2 kg lamb shoulder
2 tablespoons Dijon mustard
1/4 cup red currant jelly
1 garlic clove, crushed
2 teaspoons oil
2 teaspoons soy sauce

Steps:

  • Trim excess fat from lamb.
  • Combine mustard, jelly, garlic, oil, and say sauce.
  • Brush glaze over lamb.
  • Place lamb on rack over a baking dish.
  • Add about 0.5 cup water to baking dish.
  • Bake in a moderate oven, 180°F, basting frequently with pan juice for 1.5 hours or until done as desired.
  • Stand keeping warm for 10-15 minutes.
  • Serve glazed lamb with gravy.

The naturally good flavor of Welsh lamb with the addition of spice, herbs and a little sweetness. The honey, cider and rosemary are local Welsh flavors, while ginger has been enjoyed in Wales since it was brought back by the Crusaders. Posted for ZWT6.

2 inches piece fresh gingerroot, peeled
3 lbs leg of lamb (Welsh if possible)
1 small sprigs fresh rosemary
1 ounce butter, melted
9 fluid ounces dry cider
salt & freshly ground black pepper

Steps:

  • Heat the oven 375°F/190°C.
  • Cut the ginger into slivers.
  • Using a sharp knife, make small cuts in the leg of lamb and insert the ginger and rosemary.
  • Mix the butter and honey together and spread this over the lamb.
  • Put in a roasting tin, pour in half of the cider and cover loosely with foil.
  • Roast in the oven allowing 25 minutes per pound.
  • When three-quarters cooked, remove the foil and continue cooking, basting frequently with the juices from the roasting tin, adding more cider if necessary.
  • Remove the joint from the oven, lift out of the pan, removing any excess fat, and pour in the rest of the cider to deglaze the pan.
  • Boil this up well, return the non-fatty juices and thicken with a little arrowroot if you wish.
  • A well seasoned mixed mash of carrot, parsnip, turnip and potatoes tastes perfect with the roast leg of lamb.

Lamb steaks with crispy potatoes & minted beans image

A special meal just for one- marinade lamb leg steak with rosemary and balsamic and serve runner beans and new potatoes

1 tbsp balsamic vinegar
1 tbsp olive oil
1 rosemary sprig, leaves chopped
1 lamb leg steak
3 new potatoes, cut in half lengthways
1 garlic clove, slightly bashed
75ml lamb or beef stock
1 ½ tsp redcurrant jelly
100g pack sliced runner bean
small knob of butter
2 tsp finely chopped mint

Steps:

  • Mix the balsamic vinegar, 1 tsp olive oil and rosemary together in a bowl. Add the lamb steak, ensuring that it is completely covered in the marinade, and set aside.
  • Boil the potatoes until tender. Lift out of the pan with a slotted spoon, keeping the pan of water simmering. Heat 2 tsp of the oil in a frying pan, add the potatoes and garlic, and fry gently until golden.
  • Sprinkle a little salt over the potatoes, then push to the side of the pan. Remove the garlic. Season the lamb and fry alongside the potatoes for 1-2 mins each side, depending on the thickness of your steak. Remove the lamb and potatoes and leave to rest in a warm place.
  • Keep the pan on the heat and add the stock. Bring to the boil, scraping any sticky bits from the bottom of the pan, and let it bubble until reduced by half. Stir through the redcurrant jelly until melted. Taste and season, adding a dash of balsamic vinegar if it is too sweet.
  • Meanwhile, blanch the beans in the simmering water for 3 mins, then drain. Return to the pan and stir through the butter, mint and seasoning.
  • Serve the lamb with the potatoes and beans, and the sauce spooned over.

4 large fresh rosemary sprigs
4 lamb leg steaks
5 tablespoons redcurrant jelly
2 tablespoons raspberry or red wine
vinegar
salt and ground black pepper

Steps:

  • Reserve the tips of the rosmary and chop the remaining leaves. Rub the chopped rosemary, salt and pepper all over the lamb. Preheat the grill. Heat the redcurrant jelly gently in a small pan with 2 tablespoons of water. Stir in the vinegar. Place the steaks on a foil lined grill rack and brush with a little of the redcurrant glaze. Cook for about 5 minutes on each side, until deep golden, brushing with more glaze. Transfer the lamb to warmed plates. Tip any juices from the foil into the remaining glaze and heat through. Pour the glaze over the lamb and serve, garnished with the reserved rosemary.
