Provided by Amy Nash

Categories     Main Course

Time 42m

Number Of Ingredients 16

1 to 1 1/2 pounds ground turkey (93/7 percent)
1/4 cup breadcrumbs
3 Tablespoons real mayonnaise
3 Tablespoons bbq sauce
2 cloves minced garlic
1 1/2 teaspoons kosher salt
1/2 teaspoon black pepper
1/2 teaspoon onion powder
Pinch of cumin
Brioche buns
Sliced cheddar (monterey jack, or pepper jack cheese)
Sliced tomatoes
Green leaf lettuce
Sliced red onion
Sliced avocado
Mayo or aioli

Steps:

  • Combine the burger ingredients in a bowl. Mix together using your hands, then shape into patties about 1/2 to 3/4-inch thick. Make an indentation in the center of each burger with your fingers. Place in the freezer for 20-40 minutes to help them firm up before placing on the grill.
  • Heat a grill to medium-high heat. Make sure the grates are clean. Spray both sides of each burger patty with cooking spray, then place on the grill. Cook for 5-6 minutes, then flip and top with cheese. Cook for another 5-6 minutes on the other side until done. The burgers should reach 165 degrees F in the center when tested with an instant read digital meat thermometer.
  • Toast buns, then assemble burgers with lettuce and tomatoes on the bottom bun followed by the burgers and other toppings.

JUICY TURKEY BURGERS

Juicy Turkey Burgers image

Making a juicy turkey burger is easy. It just takes a few secrets to get the perfect juicy turkey burger.

Provided by Rachel Farnsworth

Categories     Main Dish

Time 15m

Number Of Ingredients 5

1 pound ground turkey
1 to 2 tablespoons extra virgin olive oil
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • In a mixing bowl, gently knead together turkey, olive oil, Worcestershire sauce, salt, and pepper. Don't overwork the meat.
  • Form into patties about 1/4 to 1/2 inch thick. Press your thumb down on the middle to give it a slight indent.
  • Heat a large heavy skillet or grill pan over medium-high heat. Or, heat an outdoor grill to medium-high heat (400-450 degrees F). Make sure the grate is well oiled so the meat doesn't stick.
  • Cook burgers for about 5 minutes per side, flipping half-way through. Ground turkey needs to be cooked to an internal temperature of 165 degrees Fahrenheit. You can remove them from the grill or pan at 160 degrees and let rest for 5 minutes, until they reach 165 degrees F, while you prepare your toppings.
  • Let rest 5 minutes, or until internal temperature reaches 165 degrees.

WENDY'S GRILLED JUICY TURKEY BURGERS

Wendy's Grilled Juicy Turkey Burgers image

Many recipes for turkey burgers here and other places are good . My problem was that a lot of them were not full of flavor or would turn out dry. This concoction was made with things I had on hand , wasn't allergic to . Cooked on grill in a tray used for grilling with non-stick aluminum foil . My husband liked them a lot so I decided to save recipe :)

Categories     Poultry

Time 30m

Yield 4 Burgers, 4 serving(s)

Number Of Ingredients 11

1 vidalia onion, chopped
1 tablespoon butter
1 teaspoon salt, divided
1 clove chopped garlic
1 lb ground turkey
1 egg white
1/3 cup breadcrumbs
1 tablespoon dried parsley
1 tablespoon dried chives
1/2 teaspoon adobo seasoning, spice mixture
1/2 cup thick shredded mixed cheese

Steps:

  • Add butter and chopped vidalia onion ( you can use any onion; I prefer sweet ones) to frying pan and cook until onion for a couple minutes on medium heat. Add chopped garlic and 1/2 teaspoon salt and cook until onions start to get a tad brown on edges . Take off heat and put into small bowl to let cool down while mixing turkey.
  • In a medium to large bowl add ground turkey and egg white . Mix with hands until combined. Add onion mixture (butter and all!) along with the rest of the ingredients and mix with hands until combined . Form into 4 balls and slightly squish down to make a patty form . (I made 4 burgers with 1 pound of turkey). You could freeze at this point if you wanted to, and I did with two of them for later use.
  • On a metal grate tray covered with non stick aluminum foil (did not put meat directly on grill grates , although you could ) place burgers on metal tray and onto an already heated medium grill . I flipped burgers every 5 minutes for a total of 15 minutes of cooking. Grill is shut while grilling . .
  • They turned out.
  • Grate! ( Pun intended!).
  • I was surprised at how flavorful and juicy they turned out. I had very thick shredded jack and sharp cheddar cheese and I think that makes a difference along with using a cooking surface that the cheese and drippings can't go through , hence me using the non stick foil on grate and not directly on grill.
  • Served bunless (for me )with sweet potato tots and a fresh green salad. Husband ate with bun and no toppings. :).

