WEIGHT WATCHERS CITRUS LOAF (FAT FREE / CORE)
Another recipe from my Weight Watchers Mix & Match recipe book. This one is very novel, but give it a try - it's pretty darn nice for something fat free! This is core or 1.5ww points per serving.

Steps:
- Pre-heat oven to Gas Mark 4 / 180c and line a loaf tin with grase-proof paper.
- Blend the chickpeas in a food processor until smooth.
- Add the eggs, splenda, baking powder and zests of the orange and lemon. Mix again.
- Pour the mixture into the loaf tin and bake for thirty minutes until the cake is golden and a knife comes out clean.
- Remove the cake from the oven and use a knife or skewer to make several holes in the top. Spoon a tablespoon of orange juice over the cake and leave to soak for 10 minutes.
- Remove the cake from the tin and leave to cool on a wire rack.
- Mix the remaining orange juice with the lemon juice.
- Cut the cake into 12 slices and serve 2 slices per person, covered in more of the fruit juice and dusted with mixed spice and some extra Splenda.

WW CORE MEATLOAF
This is a very flavorful meatloaf that qualifies as a core recipe for Weight Watchers. I love onions, so there are lots, but obviously you can adjust the onions and the spices to taste. I rarely measure spices unless following a recipe, so all measurements for spices are approximate. Also, I almost always use ground turkey, but this could be made with ground beef. There are a lot of steps here, but none of them are very hard and can be done quite quickly. Don't be afraid of using oats. Once cooked, you cannot tell the oats are there.

Steps:
- Preheat oven to 350 degrees.
- Place fennel seeds in a small, non stick pan over medium high heat on your stove top to roast. Occasionally stir or shake seeds as they roast. Roast until seeds start to appear a bit golden in color instead of greenish, about 2 minutes. Be careful, they will go from toasted to burnt very quickly.
- Place the diced onion and olive oil in a non stick pan, sprinkle with salt and saute. To avoid burning, add the minced garlic to the onions after a few minutes. Saute onions and garlic until tender.
- In a large bowl, combine turkey, oats, whisked eggs, sauteed onion and garlic, fennel seed, Worcestershire sauce, Italian seasoning, garlic powder, salt, black pepper, and about 3 tablespoons of the canned tomato sauce, reserving the remaining sauce. Combine well using your hands or a large spoon.
- Spray the bottom of a 9x13 baking dish with cooking spray. Turn meat mixture out into the baking dish and form into a rectangular loaf that ends about an inch and a half from the sides of the pan. I like to flatten the top of the loaf and then form an indentation around the top to make a lip. This helps to keep the tomato sauce on top of the loaf.
- Pour the remaining tomato sauce on top of the loaf spooning some onto the sides of the loaf.
- Bake at 350 degrees for approximately 55 minutes.

BERRY CRISP - WEIGHT WATCHERS CORE RECIPE
This is a Weight Watchers core recipe. Serve with frozen yogurt or whipped cream - you have to add the points, of course!

Steps:
- Spray an 8X8 baking pan.
- Mix the fruit ingredients in the pan and stir well.
- In a separate bowl, mix together crisp mix.
- Spread this mixture over the berry mixture to make a top crust.
- Bake at 350°F for 40-45 minutes or until topping gets crunchy.

FAT FREE LOAF (WITH DATES AND CARROT-YUMMY!)
I found this recipe on an internet forum - inventer unknown. It is a boiled fruit loaf- super easy, and can all be mixed in the one pot. It is well liked by children and adults, and is nice with butter (not fat free!) Aparently if cut into 15 slices, 1 slice = 1.5 weight watchers points. This is great made with gluten free flour, it is also vegan.

Steps:
- Combine dates, brown sugar, bicarb soda and water in a pot. Bring to boil, simmer for 1-2 mins (stir a few times) then turn off heat and leave to cool.
- Preheat oven to 180 degrees Celsius Grease a 22x 11cm tin (or use baking paper).
- Add carrot to date mix (I just grate straight into pot) a 1/2 or whole apple is also nice grated in too (I don't wait until date mix is totally cool).
- Sift flour and spices together and add to mix. (I don't- I just chuck it all into the pot! Saves on dishes).
- Mix well and spoon into loaf tin. You can add extra water if too dry to mix well.
- Bake for 40-50 minutes Use a skewer to check if middle cooked.
- Note- if using gluten free flour (not self raising) add 2- 2.5 teaspoons of baking powder + 1 tsp (optional) of guar gum.
