Number Of Ingredients 10

1 bunch broccoli (about 1 1/2 pounds), ends trimmed, stems peeled
3 tablespoons olive oil
Kosher salt, freshly ground pepper
1 freshly ground pepper
2 tablespoons unseasoned rice vinegar
1/4 cup unsalted, roasted peanuts, coarsely chopped
1/2 teaspoon sugar
2 tablespoons nutritional yeast, plus more
4 scallions, thinly sliced
Flaky sea salt (such as Maldon)

Steps:

  • Preheat oven to 450°. Slice broccoli stems on a diagonal 1/4" thick. Transfer to a rimmed baking sheet, toss with oil, and season with kosher salt and pepper. Gather up loose pieces of left-behind florets and finely chop. Roast stems until browned around edges, 15-20 minutes. Add vinegar; toss to coat.
  • Meanwhile, heat a dry medium skillet, preferably cast iron, over medium-high. Add florets. Season with kosher salt and pepper and cook, stirring often, until bright green and lightly charred in spots, about 5 minutes. Reduce heat to low; add peanuts and sugar. Cook, stirring, until nuts are golden brown. Stir in 2 tablespoons nutritional yeast; season again.
  • Serve broccoli stems and florets topped with scallions, sea salt, and more yeast.

12 ounces broccoli, florets cut into pieces 1 inch in length and stem peeled and cut into pieces 1 inch in length and 1/2 inch thick
3 tablespoons olive oil
1 large clove garlic, minced
1 pinch red pepper flakes
Salt and freshly ground black pepper
1/2 cup walnut pieces, toasted
1 large clove garlic, minced
3 tablespoons extra-virgin olive oil
1 pinch finely grated lemon zest
Salt and freshly ground black pepper
One-day-old baguette, crust discarded and remaining cut into 3/4 inch to 1-inch dice
1 tablespoon lemon juice, or to taste
1/4 cup extra-virgin olive oil, for drizzling
Salt and freshly ground black pepper
1/4 cup julienned basil leaves
Parmigiano-Reggiano shavings, optional.

Steps:

  • For the broccoli: Preheat oven to 425 degrees. In a mixing bowl, combine the broccoli, olive oil, garlic and red pepper flakes. Season with salt and pepper to taste. Spread across a baking sheet or shallow roasting pan, and roast until the broccoli is crisp-tender, and is beginning to brown, 15 to 20 minutes. Meanwhile, prepare walnut sauce.
  • For the walnut sauce: In a dry skillet or toaster oven, toast the walnut pieces until fragrant and lightly browned. Place in a blender with garlic, olive oil and lemon zest. Blend until smooth, adding just enough water to make a thick yet pourable sauce. Season with salt and pepper to taste.
  • For assembly: Spread the diced bread on a baking sheet and bake until crisp and golden, 5 to 10 minutes. Transfer to a bowl and add lemon juice, olive oil, and salt and pepper to taste. Add broccoli (there should be equal parts broccoli to bread), and mix lightly.
  • On a serving platter or in a shallow bowl, spread the walnut sauce and pile the broccoli and panzanella on top. Garnish with julienned basil and, if desired, shaved Parmigiano-Reggiano.

  • Place broccoli in a microwave-safe dish and microwave on high until defrosted, 3 to 4 minutes; they should be defrosted but not cooked all the way.
  • Add 1/4 cup Parmesan and garlic, stir, and cook for another 2 to 3 minutes. Season with salt and pepper and stir.
  • Serve with extra Parmesan sprinkled over top.

2 bunches broccoli (about 3 pounds), stems removed, cut into florets
6 thick-sliced bacon strips, chopped
2 tablespoons olive oil
6 to 8 garlic cloves, thinly sliced
1/2 teaspoon crushed red pepper flakes
1/4 cup shredded Parmesan cheese

Steps:

  • Fill a 6-qt. stockpot two-thirds full with water; add salt and bring to a boil over high heat. In batches, add broccoli and cook until broccoli turns bright green, 2-3 minutes; remove with a slotted spoon., In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 1 tablespoon in pan., Add oil to drippings; heat over medium heat. Add garlic and pepper flakes; cook and stir until garlic is fragrant, 2-3 minutes (do not allow to brown). Add broccoli; cook until broccoli is tender, stirring occasionally.   • Place broccoli in a steamer basket over boiling water.

  • Heat a heavy nonstick skillet or wok over medium high heat. Add bacon and cook 2 minutes.

1/4 cup pine nuts
2 garlic cloves
2 bunches broccoli
3 tablespoons extra virgin olive oil
salt and pepper

Steps:

  • In a small dry skillet, toast the pine nuts, stirring constantly to brown evenly. Don't burn!
  • Chop the garlic fine. Set aside.
  • Separate the broccoli into florets. Peel the skinnier stems and cut into cubes (or reserve the stems for cream of broccoli soup).
  • In a large pot of rapidly boiling salted water, blanch the broccoli for about 8 minutes, until it is crisp-tender and still bright green.
  • Drain thoroughly in a colander.
  • In a sauté pan, heat the olive oil. Add the garlic and let it soften for a few minutes. Be careful not to let it burn.
  • Then add the broccoli and pine nuts to the pan. Toss carefully to coat everything well with the garlicky oil. Salt and pepper to taste. Turn into a warmed serving bowl and serve at once. Enjoy!

  • Preheat the oven to 450 degrees F.

3 tablespoons olive oil
4 garlic cloves, thinly sliced crosswise
1/2 to 3/4 teaspoon red pepper flakes
4 oil-packed anchovy fillets
1 teaspoon kosher salt, plus more for blanching
1/4 teaspoon freshly ground black pepper
2 tablespoons lemon juice
1 ounce parmesan, shaved in strips using a peeler (1/2 cup curls)
1/4 cup toasted pine nuts

Steps:

  • Fill a large pot with salted water and bring to boil over high heat. Fill a large bowl with ice water.
  • Add the rabe to the boiling water and cook until bright green, about 2 minutes. Drain and submerge in bowl of ice water until cool, about 2 minutes. Drain and set aside.
  • In a large skillet over medium heat, add the olive oil. Add the garlic, red pepper flakes, and anchovies, stirring and breaking up the anchovies with a wooden spoon. Cook until garlic is fragrant and light golden in color, 1 minute.
  • Add the rabe to the pan with any residual water. Cook, tossing occasionally, until the mixture starts to wilt, about 2 minutes. Add the salt and pepper and cook until rabe is crisp tender, about 3 minutes more.
  • Remove from heat and stir in lemon juice. Taste and adjust seasoning. Spoon onto plates or a platter and top with parmesan and pine nuts.

3 T olive oil
Kosher salt and freshly ground pepper
2 T pine nuts
1 small shallot, minced
1 T lemon juice
2 T olive oil
Grated lemon zest

Steps:

  • Preheat oven to 350. Spread the broccoli in a shallow roasting pan, toss it with 3 T olive oil and season lightly with salt and pepper. Roast for about 40 minutes, tossing halfway through until the broccoli is tender and brown. In a small dry skillet, toast the pine nuts over medium-low heat for 2 to 3 minutes, or until they darken a shade or two and are fragrant. Shake the pan to prevent them from burning. Remove from heat and let cool. Whisk together the shallot, lemon juice, and 1/2 teas of salt, stirring until the salt dissolves in the lemon juice. Whisk in the 2 T olive oil. Transfer the broccoli to a serving platter and drizzle the lemon vinaigrette over it. Scatter the pine nuts over the broccoli.