BEST-EVER GRILLED TURKEY BURGERS

Best-Ever Grilled Turkey Burgers image

Categories     Sandwiches & Burgers

Time 1h

Number Of Ingredients 9

1 1/3 pounds 93% lean ground turkey
1/2 medium yellow onion, finely grated & squeezed of excess moisture
2 cloves garlic, finely chopped or grated
2 tablespoons mayonnaise (see Recipe Notes)
2 teaspoons Worcestershire sauce
1 1/2 teaspoons kosher salt
1/2 teaspoon ground black pepper
oil, for the grill grates
for serving, as desired: burger buns, cheese of choice, toppings of choice (e.g. lettuce, tomatoes, thinly sliced onion, pickles, etc.), condiments of choice (e.g. mustard, ketchup, et.c)

Steps:

  • or large plate with parchment paper, wax paper, or aluminum foil. Set aside.
  • Arrange a few paper towels out on a cutting board, set a box mixer on top. Run the onion along the sides of the box mixer to grate it into fine, shredded pieces. Once grated, use the paper towel to soak up excess moisture from the onion. Too much moisture will make the turkey burger mixture very difficult to handle, so do not skip the extra 30 seconds it takes to blot the moisture from the grated onion. If your onion seems very wet, you can also wrap it in paper towels & wring out the moisture over the sink.
  • Add the ground turkey, grated onion, garlic, mayonnaise, Worcestershire sauce, kosher salt & ground black pepper to a large bowl. Using your hands, mix until just combined. Overworking the turkey burger mixture will lead to tough burgers; take care not to overmix.
  • Divide the turkey burger mixture into 4 even portions, about 1/3 pound (5.3 ounces) each. Lightly coat your hands in oil (or mist with nonstick cooking spray) & form each portion into a 1-inch thick patty. The mixture will be very wet at this point, so there's no need to fuss over making your burgers look perfect - just aim for forming them into the general shape & size you're after. Set them on the prepared baking sheet.
  • the turkey burgers: Transfer the baking sheet with the turkey burger patties to the freezer. Chill for at least 20 minutes.
  • Meanwhile, as the turkey burgers chill, preheat the grill for medium-high direct heat grilling, about 450 degrees F. Just before placing the burgers on the grill, generously oil a wad of paper towel. Use grilling tongs to run the oiled paper towel over the grill grates, generously oiling the grates.
  • Remove the turkey burgers from the freezer. At this point they should be quite a bit easier to handle; finish forming them into 1-inch thick patties, using your thumb to create an indent in the center of each patty. Firmly press each turkey burger patty down onto the prepared grill grates. Grill the turkey burgers for 6 minutes per side, or until a thermometer inserted in the center of the turkey burgers registers 160 degrees F. If you'd like to add cheese to your turkey burgers, do so when there are 2 minutes left of grilling time.
  • Allow the turkey burgers to rest for a few minutes (residual heat will increase the internal temperature to 165 degrees F) before serving as desired. Enjoy!

GRILLED TURKEY BURGERS

Grilled Turkey Burgers image

There are a couple steps to ensure a crisp on the outside, juicy on the inside and all around delicious grilled turkey burger. Grated onion and barbecue sauce give the patties savoriness and provide additional moisture, so they don't dry out from the high heat of the grill. Coating the patties in a mixture of barbecue sauce and mayonnaise guarantees a seared and glazed exterior. If you'd like to turn these into cheeseburgers, simply drape sliced cheese - preferably Cheddar or pepper Jack - over the patties in the last two minutes of grilling and cover the grill.

Time 40m

Yield 4 servings

Number Of Ingredients 9

Neutral oil (such as canola), for greasing
1 medium yellow onion, peeled
1 pound ground turkey
1/4 cup store-bought or homemade barbecue sauce
2 tablespoons mayonnaise
Kosher salt (such as Diamond Crystal)
Black pepper
4 hamburger buns
Toppings (such as shredded iceberg, sliced onion, tomato and pickles) and condiments (mayonnaise, barbecue sauce or mustard), as desired

Steps:

  • Heat the grill to medium-high. Lightly grease a plate and set aside. Coarsely grate 1/4 cup onion; reserve the remaining onion. In a medium bowl, mix the turkey, grated onion and 2 tablespoons barbecue sauce. Form 4 patties about 4 ½ inches wide (about 5 ounces each). Press a small dimple in the center of each patty, then place the burgers on the plate and refrigerate until firm (at least 5 minutes or, covered, up to 2 days).
  • Meanwhile, in a small bowl, stir together the remaining 2 tablespoons barbecue sauce with the mayonnaise; season with 1 teaspoon each of salt and pepper.
  • When ready to grill, dip the reserved onion in oil. Clean the grates with a grill brush, then grease the grates with the oiled onion. (This perfumes the grill and your patties.) Lightly coat the tops of the burgers with some of the mayo mixture (about 1/2 teaspoon per patty).
  • Grill the burgers, mayo side down, until well browned and patties release from the grates, 4 to 6 minutes. (If flare-ups occur, move to an area of the grill where there are no flames underneath. For a gas grill, close the lid between flips, listening and keeping an eye out for flare-ups.) Spread mayo mixture on the tops of the patties, then flip and grill on the second side until cooked through, another 4 to 6 minutes.
  • Transfer to a plate and let rest for at least 5 minutes. Grill the cut sides of the buns until toasted, 1 to 2 minutes. Build burgers on the buns with the patties and desired toppings and condiments.
