder
4 teaspoons dried basil
4 teaspoons dried oregano
1 tablespoon pepper
2 tablespoons vegetable oil, divided
1 large onion, chopped fine
3 -4 garlic cloves, minced
1 tablespoon flour
2 cups low sodium beef broth
2 cups low sodium chicken broth
1 1/2 cups water
1 teaspoon red pepper flakes
2 teaspoons salt

Steps:

  • Adjust oven rack to lower-middle position and heat oven to 300 degrees.
  • Combine garlic powder, basil, oregano and pepper in small bowl; set aside.
  • Pat roast dry with paper towels. Heat 1 tablespoon oil in large skillet over medium-high heat until just smoking. Brown roast all over, about 10 minutes, then transfer to V-rack (or roasting rack) set inside roasting pan.
  • Add onion to fat in skillet and cook over medium heat until softened, about 5 minutes. Stir in garlic, flour and 1 teaspoon of the spice mixture until fragrant, about 1 minute. Stir in broths and water, using wooden spoon to scrape up browned bits. Bring to boil, then pour into roasting pan; set aside.
  • Stir together the remaining oil, pepper flakes and salt into remaining spice mixture. Rub mixture all over meat and roast until meat registers 125 degrees (for medium-rare), 75 to 90 minutes. Transfer roast to cutting board, tent with foil, and let rest 20 minutes.
  • Pour jus (pan gravy) through fine-mesh strainer and keep warm. Slice roast crosswise against grain into 1/4-inch-thick slices. Serve with jus.
  • Additional note from me: If making sandwiches, assemble sliced beef on a roll and top with the roasting pan juice and Giardinera. See homemade: recipe #468165).
